Smoky Rind On Members Mark Gouda Cheese

Smoked Gouda Veggie Melts! (French Bread)

The edible rind is where youll taste the cheeses intensely smoky flavoring. The rind melts more slowly than the cheese inside the rind. You might want to cut it off when using with soups and mac & cheese. Bonus: when youre melting this gouda on burgers, the rind will function as a barrier to keep the cheese from melting over the sides and onto your grill racks.

Where Does Gouda Cheese Come From

Contrary to what you might think, Gouda cheese is not actually made in the city of Gouda, but rather, it is traditionally bought and sold in Gouda. Way back in the Middle Ages, towns could earn the rights to trade certain commodities. The town of Gouda had the rights to trade cheese, so thats where people went to buy and sell cheese!

Nowadays, Gouda refers more to the style of cheesemaking than the actual cheese, as Gouda cheeses can vary widely depending on age. For this reason, the name Gouda isnt protected or meant to define only the cheese coming from Gouda. If you want the real deal, look for Noord-Hollandse Gouda, as this title is protected and can only represent true Dutch Gouda made with Dutch milk.

How Can You Store Gouda Cheese

Storing gouda cheese is easier than you may think. Right now, I will provide you with the best storage methods to ensure your cheese wont go bad. The good news is that gouda cheese can be kept at room temperature and will last longer in the fridge, but take some notes below.

  • At room temperature: Gouda cheese should be wrapped in parchment paper to have the best result. Thats because your gouda cheese can get air in parchment paper. You can also use a plastic bag to store gouda cheese, but remember not to seal it.
  • In the refrigerator: Put your gouda cheese in the warmest area. In this way, your cheese can be kept for two to three weeks.
  • In the freezer: It would help if you didnt put gouda cheese in the freezer since you can make your cheese change its flavor or texture.

How To Smoke Gouda

When youre ready to smoke Gouda, its best to decide what wood to use. My recommended wood is hickory , but maple and fruit woods would taste amazing with Gouda as well.

Prior to smoking, you can choose to remove the wax seal or leave it on. Taking it off prior to smoking will allow for more smoke penetration all around the cheese. In contrast, if you choose to leave the wax on, it will keep the cheese a bit fresher, but you wont have as much smoke flavor near the seal.

Lets begin:

  • Prep for cold smoking. When cold smoking, I prefer to use a smoke tube. Fill the tube with your preferred flavor of pellets. Light the end of the tube and allow the flame to burn for 4-5 minutes. Blow out the flame, and the pellets should be producing a nice, steady stream of blue smoke. Place the smoke tube in your grill or smoker and close the lid.
  • Smoke the cheese. Remove the Gouda from the wrapping and place the Gouda directly on the grill grates or use the ice modification specified above .
  • Refrigerate. Remove the cheese from the smoke, and wrap it in parchment paper. Place the cheese in the refrigerator for 2 days, or 48 hours. After those initial two days in parchment paper, vacuum seal the cheese, place it back in the refrigerator, and allow the cheese to refrigerate for another 2 weeks before eating.
  • Eat and enjoy. After your cheese has been vacuum sealed and allowed to rest in the fridge for 2 weeks, you can open the cheese, slice, and enjoy.

    How to Make Gouda Cheese

Gouda is also a semi-hard cheese and offers a slightly soft, sweet flavor with a mild fruitiness. As gouda cheese becomes older, it becomes harder and darker and develops a more robust, buttery, and nutty flavor note. Gruyere takes on a similar mildly fruity flavor but offers more nuttiness and is a little saltier than gouda since it is cured in brine.

Due to the moisture and semi-hard texture of gouda, it melts excellently, especially if cooking with younger gouda. Gouda melts best at medium heat, and if it is heated at very high temperatures, it can become stringy. Gouda can also be consumed as a snack with cheese-boards, crackers, fruits, and a deep red wine. Since gouda is suited to be melted and cooked and served with cheese-boards, it can be a good substitute for gruyere. Although they may have slightly different flavors, the similar moist but firm texture gouda can be a good alternative if you are in a rut.

    Norwegian Cheese For The Foodie

Have you been eating the same cheese day after day for years now? Would you like to try something different? Then Norwegian cheese is definitely recommended. Although cheese from Norway is still relatively unknown to many, it is definitely a cheese that you must have tasted.

Norwegian cheese tastes different from all other cheeses that you have enjoyed in your life. After all, cheeses from Norway are sweeter than other cheeses. Norwegian cheese is delicious on bread. Or eat it, like the Norwegians eat it, on toast.

How To Store Gouda Cheese Effectively

The Gouda cheese is always put on a coating to keep it clean. You can store Gouda cheese by putting it in the crisper drawer of your refrigerator. You have to wrap it in parchment paper and loosely in plastic. This storage helps Gouda cheese keep for 2 to 3 weeks.

You can also freeze sliced Gouda cheese to extend its shelf life. The best way to freeze it effectively is by wrapping it in heavy-duty aluminum foil, plastic, or heavy-duty freezer bags.

However, freezing Gouda cheese may alter its texture. It is better to use for cooking sauce, soup, or casserole. Frozen Gouda can keep for up to 8 months if you freeze it properly.

    How To Eat Gouda

Gouda tastes delicious just by itself. However, if youre looking for some more creative ways to eat it, then here are some ideas.

First of all, how people use Gouda generally depends on the age of the cheese.

For the younger varieties of Gouda, the mild taste works in all kinds of different dishes and pairs well with many foods.

Here are some ways to use mild Gouda

    • Cheese platters
    • Melted on top of various dishes
    • Omelets
    • With crackers
    • With fruit

For stronger, older varieties of Gouda, it is traditionally served alongside alcohol such as strong ales and red wine.

That said, it will also work well as part of a cheese platter and to make sharp and tangy fondue.

    How Is Gouda Cheese Made

    Arla Dofino Gouda Cheese

So how is Gouda made? When cultured milk curdles, some of the liquid whey is removed and replaced with warm water, which is then drained. This is known as washing the curds, and it helps to remove extra lactose, therefore preventing some of the lactic acid formation. The curds are then pressed into round molds and are plopped into a brine bath. The cheese is then set out to dry, coated in wax or plastic, and aged for anywhere from one month to over one year.

For example, the cow has a special appearance with a striking brown fur, hairy ears and white muzzle. Moreover, the Jersey cow is a lot smaller than the typical Dutch cow. How to Make Gouda Cheese (Infused with Tea)

In the older/more matured Gouda cheeses, you may find crunchy, white crystals throughout the cheese. This is often confused with salt crystals, which sometimes form on the outside of the cheese as result of the brine bath. The clusters inside the cheese, however, are actually bits of tyrosine, an amino acid and the sign of a well-aged cheese!

Maasdam Cheese Or Dutch Emmental Cheese

Relatively uncommon in some parts of the world, maasdam cheese shares many of its same characteristics as gouda cheese, with a semi-hard texture and a somewhat high fat content, lending many notes of sweetness and creaminess to its flavor profile.

However, maasdam cheese does not share any similarity in appearance to gouda, save for a similar shade of yellow, as maasdam cheese contains what is referred to as internal voids, or holes, of which are most commonly seen in Swiss cheese, a direct competitor of the maasdam cheese.

This may equate to a more uneven slice if used in dishes such as sandwiches or pizza, as well as a difference in appearance, if it is an important factor in said dish.

As such, maasdam cheese is best used as a substitute for gouda cheese in things such as fondue or potato wedges, wherein it may be melted or otherwise used exclusively for its similarity in flavor to gouda cheese.

In terms of flavor, the best gouda substitutes are gruyere, aged Monterey jack, or maasdam cheese. In terms of texture substitutes, edam, cheddar, and emmental cheeses are great options. Lastly, if youre making fondue or intend to melt the cheese, good alternatives are fontina, provolone, and gruyere.
