This creamy dressing is just as easy to make as our buttermilk ranch dressing, this creamy Caesar and our homemade Italian vinaigrette !

Heres what you will need to make it:

Sour cream and mayonnaise For the best blue cheese dressing, use both. A combination of sour cream and mayonnaise make the dressing extra creamy. Mayonnaise can be heavy by itself. Adding sour cream lightens up the dressing a bit. If youre used to only using mayonnaise, try adding a bit of sour cream next time. Its a game changer. If youre in the mood, you can make homemade mayo, too. Heres our no-fail mayonnaise recipe.

Blue cheese Use a blue cheese that you love. We usually go for something that isnt too expensive and that tastes rich and creamy. Gorgonzola is a good option.

Fresh parsley Were big fans of fresh herbs, so we add them to just about everything. Fresh parsley adds both color and flavor to the dressing.

Salt and pepper There will be some salt in the mayonnaise and cheese, but we always end up adding some additional salt to the dressing to make the flavor pop. Pepper adds some spice.

Mash the packaged chestnuts or put them through a potato ricer into your flour and eggs. Roll like a long sausage and cut in one-inch portions to make gnocchi. Simmering takes just seconds.

A different use: prepare your favourite spaetzle and incorporate the ready-to-use chestnuts, gently whisking in. I like to dredge the chestnuts package in either almond flour or maybe chickpea flour before adding to any mix to stop clumping.

Sour cream will definitely give you a richer, more flavorful dressing, but you can still have a tasty dressing using yogurt.
  • Red Wine Vinegar The vinegar adds a little tang. You could also use white wine vinegar or another favorite vinegar.
  • Shallot Adds fresh flavor to the dressing.
  • Salt & Pepper To bring out all of the delicious flavor.
  • Blue Cheese Crumbles The star of the dressing! Crumble your own or buy pre-crumbled and feel free to add as much or as little as you like.

How To Make Port Wine Reduction Dressing

Ok, so Port wine is a fortified sweet Portuguese wine, thats typically served as a dessert wine or as a digestive. Being Brazilian, Port wine was a very common thing in my house, and my mom usually used it to make special steak sauces and desserts. Porto also one of the first wines I drank because it can be so sweet and dangerously easy to drink. If you havent had a good Port wine, I really recommend you try it.

For this recipe we dont need a great drinking Port wine. Real Port wine is imported from Portugal, and while its not unreasonably expensive, its also not cheapsy wine. If youre on a budget, you can totally just use cooking Port wine that you can find at grocery stores, usually where vinegars are. Generally, you can get it at whole foods for under 10 bucks.

To make the port wine dressing, add the port wine to a sauce pan and bring to a boil.

Then, let it simmer uncovered until the wine is reduced to about 1/4 cup and is syrupy . Like this!

Let the wine reduction cool, and meanwhile grill the cheese.

“I spent a weekend in North Carolina’s Blue Ridge Mountains,” writes Elizabeth Haworth of Columbia, South Carolina. “The Riverwood restaurant in Blowing Rock was a real treat – I especially enjoyed their fig and Stilton salad with Port dressing. Would the chef share the recipe for this unusual salad?”The sweet-tart dressing paired with creamy Stilton cheese strikes a great balance in this winter salad.

3/4 cup ruby port1/4 cup dry red wine1/4 cup vegetable oil2 tablespoons hazelnut oil or walnut oil1 tablespoon sugar1 tablespoon red wine vinegar1/2 tablespoon Worcestershire sauce1/2 tablespoon mild-flavored molasses1/4 teaspoon onion powder1 9-ounce package dried black Mission figs, stemmed, cut in half lengthwise

1 5-ounce bag mixed baby greens 4 ounces Stilton cheese, crumbled

Whisk first 10 ingredients in medium bowl to blend.

Bring vinaigrette and figs to simmer in heavy large nonstick skillet over medium-high heat. Simmer until dressing is slightly syrupy, stirring occasionally, about 8 minutes. Cool slightly. Season dressing to taste with salt and pepper.

Divide greens among 6 plates. Sprinkle cheese over greens. Ladle warm dressing and figs over salads and serve.

Makes 6 servings.
