How To Make Keto Hot Pockets Aka The Best Ever Low Carb Croque Monsieur:

1.) Place the mozzarella in a heat proof bowl and heat in the microwave on high for 60 seconds. Stir and heat for a further 20 – 30 seconds until fully melted. Careful not to burn.

2.) Add the sunflower seed or sesame seed flour and mix with a spatula to combine into a ball. If the dough gets too cold at any point simply pop back in the microwave for 30 seconds to warm.

3.) Roll the dough between two sheets of greaseproof paper or a silicone mat and a sheet of greaseproof into an oblong shape.

4.) Place the ham in the centre and top with cheese and mustard. .

Tip: If you use thin ham you can roll it up instead of placing it flat onto the dough. This way your pockets end up thicker and fluffier. You can also use grated cheese instead of cheese slices. This is what I did when I made the recipe the second time around.

5.) Fold the edges of the dough over to form a pocket. Turn the pocket over so the seal is at the bottom. Piece two tiny air holes in the top with a sharp knife. Not too big or the cheese will escape! Bake in the oven for around 12-15 minutes until golden on top.

Yes! There are several ways that you can modify this recipe if you dont have yeast to make a true dough. My favorite way is to use this combination of self-rising flour and Greek yogurt:

  • 2 cups self-rising flour
  • 1 1/3 cups plain Greek yogurt

Just mix that together and knead it well several times. Then roll it out just like you would a normal dough. It will be a little harder to work with than a traditional yeast-dough, doesnt look quite as pretty, and may crisp up a bit more but it still tastes delicious!

Ham and Cheese Pockets are so easy to make with flaky puff pastry, sliced ham and cheddar with some mustard for extra flavor. Feel free to switch up the meats or cheese to customize your own hot sandwich.

When I worked in a bakery, we made more than just the sweet stuff. We would make these easy Ham and Cheese Pockets for catered events and things. We actually used danish dough instead of puff pastry, but its easier to find the puff pastry in regular grocery stores and its so flakey good!

Basically all you need is frozen puff pastry sheets, cheddar cheese slices, and ham slices. The mustard is optional. This time we used dijon, but you can use yellow or honey mustard as well.

Start by cutting a pastry sheet into fourths and roll them out just a little bit so you have room for your meat and cheese.

Add your meat, cheese, and mustard, then brush a whisked egg on the edges of half the square so you can fold it over and seal the dough together.

Fold over the top half of dough and pinch the edges or use a fork to seal them together. Cut a few slits on top for ventilation and brush the tops with the whisked egg.

How To Make Homemade Hot Pockets

  • Prepare homemade pizza dough, or substitute homemade dough with 1-pound store-bought dough.
  • Divide the dough into 8 equal pieces and roll each piece into about an 8-inch oval.
  • Evenly divide ham and cheese between ovals, placing the slices on the center of the dough.
  • Fold the dough over, creating a crescent shape and using your fingers or the prongs of a fork, tightly seal the edges of the “hot pocket”–just like you would for a calzone.
  • Place the hot pockets onto a baking sheet lined with parchment paper or that is well greased. Cut 2-3 slits across the top of each hot pocket to allow steam to escape while baking.
  • Bake for 12-15 minutes, until the dough is golden brown.

How To Store It

If they are baked they should be stored in an airtight container and refrigerated, they can be re-heated in the oven or microwave. If fried I think it is always best to eat immediately, as fried food tends to get soggy and heavy after sitting.

The dough can be frozen wrapped in plastic then placed in a freezer safe bag, or you can freeze the uncooked pockets. Place them on a cookie sheet and place in the freezer until firm, once firm put them in a freezer safe container or bag.

They will keep for up to 1-2 months in the freezer. The pockets an be baked directly from the freezer, place on a parchment paper lined cookie sheet and bake, add a few extra minutes to the baking time.

Hot Pocket Dough: If we werent trying make this a keto ham and cheese hot pocket, wed say skip the homemade dough and just use your favorite store bought pizza dough instead. But, then again, if you can make something delicious without all of those extra carbs, then why not just do it yourself? Our dough recipe uses only a few ingredients, so be sure to not make any substitutes or you wont get that good, flaky crust.

Heres what youll need for your flaky, low-carb hot pocket dough:

The how-to on the dough:

Combine the cheese and eggs in a stand mixer with a paddle attachment and beat until smooth, scraping paddle as needed. Next, add the dry ingredients and beat until they’re fully incorporated. Pull the dough into a large ball and then divide it into 12 equal balls and cover so they dont dry out. Roll out balls into 6-inch rounds and place them between parchment paper, then shape into ¼ inch thick rounds.

Note: If you happen to have a tortilla press on hand, this is a great way to quickly get perfectly even circles of prepared dough ready for filling!

The Filling: Ham and cheese! I mean, is there anything better than smoky, salty ham and super stretchy melted cheese? Nope! But dont worry, if ham isnt your jam here are a few more filling options to pair with the cheese:

How To Make A Ham And Cheese Puffed Pastry:

You will need just a few ingredients:

-puff pastry sheets or squares, or rounds- whatever you have available

-slices of your favorite ham

-shredded cheese

-an egg .

Step 1.

Preheat the oven to 400F/200C.

Step 2.

I had round pastry sheets this time, so it was very easy. I used 12 pieces of dough.

If you buy puff pastry sheets, then cut the puff pastry sheet in equal squares.

Step 3.

Place the sliced ham on one half of the circle. On top of that ham sprinkle some shredded cheese.

Use what you like I like cheese, so any cheese that melts works for me.

Step 4.

Fold the pastry in half to cover the ham and closed it with the help of a fork. You can brush the edges with a little bit of water, so it seals nicely.

Step 5.

Continue in the same way until you finish all pastry. Place the pastries on a baking tray covered with parchment paper or a silicone baking mat.

Step 6.

Beat an egg and brush each pastry with it.

Step 7.

Bake the pastries at 400F/200C for about 30 minutes or until golden brown and puffed up.
