There is nothing more addictive than cheese fries. When I eat something fried, I make sure it tastes good so that I know its worth the calories and these cheese fries do not disappoint.
Before a friend of mine told me about this recipe, I used to try melting the Cheese in the Microwave but as soon as we started eating it the cheese was already firm and uncheesy. This nacho cheese stays nice and runny and makes the perfect topping.

What Potatoes Are Used To Make Cheesy Fries
I always use Yukon gold yellow potatoes for my French fry recipes. Whether I bake, air fry, or deep fry, or even make curly fries, I love yellow potatoes for fries. I find they have the most flavour and they become perfectly crispy outside and warm and soft inside. You could use russet potatoes if you have those on hand, but I find theyre more bland than yellow potatoes.

Anyway, of course I had to try out their recipe. I made it and then ordered 3 large cheese fries from Shake Shack to be delivered, so that I could compare.
No surprise, the homemade one was better. It was more flavorful. I followed the exact recipe as shared , but they must have to add some preservatives or something in order to mass produce? I dont know. What I do know is that this stuff is liquid gold and Im now adding cheese sauce to everything.

How To Make Air Fryer Cheese Fries
Start by adding the french fries in a single layer in your air fryer basket. You may have to do, two batches.
Set your air fryer temperature to 400 degrees F, air fryer setting, for 12 minutes. Every 2 minutes shake your basket.
Once the fries start browning, add the cheese and air fry for about 45 seconds.
What Kind Of Cheese Is Used For Cheese Fries
Ill be using old yellow cheddar cheese, and an Italian cheese blend that contains mozzarella, asiago and garlic brick. You can pretty much use whatever cheeses you want! However, I would recommend you have mozzarella and old yellow cheddar cheese at minimum. We want the mozzarella to add the stringiness for cheese pulls, and we want cheddar for the colour and the sharpness. Here are some other cheese options you could add into your sauce!
You could also finish the fries with a sprinkling of Parmesan or Pecorino Romano cheese!

Heres How You Make The Best Cheese Fries
STEP 1: Cook a batch of your favorite variety of French fries according to package directions. We like the rippled kind that catches the cheese in all the nooks and crannies, but you can do any kind you like .
STEP 2: Melt up a tablespoon each of butter and flour in a medium pot, and add a half cup of half and half until it is simmering.
STEP 3: Add 3/4 cup of cubed Velveeta. I cant emphasize this enough: you DO need a hunk of Velveeta for this. Im as big a fan of cheddar as the next girl, but regular cheese doesnt give you the creaminess that good old Velveeta does. Stir it all up until it is smooth and melty.
STEP 4: Pile those fries on to a platter or bowl and pour that cheese sauce over them. Use every drop, and try and get to those fries at the bottom of the pile as best you can.

Fries With Cheese Sauce
Make no mistake: Were talking about nacho cheese sauce here. Ladle it over fries or dip them in it. Its up to you. The great thing about this application is you can start making cheese combos that dont work quite as well when youre just throwing grated cheese on fries. Best of all, you dont have to worry about the cheese cooling and changing your cheese fries into the dreaded aforementioned brick.
Some might feel that nacho cheese sauce is fake cheese, so were going to make some with real cheese to ensure we know whats in our nacho cheese sauce. American cheese is a must, as it gives it that great saucy, velvety texture, and were going to add that same medium cheddar for flavor, then finish it off with pepper jack to round out the flavors and make it nacho cheese sauce .
These are a bit more work than basic cheese fries, but the flavors you get in that cheese sauce are definitely worth the extra effort. Just be careful: If you pour the sauce over the fries and let them sit too long, they will soak up the cheese and get soggy.
- 1/2 pound American cheese, cubed
- 1/4 pound pepper jack cheese, grated
- 1/4 pound medium cheddar, grated
- 3/4 cup milk
- 1/2 teaspoon cornstarch mixed with 1/2 teaspoon water
- 1 teaspoon salt
Substitute For Cheese Curds In Poutine:
If you can’t get cheese curds, the closest possible substitution if you want the poutine experience, would be torn chunks of a full-fat block mozzarella cheese . You want it in chunks so it doesn’t melt completely. Don’t be skimpy. Some cheese curds are the size of my baby finger. That’s part of the poutine experience – the chunks of warm, softened cheese and shredded just won’t cut it because it melts completely and mixes in with the gravy.

Texas Cheese Fries Toppings:
There are so many types of Cheese Fries recipes floating out in the world and I love just about all of them.
This is the most classic version, most commonly called Texas Cheese Fries, with melted cheese, bacon, jalapeños and green onions.
I was born and raised in Texas, and for the life of me, I can not tell you what *makes* these cheese fries Texan. Maybe the jalapeños?!
But I can tell you, they are absolutely delicious and full of flavor. Both pickled jalapeños or fresh jalapeños work great use whichever ones you personally prefer.
Optional fun topping twists on these classic cheese fries:
- Blue Cheese: in place of the other cheese or in addition to them.
- Chili: a meat style Texas chili is great on top to create chili cheese fries!
- Caramelized Onions: always so good.
- Nacho Cheese: if you want to go Fair Style, this is the cheese you need.
- Shredded Chicken: adding chicken to these, takes an appetizer or side dish and transforms it into a delicious dinner!
What Type Of Fries
This is a personal choice, but I think the best Cheese Fries are made with steak fries that you season yourself with seasoned salt.
I dont recommend the already seasoned steak fries they sell in stores because the flavor can be over whelming when combined with all the toppings.
Fast food style thinner fries are a good back up option, however they usually dont hold up to the toppings as well as steak fries.
Also, in a pinch, a crinkle fry is a good runner up to the steak fry. They are thicker and will do a little better than the thin fries.
Prepare the fries however you would likein a traditional fryer, air fryer or in the oven. You just need hot fries!
If you are preparing the fries in something other than the oven, make sure you still preheat the oven so you can pop the fries in and melt the cheese right at the end.
These Texas Cheese Fries are next level in all the right ways. They are always the first to go at a party.

Start with store-bought steak fries from the freezer section.
PRO TIP: Use steak fries because the larger size can hold more toppings! And store-bought fries are just easier!
Toss the steak fries with seasoned salt before baking for extra flavor. Then, bake until crispy on the outside and tender on the inside, about 40 minutes.
Cheese For Cheese Fries
I like to use a combination of cheeses to get the perfect flavor. My two personal favorites are sharp cheddar and monterrey jack.
The one I dont consider to be optional is the cheddar, you definitely want to have the cheddar flavor in your cheese fries.
However, there are a lot of other shredded cheese options you can mix in with it: mozzarella, colby, or pepper jack.
Lastly, if you like it, you can also use 90s themed nacho cheese or queso. Have fun with your Cheese Fries!

Dont be afraid of the peppercorns. This cheese sauce is definitely not spicy. This is not Queso! It does not have Mexican flavors. It is just the savory, sharp goodness of straight up cheddar cheese, with the jalapeños and peppercorns added in for flavor, not a ton of heat.
On one of my tests making this cheese I actually added a whole sliced jalapeno just to see what would happen. It was delicious! Feel free to play with the spice level. As written, the recipe is quite mild. I actually tried my hand at making homemade Taco Bell Crunchwraps a few weeks ago, and added a whole-jalapeno version of this cheese sauce as one of the layers. It was so amazing.
Saute the peppers and onions in some oil with plenty of salt, then add some white wine and white wine vinegar. Cook it down, then add in your cream.
This is the only hard part. Wait 30 minutes for the cream to steep. The cream will absorb all that flavor! Have a taste! Its delicious.
Then strain out all the solids and add the cream back into your saucepan. Its retained all the flavor but is going to be perfectly smooth.
Shred up your cheddar cheese, and chop your American cheese into chunks.
Heat up the cream again. Do you see how the cream is nice and frothy? Dont let it come to a boil, but it should have bubbles on the edge.
