All Usda Certified Organic Milk Is Grass

USDA Organic standards require that, during the grazing season, all organic dairy cows spend a minimum of 120 days on pasture and receive at least 30% of their diet from fresh pasture grasses. On average across our co-op, Organic Valley farms far exceed this standard, with our pasture-raised cows receiving more than 50% of their diet from pasture during the grazing season.

Dairy Farms That Use Raw Milk Or Grass Fed Milk

Encourage local dairy farms around Ottawa and Gatineau and taste their natural and delicious cheese made from cows milk, goat milk or sheep milk. The best tasting and nutrient rich cheese is the one made from grass fed milk and raw milk. It is illegal to sell raw milk in Canada. However, it is legal to sell raw milk cheese, as long it has been aged for at least 60 days.

In Canada it is forbidden to use growth hormones and antibiotics for the dairy cows.

Why raw milk cheese?

The pasteurization of milk destroys the harmful bacteria, but also kills the beneficial micro organisms and enzymes of the raw milk that help in digestion and metabolization. The raw milk has also more vitamins and minerals than pasteurized milk. If you cant drink raw milk in Canada, at least enjoy its benefits by choosing raw milk cheese.

Why grass fed milk?

Research shows that grass fed milk has more health benefits than conventional milk. Grass fed milk has more omega 3 and antioxidants than regular milk. How Many Dairy Cows In The Uk Are Grass

Most dairy cows in the UK graze outside for at least part of the day from April to October and spend the rest of the time inside.

However, some spend little or no time outside, something which is known as a zero-grazing system.

A European Commission report titled Welfare of Cattle on Dairy Farms states that in the UK, the dairy grazing situation is as follows:

Around 30% of dairy farms maintain a traditional grazing system of winter housing and grazing from spring through to autumn. A further 55% of farms, in addition to grazing during the summer months provide some feeding indoors during part of the day during the grazing season.

The report doesnt state how the remaining 15% of farms operate, but its likely that cows on these farms spend even more time inside.

Why Sheep Milk Cheese

Sheep milk cheese is delicious. The fat molecules in sheep milk are smaller than the fat molecules in cow or goat milk, making sheep milk products more easily digested. The milk also has significantly more fat than other common milks producing a rich, creamy, white cheese or when aged a delicate yellow cheese. Because of this most of the worlds sheep milk is processed into cheese. Roquefort, Feta, Ricotta, Picorina and Manchega are some of the well known varieties and are traditionally made from the milk of sheep.

In the U.S. the largest concentration of artisan sheep milk dairies are located in Wisconsin near our farm. This is largely due to the support of the University of Wisconsin Agricultural Research Station in Spooner. For the past twenty years the research station has focused on dairy sheep and has been instrumental in providing technical assistance and disseminating information on dairy sheep genetics, milk production and cheese processing. In the early 1990s, when the idea of milking sheep was rarely considered in the U.S., the research station imported and supported the implantation of dairy semen to selected flocks. Our flock was one of the original ones inseminated.

However, this isnt the case as most dairy cows spend a large part of the year inside.

Traditionally, cows have been kept inside during the winter from November to March and then allowed to graze for the rest of the year.

Recently though, there has been a trend away from small-scale dairies to large, more intensive dairy farms which typically keep cows inside for longer periods of time.

This means that cows are fed a different diet, which can impact their health and also affects the quality of the milk they produce.

Sierra Nevada Cheese Company

Sierra Nevada Cheese Company handcrafts organic dairy using milk which is free of hormones and antibiotics and comes from local farmers in Northern California. Ben Gregersen and John Dundon introduced the company in 1997 by selling the cheeses at local farmers markets. As more people were demanding the products, Sierra Nevada was able to expand into local stores. In 2003, the company had grown and they felt it was time to relocate the creamery from Sacramento to 100 miles north in Willows, CA. They pride themselves for still sourcing clean ingredients and making their cheese with traditional manufacturing methods. A number of their cheeses use raw dairy with the options of fresh raw milk, 60 days aged, and 120 days and can be found in both cow milk and goat milk. Their other lines included organic and cow and goat milk in a diverse bunch of flavors.
