Recipe For Quick Cheese Dip

Ingredients for the cheese dip.

For this cheese dip you will only need 4 ingredients: butter, flour, milk and cheese. Add some salt and cayenne pepper if you like.

Melt the butter in a small saucepan over medium heat. Add the flour and cook for 1 minute, stirring all the time with a spatula. Whisk in half of the milk and cook until slightly thickened. Then gradually add the rest of the milk and cook until you get a creamy sauce about 1-3 minutes.

Turn heat to low and stir in the cheese until smooth and all of the cheese is melted. You may add up to two tablespoons more milk if the consistency is rather thick. Season with salt and cayenne pepper, to taste.

I make this sometimes on the stovetop while Im preparing other dishes, but most often, especially when I want to make it a bit ahead of time, I love using my slow cooker! My son and his friends can make it in the microwave in just a few minutes when they want scrumptious snack.

Like I mentioned, there are three super easy ways to make this favorite recipe.

  • Stovetop
    • jalapeno cheddar cheese or pepper jack cheese grated
    • white American cheese grated
    • white queso blanco grated
    • whole milk or half and half

    If you have any problems finding any of these cheeses, just ask your deli or dairy departments at the grocery store.

    How To Make Cheese Sauce Step By Step Photos

    Start by placing 2 Tbsp butter and 2 Tbsp flour in a small sauce pot.

    Heat the flour and butter over medium flame and whisk together until they become bubbly and foamy. Continue whisking for about 60 seconds. This mixture is called a roux and is what will thicken your sauce. Letting the roux cook for about 60 seconds slightly toasts the flour and gets rid of that raw floury flavor, but you want it to stay blonde, so if it begins to brown, remove it from the heat.

    Whisk in one cup of whole milk. Turn the heat up slightly and let it come to a simmer . Because the small volume, it should come to a simmer very quickly .

    When it reaches a simmer, the milk will thicken. When its thick enough to coat a spoon like in the photo, turn off the heat.

    Whisk in 6oz. shredded medium cheddar, one hand full at a time, until it is melted into the sauce. If needed, put the pot back over a low flame to help it melt, but the residual heat should do most of the work.

    Finally, season the sauce with 1/4 tsp salt and 1/4 tsp chili powder.

    Taste the sauce and adjust the seasonings if needed. And thats it! Now you have real ingredient, really delicious, homemade nacho cheese sauce.

  • First, combine all cheese and cornstarch in a saucepan over low heat.

    How To Make Rotel Dip

    Start by sautéing the onion on a skillet with 1 tbsp water until they become translucent. Add in the ground beef, the paprika and cumin and brown over medium high heat until completely cooked and you there is no more pink left. Drain the fat to the meet is dry.

    Turn down the heat to medium and add in the can of Rotel , processed cheese, and the cream cheese. Stir until completely melted. Sprinkle with green onions and serve with tortilla chips or flat bread immediately.

Also, make sure you hold off on adding any toppings and garnishes until just before serving.

    Absolutely!

    To make Rotel ahead of time, follow the instructions on the recipe, let the mixture cool down, cover it with plastic wrap and refrigirate it until you are ready to serve.

    Once you are ready to serve this delicious cheesy dip, reheat it on the stove and serve.

    The only tip I have about making this Rotel dip ahead of time would be to make it no longer than 24 hours before you are planning on serving it or having it.

    Its such an easy appetizer recipe to make because it only requires three ingredients including sausage, cream cheese, and Ro-Tel.

    Ro-Tel ingredients include Rotel tomatoes, green chilies, and a few spices that give it a little kick.
