How to make MACARONI & CHEESE

During this national social distancing project, Ive been doing what many of you are probably doing cleaning. Closets, shelves, drawer, underneath furniture. You name it, Ive probably cleaned it. While organizing a closet, I found several notebooks that belonged to my Granny.

Ive really enjoyed flipping through these notebooks to see what recipes she was attracted to. I found this amazing baked macaroni and cheese recipe in one of her notebooks and it was torn from a magazine right beside Country Fried Steak, another treasure.

This creamy mac and cheesy makes a huge pan, making it great to share. Its already going on the menu for the next holiday, and I know its going to be requested over and over and over. I shared some with my parents, and my mom was in awe about how fluffy this version is. To quote her winner winner, chicken dinner.

I love my Moms mac and cheese hers is also a baked recipe but it has a thicker, denser texture. The addition of 6 beaten eggs forms almost a light, custard texture that makes this version hard to resist. Not Using A Blend Of Cheeses

Using the right kind of cheese, or better yet, the right cheese blend is key. Its important to keep in mind that some varieties melt better than others, while some offer more flavor. So keep your mix balanced with cheeses that are mellow but melt well, and acheeses that have a rich taste. Its also best to steer clear of pre-shredded cheese.

Follow this tip: The cheese is the main attraction in this dish, so go with good-quality kinds. And better yet, use a blend of cheeses! I love using a combination of cheeses that melt really well, like fontina, Gouda, Gruyere, and Monterey Jack, along with cheese that has a distinct and vivid taste, like sharp white cheddar, Parmesan, or even Roquefort.

Too Many Extras Were Added

Sometimes it’s easier to rationalize making and eating hearty dishes like mac and cheese by adding some sort of healthy component to it. Whether its using a grain-free pasta, lower-fat cheeses, or adding in veggies, there are plenty of recipes that try to take the guilt out of this guilty pleasure. These are fine variations to try out, but if you want a classic mac, it’s best not to deviate too far from the elements that make the dish so crave worthy in the first place.

Sure, some veggies are super tasty in mac and cheese and you can definitely get away with using low-fat or nonfat milk, but dont let it get too far away from its ooey, gooey, cheesy self! said Yeh. In general, treat mac and cheese like the true indulgence that it is.

Is Butter Really Important For Cooking Mac And Cheese

Baked Mac and Cheese (So Creamy and Cheesy)

The simple answer lies somewhere between yes and no! Confused? Lets make it clear.

If youve ever tried making boxed macaroni and cheese, they dont come with butter. This is because of its short shelf life. A majority of packaged mac and cheese can be made without butter.

You can use milk or cream instead to make it more luscious and creamy. Although butter has its own amazing flavor, if you want to cut it down, youre absolutely free to do so.

In fact, most of the health-conscious and vegan folks cut down butter in order to make their macaroni a bit healthier.

Moreover, the only cooking involved in making boxed mac and cheese is boiling the pasta. Butter is added after the real cooking part is done. So, its only purpose is to impart a nice flavor and richness to the final dish.

So, apart from flavoring the macaroni, butter also adds a richness to it. This means, if youre not adding butter, youre compromising on its richness. Hence, you have to find some other fat source to fill that void in your lovely cheesy macaroni.

What does butter do in mac n cheese ?

As we already discussed, the main purpose of adding butter in the boxed mac and cheese is providing an additional flavor. So, you can get that richness and flavor by adding full-cream milk or heavy cream.

However, in case of homemade mac and cheese, you have to use butter or any other fat source for preparing the base sauce or the roux. Further, butter also helps in thickening the sauce.

If you’re baking your mac and cheese, don’t forget to top it off with a healthy amount of fresh cheese. Too often, people skip this step thinking that their sauce is cheesy enough, when in fact this layer is meant to keep the moistness inside the dish, said Menager.

But keep in mind that not just any cheese will work for the topping.

If the topping is made of too many dry, hard cheeses it will easily burn, but if the cheese is too soft it will make a melty mess, be difficult to serve and will not develop the desired golden brown color,” he said, adding that using the right balance of both will help ensure a picture perfect presentation and an excellent flavor.

    • The type of cheddar makes a difference. High quality aged cheddar cheese will give you a stronger taste and smoother texture. More mild and inexpensive cheddar cheeses will have less flavor and almost a grittier taste.
    • Use fresh grated cheese. Pre-shredded store-bought cheese will not melt the same as freshly grated cheese, and grating the cheese helps it melt smoothly and evenly in the sauce.
    • Bring the cheese to room temperature. I like to grate the cheese very first, before moving forward with the recipe. That allows it to sit at room temperature while I prepare the white sauce.
    • Use low heat. In order for the cheese to melt properly and smoothly we want it to have gradual changes in temperature . When its time to add the cheese to the white sauce, remove the sauce from heat and let it cool for a few minutes. It only needs to be warm enough to melt the cheese.
    • Dont over-stirthe sauce once the cheese has melted. Add the noodles and quickly assemble in pan and put into the oven.

Warming the milk up a bit first helps keep the sauce thick, and it takes less time to heat up to a simmer. If combined properly, your roux/milk mixture should be rich and creamy once all the milk has been incorporated.
