Where Did Mac And Cheese Come From Anyway

Most of us grew up on the boxed mac and cheese as kids on ordinary days.

And while we loved it and rejoiced when Mom said thats what was for dinner, the only thing that made us happier was when she announced she was making it from scratch.

Out of box or completely homemade, theres no denying mac and cheese is an American comfort food that everyone loves.

But how did it come to be?

Kraft first started making macaroni and cheese in its famous boxes back in 1937. But the first mac and cheese recipes ever known to man were from the late 13th century in Italys southern region.

Not surprising since it is made with pasta. In a publishing called Liber de coquina, there is a recipe for something called lasanis which experts surmise was the original template for mac and cheese.

The difference here was that this recipe was made from lasagna sheets which were cut into little squares about 2 inches big.

They were boiled as is usual for pasta and then tossed with grated cheese.

Of course, it arrived in America with Italian immigrants but thats about all anyone can agree on.

There seems to be two different claims of mac and cheese as we know it in the states today. The first claims that it was served at a New England churchs potluck supper.

The more famous story though is that it came from southeastern Connecticut and was called macaroni pudding.

Accordingly, this version of macaroni and cheese went along with Thomas Jefferson back to Virginia after he spent time in Italy.

Macaroni And Cheese With Andouille Sausage

Make the recipe with macaroni or other pasta shapes. If you don’t have access to good smoked andouille sausage, try this recipe with another variety of smoked sausage. Chorizo or a spicy turkey or chicken sausage would be excellent as well. For milder sausage, add a little cayenne pepper to the dish for more heat.

How To Measure Pasta For This Recipe

Sometimes a reader or two has had an issue with how much pasta this recipe needs. This recipe is written by volume and sometimes people think that since a cup is 8 ounces that they can simply use 12-16 ounces of pasta or go by the weight of the dry pasta written on the box.

Youll end up with problems if you do this. Please follow the volume instructions and measure your pasta dry in a measuring cup meant for dry items . Small pastas like ditalini or little wagon wheels can go up to about 2 cups and be fine in the recipe, and large ones like bow tie or cellentani can as well. If you will stick to elbow pasta until you get the hang of things youll be better off.

Ive made this recipe with every pasta shape on the market and if you will measure in cups, your recipe will be just right.

Making Mac And Cheese Ahead Of Time

  • Make as directed , transfer to baking dish and cool completely. Cover tightly with foil and refrigerate 1-2 days ahead.
  • Before baking, let dish sit on counter for 30 minutes.
  • Bake at recipe temperature for 25-35 minutes, until hot and bubbly.

As a caveat, this recipe, as with most mac and cheese recipes, loses some of its creaminess when made ahead. This dish has been tested when made right away, which yields the best results.

I would increase the amount of sauce slightly if you need to make this recipe ahead of time.

Like mushrooms and roast chicken, mac and cheese is a promiscuous food: It can happily pair with lots of different wines. Here are three to try.

Off-dry Riesling. Think you cant deal with sweetness in your wine? Try it again with mac and cheese. The salty cheese balances the sweeter wine, plus Rieslings acidity refreshes your palatemaking it so you can eat more mac and cheese. The zesty, lightly sweet 2012 Später-Veit Riesling Feinherb is a good pick.

Lambrusco. Usually red, Lambrusco is an Italian sparkler thats a fun, unexpected choice for baked cheesy noodles. The cheese softens the wines tannins and the wines bubbles keep your mouth feeling squeaky clean. Try the NV Venturini-Baldini Lambrusco.

Spanish Grenache. In Spains dry heat, Grenache-based wines become ripe and juicy, making them great with cheesy dishes. The easy-drinking 2012 Bodegas Borsao Campo de Borja works well.

Simple Ways To Take Your Mac To The Next Level

If you want to prepare next level mac and cheese, its easiest to start with the box and doctor it up from there. Create your own cheese sauce or buy a jarred cheese sauce such as Ragu Classic Alfredo sauce.

Macaroni refers to the shape of the noodle, so if youd like to mix it up, you can use shells, elbow macaroni or even penne. The macaroni shape holds the cheese sauce well, which is why its a classic paring, but feel free to mix it up as you see fit!

You can also bake mac and cheese. The simplest method is to prepare a box variety, add pre-seasoned breadcrumbs, extra cheese and simply broil for a few minutes until melted. If you DIY your own cheese sauce, then pre-boil the noodles until theyre nearly done, before adding to a casserole dish and baking. While real baked mac and cheese is awesome and yummy, it does take longer to prepare .

The best way to take your basic mac and cheese recipe to the next level is simply add-in additional ingredients to make it even better. Its simple, fast and will take your meal from basic and boring to delicious.

How To Avoid Grainy Cheese Sauce:

5 Best Side Dishes to Serve With Mac and Cheese
    • The type of cheddar makes a difference. High quality aged cheddar cheese will give you a stronger taste and smoother texture. More mild and inexpensive cheddar cheeses will have less flavor and almost a grittier taste.
    • Use fresh grated cheese. Pre-shredded store-bought cheese will not melt the same as freshly grated cheese, and grating the cheese helps it melt smoothly and evenly in the sauce.
    • Bring the cheese to room temperature. I like to grate the cheese very first, before moving forward with the recipe. That allows it to sit at room temperature while I prepare the white sauce.
    • Use low heat. In order for the cheese to melt properly and smoothly we want it to have gradual changes in temperature . When its time to add the cheese to the white sauce, remove the sauce from heat and let it cool for a few minutes. It only needs to be warm enough to melt the cheese.
    • Dont over-stirthe sauce once the cheese has melted. Add the noodles and quickly assemble in pan and put into the oven.

    Sweet And Savory Meatballs

Mac and cheese tastes great when paired with a meaty side. The savory and sweetness of these meatballs works very well against the creaminess of the cheese sauce. A great thing about meatballs is that you can tailor the taste to suit your preferences.

Whilst some may prefer traditional meatballs that have been cooked in an ol marinara sauce, others may opt for meatballs that have a barbeque or chili flavor.

A great thing about meatballs is that they are fairly easy to make from scratch, but you will likely find pre-made varieties at your local grocery store too. If you are going to be making your own meatballs, you simply need to combine the ingredients before frying or baking them.
