I use a small food chopper or food processor to quickly and easily chop onions. If you do not have one of these, I highly recommend them.
They are such a time saver.
I usually just chop the entire vegetable and freeze what I dont need. Its so nice to be able to just take the diced onion out of the freezer for recipes.

The variations you can make to this keto cheesy broccoli casserole are great. You can add a crunchy topping by using crushed pork rinds, moon cheese, or toasted almond flour.
You can also add some fresh protein to your low carb broccoli casserole. Chicken is my favorite meat to add, but you could add shrimp, steak, or even pork.
Oh another variation you could make is if you want more protein but you are a vegetarian you could always add some tofu. Not my first choice, but for those who love tofu you probably will really like it.
Can I use a different cheese? Sure! Swap out the cheddar for some mozzarella, gruyere, fontina, or even provolone.

How To Make Low Carb Broccoli And Cheese Soup In My Crock Pot
If you would like to make this soup using your crockpot or slow cooker, you will want to add your broth and broccoli to your crockpot first and set it to high. If you prefer to saute your onions and garlic, do this separately in a skillet with the butter. Then add the onions, garlic, and butter to the slow cooker along with the spices. Cook on high for 3-4 hours or on low for 6-8 hours.
Once your crockpot is done cooking and set on a low or warm setting, you can use your immersion blender to thicken your soup. This is optional. Lastly, add the heavy cream, cream cheese, and shredded cheeses mixing well. Cover for 10-15 more minutes to allow the cheeses to melt. Mix again to fully incorporate everything and serve with bacon and more cheese on top!

You could use Colby, gouda, gruyere, Monterey jack, pepper jack, or even swiss cheese. I love the addition of nutmeg to cheese sauces, so I add it often. If you would like some spice to your sauce, you could always add some chili powder or even some hot sauce. Have fun and make it your own!

The best way to reheat broccoli and cheese casserole is to cover the dish with aluminum foil and warm it up in the oven at 350. Alternatively, you can also warm it up in the microwave for about 60-70 seconds or until its heated through.
If you froze your casserole, you dont have to worry about thawing it out before reheating it either. Broccoli is a very forgiving vegetable when it comes to freezing and it wont lose much texture, so feel free to fire it straight into the oven from the freezer.
Is Paneras Broccoli Cheddar Soup Keto Friendly
No. In fact, MOST broccoli and cheese soups are not keto-friendly because flour is usually used as a thickener. According to the ingredients in Paneras soup, three of the ingredients listed are not keto-friendly. They are potato flour, cornstarch, and wheat flour.

What is great about this recipe is that you can also make it in under 20 minutes from prep to bowl if you opt to make it on the stovetop.
This gives you the option to make this soup on the spur of the moment if you like. Can I tell you some of our best family gatherings have come as a result of serving this soup on the fly? So you have options, my friend.
To make your keto broccoli cheese soup on the stovetop, just chop your broccoli florets into small 1/2 1-inch pieces and then toss all the ingredients minus the cheddar cheese and allow the soup to come to a medium simmer.
I also recommend that you slice the cream cheese into 1-inch pieces so that it melts faster.
As the soup begins to simmer make sure that you are stirring on a regular basis. Once the broccoli gets tender about the 15-minute mark you can then add your shredded cheddar cheese.
After you add your cheese you need to keep a closer eye on your soup making sure to stir it often so that the cheese does not stick to the pot. Then simply ladle your soup into individual bowls and top with a little extra cheese if you prefer.

- Cheese: I used a mixture of mozzarella and parmesan but you can use your favorite melting cheese! Cheddar, American, provolone, pepper jack or any melting cheese will work.
- Garlic: Lots of it! I like to crush or mince the garlic to extract more flavor.
- Seasoning: Salt and pepper are the only seasonings that are a must for this dish but if you want to go the extra step, i highly recommend adding garlic powder, crushed red pepper, and Italian seasoning if youd like.
To cook:Simply sautee the broccoli and garlic until tender then adds the heavy cream, cheese, and cooked bacon and bake until bubbly and thats pretty much it!! This dish can be served as a side or eaten as a main dish or snack.
