What Cheeses Are Low In Fat

When it comes to how much dairy you should be getting each day, it depends on your age. The amount each person needs can vary between 2 and 3 cups each day, according to USDAs Dietary Guidelines for Americans recommendations choosemyplate.gov/eathealthy/dairy. For cheese, that looks like 1 ½ ounces of natural cheese, or 2 ounces of processed cheese to equal 1 cup.

The following cheeses are naturally lower in fat than others. And if you choose reduced-fat versions, you can save on calories and fat even more.

Here are 10 low-fat cheeses and how they compare to each other.

    How Is Cheese Made

How to Make Mozzarella Cheese From DRY Milk POWDER

Cheese is made by combining milk with a starter culture of bacteria that digest the milk sugar, called lactose, and produce lactic acid. It’s this starter culture that helps determine the ultimate flavor of the cheese. Next, an enzyme called rennet is added which causes the milk to curdle, producing solid lumps called curds, leaving behind a protein-rich liquid called whey.

The whey is drained away and the remaining curds are cooked, cut up and pressed together, squeezing out still more whey, and aged for several weeks, up to 12 months or even longer. Salt and other flavorings are added, and the resulting product is cheese.

These days, the fat content of the cheese is controlled by manipulating the fat content of the milk that’s used to make it. Each cheese has its own particular fat content. In general, higher-fat cheeses are creamier, such as mascarpone, and lower fat cheeses are harder, such as Parmesan.

Fat-free cheese is cheese that is made using fat-free milk. But how is fat-free milk made?

    What Is Mozzarella Cheese

Mozzarella is an Italian cheese, made by a unique process in which cheese curds are warmed and stretched, giving mozzarella that silky smooth, cheese-pull-eriffic texture that no other cheese can rival! The cheese is gathered together as it is pulled, forming the characteristically smooth mozzarella balls, which are then cut from the mass of stretchy cheese curds. In fact, the word mozzare in Italian actually means to cut off, hence the name mozzarella.

This process, like many others in the world of food, used to be done solely by hand each and every day, and the resultant fresh cheese was highly sought after in Italy. Now, thanks to advances in food technology as well as cold storage, mozzarella of excellent quality can be pulled in commercial facilities many days before use.

Mozzarella is traditionally made with milk from the Italian water buffalo, but as the popularity of this cheese became more widespread to areas of the world where water buffalo are not as plentiful, the use of other types of milk became necessary. Nowadays, youre most likely to find mozzarella cheese made from cows milk, but there are products made from sheeps and goats milk as well!

The only downside I have found with this cheese is that it browns/burns quicker than other cheese so you have to adjust your cooking time and temperature accordingly.

How To Make Your Own Skim Milk Ricotta Cheese

August 4, 2011 by Joel MacCharles

I dont think Ill ever become a cheesemaker but I find it fascinating to learn to make things that I otherwise take for granted this its important to me that I learn a bit about how to make cheese. When it comes to ricotta, its super easy, limited equipment or special ingredients are needed and the results are very quickly achieved. Ricotta is a fantastic gateway drug into the world of making cheese.

    Ingredients/ Equipment

    • 2 liters of skim milk whole milk will produce richer results
    • 0.5 teaspoon of salt
    • 3 tablespoons of distilled white vinegar
    • Colander

    Instructions

  • Pour cold milk into a large pan. Stir in salt.
  • Place the milk on medium and gently raise the heat to a near-simmer. If you have a thermometer , remove at 180 degrees farenheight. If you do not, look for small bubbles to be forming . I stir regularly to prevent scorching and to ensure the heat is distributed through the pan.
  • Remove from heat and turn off burner.
  • Add vinegar and stir for 1 minute. You should see small curds starting to appear .
  • Cover pot and let rest for 2-3 hours
  • Line a colander with a few layers of cheesecloth. Pour the contents of the pot through it and let it drain. If you are impatient , gently shift the colander back and forth and more whey will drain on dry parts of the cloth that hasnt been clogged with tiny cheese particles. You could let it rest like this but I waited a total of 10-15 minutes after draining.
  • Thats it!

    What Does It Taste Like

Fat-free cheeses will vary in flavor according to what type of cheese it is. For instance, fat-free ricotta is already a thing, as is fat-free mozzarella. But fat-free cheddar and Monterey jack will take some getting used to, in part because of their flavor , but also their mouthfeel. Fat-free cheeses are typically much more crumbly and harder they’re not altogether creamy.

It is worth noting that some manufacturers make up for the lack of flavor in fat-free cheese by adding additional salt. So it’s possible that you might find fat-free cheese to be a bit saltier than what you’re used to. This also has implications for those who are trying to manage their sodium intake .

Can You Freeze Mozzarella Cheese The Bottom Line

Easy Vegan Mozzarella Sticks (gluten, oil, soy, and dairy free cheese)

When freezing mozzarella cheese, its important to understand the characteristics of the cheese so as to know how to freeze it in a way that will yield the best results. Mozzarella has a lot of moisture as compared to other cheeses and therefore the freezing process will have quite an impact on the texture of the cheese. Thankfully though, the flavor of the thawed mozzarella will remain the same, and all issues of texture will be eliminated once melted!

No matter what type of mozzarella you have, there is a freezing option for you! You can freeze mozzarella cheese on a baking sheet if it is fresh or freeze it straight in a freezer bag if it is the low moisture variety. Whichever the case, the most important step is to take care to seal the packages tightly to prevent freezer burn.

Bottom line: freezing mozzarella cheese is a great way to ensure that you always have some on hand for cooking and baking with. So go ahead and give one of our cheesy recipes a shot!

How To Freeze Low Moisture Mozzarella

Low moisture mozzarella, in either block or shredded form, tends to freeze quite well as it contains much less moisture than fresh mozzarella. The process for freezing mozzarella blocks and shredded mozzarella is much the same as freezing fresh mozzarella, with a few minor differences to compensate for this difference in water content.

    Step 1

If you have yet to open that package of low moisture mozzarella, then just pop it straight into the freezeryour job is done! Its actually best to freeze mozzarella blocks whole when they are in their original vacuum sealed packaging, as these are already at the optimal level of air exposure prevention. If youre dealing with an opened package, however, proceed to step 2.

    Step 2

Once again, it will likely make the most sense to portion the cheese prior to freezing, as it will be crumbly and more difficult to cut through after defrosting. Feel free to portion the cheese in whatever shape or size is most convenient so that you dont have to defrost an entire block when all you need is a slice or two.

    Step 3

Since these cheese slices will be lower in water content, there is no need to freeze them flat on a baking sheet as you would need to with fresh cheese. You can place them straight into freezer bags, with layers of wax paper between the layers of mozzarella slices. Remove as much air as possible and place the bag into the freezer for cheesy goodness within easy reach!
