What Is Monterey Jack
This mild, meltable cheese originated when Franciscan monks brought their recipe for queso del pais, a fresh, white cheese, to California’s Monterey County in the 18th century. Commercial production of Monterey Jack began in the 1850s and is often attributed to Scottish immigrant David Jacks, who marketed the product as “Jack’s Cheese.” By the 1880s, Jacks had 14 dairy farms across California producing the cheese. Today, Wisconsin is also a significant producer of this style of cheese.
At the start of World War I, imported Italian cheeses were no longer available in the United States. In response, cheese purveyor D.F. DiBernardi developed the recipe for Dry Jack to act as a substitute for hard, flavorful grating cheeses such as Parmesan and Grana Padano.
Remove Whey & Wash Curds
This is one of the key parts in making this cheese a real Colby cheese.
The curds are now resting on the bottom of the pot at 102°F with only a moderate amount of lactose converted to lactic acid. In other words a very sweet cheese curd.
If left in this condition, the lactose will act as a food source for the bacteria and the result will be a higher acid curd which dries the curd out as the acid develops. The bacteria will also be very happy working at this temperature as well.

In Addition the cold water will begin to increase the moisture of the curd. If the water temperature is lower that the curd temperature the curd moisture increases. If it is higher than the curd temperature it will decrease the moisture .
Begin by removing the whey down to the level of the curds.
Then add water first at 75°F as the curd cools to 80-85°F with stirring. Then allow the curds to settle again and remove the whey/water down to the curd level again.
Next add very cold water until the curds are at 75°F.
At this point the process has taken about 3.5-4 hrs and we are ready for the final stage of molding and pressing.

How To Make Monterey Jack Cheese At Home
- Pour Milk into stockpot and heat to 32 degrees Celsius. I use a digital thermometer.
- Add the starter culture and stir thoroughly to combine.
- Leave the milk to ripen for 45 minutes.
- Stir in 15 grams of salt into the diluted Rennet.
- Pour the salty Rennet into the milk and stir for 1 minute.
- Leave the milk to set for 1 hour or until the curd has set with a clean break.
- Cut the curd into 1 cm cubes and then let the curds rest for 5 minutes.
- Heat to 38 degrees Celsius over 30 minutes. This means increasing the temperature no more than 1 degree every 5 minutes.
- Stir frequently during this time to stop the curds matting together.
- Once you have reached 38 degrees Celsius maintain this temperature for another 30 minutes, again stirring frequently to prevent matting.
- Let the curds rest for 5 minutes.
- Pour off the whey so that the curds are only just showing at the bottom of the pot.
- Leave the curds to set for 30 minutes, stirring every 5 to prevent matting.
- Pour the curds into a cheesecloth-lined colander to drain remaining whey.
- Add 15 grams of salt and herbs if using and mix by hand.
- Pour curds into mold and press at 5kg for 20 minutes.
- Remove, turn and redress and press at 10kg for 20 minutes.
- Remove, turn and redress and press at 15kg for 12 hours.
- Remove the cheese and wash with a brine
- Air dry at room temperature on cheese mats for 3 days.
- Wax or vacuum seal when cheese is dry to the touch and the rind has turned a darker yellow.

We began with 5 gallons of local milk . We then heated the milk to 88¡F and added 3/8 tsp of culture MA011 but one of the culture packs C101 will work just as well. It was then allowed to ripen for 60 minutes.

From the 10th of November 2016 to the 9th of February 2017, the FDA ordered a recall of the cheeses Colby and Colby Jack made by the company Meijer. This recall only extended to its own Deli stores. This was due to the potential cross-contamination with Listeria monocytogenes at their Middlebury, Indiana manufacturing factory. At the time customers were asked to either dispose of the product or return it to customer service at any Meijer store for a full refund. It was stated by the FDA, “The recalled product will be in plastic deli packaging with printed labels that have the UPCs 215927xxxxxx or 215938xxxxxx the last 6 digits will vary, and are determined by weight since the product was purchased at the deli counter.”
