Steve Lutzke of Chr. Hansen, a leading enzyme company, said the supply of animal rennet was consistently high through the 1970s. Rennet produced by microbial fermentation became more available. Approximately half of all rennet used in the ’80s was microbial.

    Do NOT let this mixture boil! If you do you may end up with a mac and cheese sauce that is too thick. Once the sauce has thickened enough to stick to a spatula, turn the heat to low. Then it’s time for the next step…

    Add the cheese & whisk until smooth

    Add the cheese and whisk until the sauce is smooth and all the cheese is melted. This will take 1-2 minutes over low heat. At this point it is important to taste the cheese sauce and adjust the salt/garlic according to your tastes!

    As IF Im already halfway through the mac and cheeses of the month for 2019! How did this happen?! I know its a ways away, but I already have an idea for the food Im going to make a new version of each month in 2020 and I think youre going to love it!

    I love each mac of the month Ive made, and they all hold a special place in my heart. If you ask me, you cant go wrong with any of them. But this one? This one is extra special.
