Secret #: Add A Dash Of Mustard Powder For A Kick

Whats for dinner? Mac and cheese with a parmesan crust!

In many recipes, there’s a special ingredient that might not be immediately detectable but boosts the other flavors in a dish. We tried a few spices like cayenne pepper and nutmeg, but were blown away by the addition of mustard powder used in this macaroni and cheese recipe. The mustard powder brings a subtle, horseradish-like heat that highlights the flavor of the cheddar in the best way possible.

Elbow Or Straight Macaroni

The best pasta you can use for a mac and cheese recipe remains macaroni. You can use any type of macaroni but you will most likely enjoy the elbow ones and the straight ones.

Children tend to love the elbow macaroni better than straight ones simply because they are more fun to eat due to the way they are shaped.

These types of pasta offer you a great cylindrical shape that is perfect for holding creamy cheese. Plus, their size is ideal for each bite as well.

When you pick between the elbow and straight macaroni, it will be only a matter of which one you like more. Further, elbow macaroni is easier to eat with a spoon, so they are better for kids.

This truly is the BEST stovetop mac and cheese recipe! It only requires one pot , its ready to go in about 20 minutes from start to finish, and its perfectly creamy and cheesy and delicious.

This weekend, Barclay and I went to a food festival here in Barcelona that was fabulously, deliciously, entirely devoted to CHEESE.

And it was just about the best thing ever.

Literally everywhere you turned, ooey gooey cheesy dishes were being served. And youd better believe we took full advantage of them. From freshly-scraped raclette toasts, to the most amazing Korean-inspired mushroom grilled cheese sandwiches, to Spanish onion and smoked cheese soup, to vegan Mexican cheesy quesadillas, to the best ricotta Ive ever sampled, to the most dreamy Italian gyoza-ish dumplings filled with potato and cheese and served in a pecorino-sage saucethe day was all of our cheesiest dreams come true. And we left feeling so happy. And soooo full, ha.

That said, there was one dish notably missing at the festival. But, it just so happens that Ive been on a mission this month to nail down my all-time favorite recipe for it. So yesterday, we decided to round out our cheesy weekend by taste-testing a final version of this recipe. And ohhh guys, I think weve got it. Im humbly calling it

The Best Stovetop Mac and Cheese recipe. Ever.

How To Make The Creamiest Mac And Cheese

The best macaroni and cheese recipes start with a rich bechamel sauce made with whole milk and plenty of butter. Bechamel sauce isnt difficult to make, but it can be finicky. Follow these tips and youll have a smooth, creamy bechamel sauce in just 10 minutes!

  • Warm the milk or cream so that is hot to the touch, but not boiling. Warmed milk incorporates into the roux much easier than cold milk.
  • Stay focused and whisk often. I am almost always multitasking in the kitchen, but not when it comes to making a bechamel. Youll want to stay close so you can keep whisking and adjust the heat if the sauce seems to be burning or thickening too much.
  • Follow the back of spoon test Youll know the bechamel has thickened enough when it coats the back of a spoon, but still drips off easily. If your sauce thickens more than this and starts to get gloppy, dont panic! Just add a few more splashes of warm milk until it is thinned out.
  • Use freshly shredded cheese. Pre-shredded cheese is often coated with additives that keep it from sticking together. Unfortunately, this can also prevent it from melting smoothly into sauces. Whenever I need to shred a large amount of cheese at once, I use my food processor.

Here you can see what the sauce should look like when its thickened, and then after the cheese has been added.

Macaroni And Cheese Variations

Baked Macaroni and Cheese

This recipe is easy to adapt to other variations. Here are some of our favorites:

Baked Mac and Cheese: Once the pasta and cheese sauce are combined, add it to a baking dish and bake with a little more cheese and breadcrumbs sprinkled on top. We shared this Baked Macaroni and Cheese a while back.

Garlic Mac and Cheese: Fresh garlic and roasted garlic are excellent in this recipe. Add either to the butter just before adding the flour. For fresh, Id use 2 to 3 cloves. For roasted garlic, you can increase to 6 cloves or more. See our recipe for making roasted garlic.

Use a Variety of Cheeses: Cheddar isnt the only cheese to use. Try easy melting Gruyere, Fontina or Monterey Jack. For more flavor, a bit of parmesan or pecorino cheese is lovely, and for a more adult dish, try blue cheese!

Spiced Macaroni and Cheese: Mustard , nutmeg, and a pinch of cayenne pepper are classic additions to the cheese sauce. Smoked paprika is also delicious.

Broccoli Mac and Cheese: A kid favorite! Stir roasted broccoli or steamed broccoli into the pot before serving. Heres how we make roasted broccoli.

Lighter Mac and Cheese: Swapping half of the cheese sauce for pureed cauliflower cuts calories and still tastes incredible.

Kraft Deluxe White Cheddar & Garlic Herbs

As a mac and cheese staple, you had to expect to see a Kraft product again … but we’re more excited about this one. The Kraft Deluxe White Cheddar and Garlic Herbs is putting an elevated twist on the classic box meal. The white cheddar has a sharper taste than the original, which will likely appeal to everyone who grew up on Kraft but has since managed to refine their taste. The herb flavoring, while not very strong, lends a different, unexpected flavor to the dish that’s overall pretty good.

It’s still your classic Kraft recipe though: the cheap noodles, the powder, the suspiciously long list of ingredients. None of these traits are what many consumers today are looking for. Instead of buying the cheapest food possible, people want healthy, natural food that aligns with the ethos of clean eating and that could be exactly where Kraft has gone wrong. If you are willing to let your oh-so-high standards slip, though, this mac and cheese may just be your perfect excuse.

What Kind Of Cheese Should I Use

There are two primary kinds of cheese in this mac and cheese recipe: Taleggio and Monteray Jack. Theres a hint of parmesan cheese, too.

Taleggio Cheese is a semi-soft Italian cheese that yes, does have a somewhat strong smell, but actually a mild and slightly tangy flavor. It gives the cheese sauce in this mac and cheese its silky texture while adding a unique flavor that pairs beautifully with white wine.

If you cant find taleggio, substitute it with double cream cheese, like Brie. For a more basic substitute, you can use mild white cheddar cheese it will have a bit more tang and change the overall flavor slightly, but its a substitute that works if you cant use Brie either.

Monterey Jack cheese delivers a creamy, melty, mild addition to the cheese sauce, rounding out the tang of the taleggio and the flavor burst from the white wine.

Annie’s Shells And Real Aged Cheddar

Does your local grocery store have a specially designated health food section? If so, there’s a good chance you’ll see Annie’s Shells and Real Aged Cheddar there. You can get this stuff in a box, but it’s also offered in single-serving microwavable cups if you want to take your mac on the go. We have to admit, there’s something about shell pasta that might be even better than macaroni. It just has a more interesting texture. And the aged cheddar flavoring in this product is perfect for a palate that’s slightly more refined than those of the Kraft lovers.

But while Annie’s purports to be healthier than other brands out there, it turns out that isn’t the full story. While the company’s products may be labeled “natural” or “organic,” there isn’t too much clarity about what that means in many cases. It also turns out that Annie’s mac and cheese is just as unhealthy as Kraft mac and cheese in many ways. That doesn’t mean you shouldn’t eat it, of course it does taste good. Just make sure you don’t fool yourself into thinking you’re actually eating healthy when you pop open a box of this stuff.

Don’t Forget To Season

Like so many other foods, forgetting to season your mac and cheese can make it fall flat. But don’t worry, we’ve got you covered. We season in 3 steps in our recipe: the topping, the sauce, and while cooking the macaroni. Plus, parmesan brings a natural saltiness to both the topping and the cheese sauce.

It’s the perfect combination of creamy, cheesy, and crispy with just the right amount of kick from the mustard powder. This GMO-free, organic boxed mac and cheese is made without artificial colors, flavors or preservatives. Lets just say thats a big switch up from the classic neon orange that you might expect to come out of a box!

Organic ingredients aside, testers really enjoyed this boxed macaroni and cheese. We found the sauce to be buttery and smooth, perfect for coating the traditional macaroni-shaped noodles. Tasting, we really appreciated the silky texture of the sauce, but we definitely wanted more of it! Outside of that, our biggest critique was that this mac and cheese didnt have enough cheese flavor to satisfy our palates . This is not to say this mac was bad by any means! We loved its buttery taste but we might add just an extra sprinkle of cheddar on top next time!
