I know that a lot of people go with the Wonderbread style for classic comfort food grilled cheese . But if youre going with the three-cheese combo above, youve already strayed from that style of sandwich and you need to go with something a tiny bit better. Ideally, something with a bit of crunch to the crust and lots of air in the middle. The goal is a crunchy layer outside with a very soft pillow-y layer of bread between that crust and the cheese.

I like to get a loaf from the bakery section of the grocery store, a loaf that has been put into a perforated bag so that the crust hasnt softened. An Italian bread or sour dough work perfectly.

Youre going to hand-slice the bread so that its on the medium-to-thick side. Or ask the bakery if they have a thick-slice setting for slicing their bread. Some do.

Finally, theres the matter of lubing up the outer sides of your bread to get that sandwich toasty in the pan. Many people grew up using butter for this purpose, and you can absolutely make a tasty grilled cheese with butter or olive oil.

But over the past few years, a secret, chefs-only ingredient for making grilled cheese with a crispy, perfectly golden-brown exterior on both sides has been leaked to home cooks. Thats right: were talking about using mayo on grilled cheese.

Rather than adding moisture to the interior, as it does when added to a cold sandwich, greasing your bread with a thin layer of mayo gives the best result while lowering the risk of burning the bread, which is substantially higher if you use butter. The proteins from the eggs plus the oil in mayo create the perfect crunch and color.

How to make a Giant Grilled Cheese

If you find grilled cheese sandwich to be a bit greasy, you can fend off the excess greasiness by pairing it with pickled vegetables or fruits.

One great recipe I have tried is the pickled pineapple sriracha which adds sweetness and refreshing flavor to the greasy sandwich. Place garlic, pineapple, lime juice, fish sauce, and sriracha in a bowl and whisk until everything is mixed correctly. Put the pineapple slices in a glass jar with a lid and pour the lime mixture in the jar until the pineapple is fully covered by it. Cover the jar tightly and refrigerate it for up to 3 weeks.

For pickled vegetables, one recipe that I have in mind is pickled asparagus. My mom used to add asparagus in her grilled cheese sandwiches, and I absolutely loved it but let me tell you, this pickled asparagus recipe is much better than that!

You can prepare this by trimming the asparagus spears to make sure that they would fit your glass jar. Place the trimmed asparagus bottom down inside the jar. In a saucepan, add in vinegar, kosher salt, sugar, and water. Stir until the sugar and salt have completely dissolved. Pour the vinegar mixture over the asparagus spears, covering them completely. Allow it to cool down then refrigerate for 24 hours.

A classic Italian sub has at least three kinds of cured meats in it. I like a mix of pepperoni, salami, and prosciuttobut there is no hard and fast rule here. If you want something spicy, add some soppressata. If you want something a little creamier, add a thin slice of mortadella!

The classic Italian sub is one of my favorite sandwiches, but a good one is huge and could probably use a little restraint when adapting it to grilled cheese form! Its a rare day that I get to present a grilled cheese sandwich as a lighter option, but thats definitely the case with these Italian Grilled Cheeses.

Also, Italian subs are SO big that my kids are overwhelmed by them. So, by downsizing the layers a bit and making it into a gooey, crispy-on-the-outside grilled cheese, you kind of get the best of both worlds.

For serving kids, I cut the sandwiches into wedges for even easier eating.

Grilled Cheese Recipe with Cream Cheese – Ultimate Grilled Cheese Sandwich | RadaCutlery.com

This is a trick that my grandmother Mimi used to pull off. Maybe you have encountered it at a restaurant and wondered how it works. It can be a little tricky, depending on how non-stick your pan is. If you have a well-seasoned cast iron skillet, its worth a shot.

Simply sprinkle some additional grated cheese over your buttery skillet, and flip the hot sandwich over on top of it. Listen, and once the cheese has stopped sizzling, wait a few more moments longer before flipping it back over. Ta da.

Non-stick skillet notes: I have always recommended using cast iron or stainless steel skillets when possible, since theyre non-toxic. When I worked on this post, Id been testing out a non-stick ceramic skillet from Green Pan. While it was non-stick enough to successfully make these sandwiches, Im no longer recommending this pan. See the section on ceramic non-stick pans over here.

    Karaoke and Grilled Cheese!

As far as I know, there are three classic ways to make grilled cheese. Ive used them all, and they all work.

  • Mayo all the way! Some people are mayo people, where they smear mayo on the outside of the sandwiches before toasting, and I like that method for a simple grilled cheese.
  • Nope, gimme butter! Some other people like to smear on butter. That works well also.
  • Butter, but melt it in the pan! I actually find it easier to melt a little butter in the skillet over medium-low heat, and then quickly flip the sandwich in the butter to coat all sides. Not only is this easier, but it also helps you gauge how hot your skillet is. If your skillet is too hot, itll just burn the bread before your grilled cheese is cooked through.
  • Once your sandwiches are coated with butter on both sides, just cook them for three to four minutes per side until they are golden brown, and the cheese has melted!
