This recipe yields a substantial amount of soup . If you are serving two people or dont want a lot of leftovers, you could easily cut the ingredients in half. Heres what youll need to make it:

  • I swear that soups always taste better when theyre cooked in a Dutch oven. I used my 5.5-quart Le Creuset for this recipe. A large, heavy-bottomed soup pot will also work well.
  • Youll need a lid for the pot. In a pinch, you could use a metal baking sheet.
  • If you are making the full batch, youll need to blend it in batches in your stand blender. I could not blend the full batch at once in my Vitamix. Transfer the blended portion to a heat-proof pitcher or container as you blend the rest, then combine it all in the soup pot.
  • Or, you could use an immersion blender. The trouble with immersion blenders is that they never yield soup as creamy as you could accomplish in your stand blender. I wish it werent true!

Safety note: Never fill a stand blender past the maximum fill line, or you could end up with a giant mess . You need to know how your blender works. My lids design allows for steam to escape, but if yours doesnt, youll want to remove the center piece so the contents dont build pressure as they blend. Cover the hole with a tea towel, but dont place your hand over it because the steam is hot.

To make this soup dairy free, I started building flavor from the beginning with onion and garlic. Then I used a combination of vegetable broth, almond milk and canned coconut milk for the liquid.

I used canned coconut milk because because its as thick as heavy cream, but I always like to balance out the sweetness with another dairy free milk, like almond.

To give the soup the right color and flavory, I added 1/4 cup nutritional yeast and a little ground mustard, turmeric and paprika. And, of course, youll need salt.

Then I thickened it all up with a slurry of flour and the rest of my almond milk. I also added a pinch of nutmeg at the end, but you definitely dont need it.

As for the broccoli, chop it as small or large as you want. I think it mimics restaurant quality if you let the broccoli cook way-down, so I cut mine fairly small.

You can top you soup with some vegan cheese shreds, or you can go for some homemade croutons. They get nice a soft in the soup and add a really good amount of flavor. Or, you can just stand at the stove and eat from the pot, no garnish necessary. Its up to you.

Broccoli: Obviously. For this soup I use a large head of broccoli, stem and all.

Leek, onion and garlic: These form the flavour base of the soup.

Potato: Adds body and creaminess.

Butter and olive oil: I use part vegan butter, part olive oil for frying the vegetables for the best flavour.

Stock: Use a good quality vegetable bouillon if possible. I like Marigold.

Nutritional yeast, lemon juice, mustard and bay leaf: These all contribute towards forming the ‘cheesy’ flavour in the absence of any actual cheese.

Cream: You can use any shop-bought vegan cream such as soy or oat based ones, or use home-made cashew cream. I generally use Alpro soy single cream.

You could use coconut cream instead but it may impart a bit of coconut flavour so it wouldn’t be my first choice in this instance.

Baby spinach: Adding in a big handful of baby spinach before blending the soup helps to keep the bright green colour as well as adding extra nutrition.

If you like Paneras broccoli cheddar soup, this blows the pants off it.

Its an easy soup to make and is ready in 1 hour. Its absolutely perfect comfort food and I couldnt stop eating it. I ate it for lunch and dinner for a couple straight days until it was gone. I loved this soup beyond words.

I kept the soup vegetarian by using low-sodium vegetable stock rather than chicken stock, and made it healthier by using fat-free half-and-half.

But youd think that it was made with heavy cream based on how thick, rich, and truly decadent it tastes.

I love broccoli and used plenty because I prefer big chunks of broccoli in every bite but you can use less. I also used some stalks to make use of the entire head and not waste any, but you can use florets only if preferred. Even people who dont like broccoli should love broccoli when its bathed in a creamy, cheesy broth.

Theres a few optional spices like smoked paprika, mustard powder, and cayenne pepper. Theyre not mandatory if you dont keep them on hand, but they do add extra depth of flavor, albeit subtle. The cayenne doesnt make the soup hot in the least, it makes it not taste boring.

Use a high-quality cheddar cheese that you grate yourself. Dont use the cheapest cheese you can find because the flavor just isnt there.

Cheesy Potato Soup With Broccoli

I was a bit of an anomaly as a kid.

I didnt care for peanut butter, opting for liverwurst instead. I loved oatmeal for breakfast and salad was one of my favorite snacks. And what was my pre-dinner ritual? Two tall glasses of milk before the food ever even hit the table.
