Goat Cheese And Cremini Oatmeal

For a savory start to your morning, try one of our favorite combinationscremini mushrooms, creamy goat cheese, and chopped fresh thyme. Creminis, more mature than your basic white mushroom yet still younger than a portobello, are the ultimate counterpart to soft goat cheese in this bowl of oats. If you can’t find cremini, however, your favorite mushroom variety will do. Thyme adds a fragrant, herbaceous aroma that makes this dish super fresh.

How To Choose The Right Goat Cheese

In most grocery stores youll see goat cheese labelled as soft chèvre, which is more of an umbrella term for French goat cheese. This is what I used for my pasta, and it turned out fantastic! You can also get more specific and hit up your local cheese shop. Look for these soft varieties:

How To Make Our Mushroom Pasta:

In order to really fill out the picture on this heavenly date night mushroom pasta with goat cheese, you need to know this about us: we are pretty traditional in our marriage/home owner roles.

Bjork does outside stuff like shoveling snow and mowing the lawn, and I do the inside stuff like cooking and eating small bites of leftovers out of the fridge. You know, the important stuff.

So Im not even exaggerating when I say that when Bjork offered to make dinner a few nights ago, it moved his total of Husband-Cooked-Dinners in the lifetime of our marriage to a grand total of 3. One, two, three. Weve been married for almost six years. OKAY THEN.

Date night, we called it. And as it turns out, Bjork actually knows how to cook with the help of a few recipe tutorials, and I actually can and will shovel snow at neck-breaking speed , and most importantly: we both die for pasta with goat cheese and mushrooms.

Its only fair to name this recipe Date Night Mushroom Pasta in honor of how the recipe came into my life.

AND because making and eating this just feels super romantic, maybe because of the white wine, or the earthy textures and colors, or the incredible smells that take over the kitchen when you toss the handful of garlic into the butter and wine, or probably just because I have unnaturally strong feelings of attraction towards melty hunks of goat cheese.

1 Zucchini rolls with herbed goat cheese and red pepper: Using amandoline, slice 2 zucchini lengthwise into 12 to 16 long strips about1/8-inch-thick. Arrange slices on a double thickness of paper towels andsprinkle both sides with salt . Let sit 15 minutes,then pat slices dry with a towel. Blend 4 ounces of goat cheese with 1tablespoon snipped chives, 1 teaspoon chopped fresh thyme, ½ teaspoon blackpepper and a pinch of cayenne pepper. Spread each slice of zucchini with thegoat cheese mixture. Place a strip of jarred roasted red pepper and a few2-inch sections of chives over the cheese at the end closest to you,positioning them so that they hang over on one side of the zucchini. Roll uptightly, beginning at the chive and pepper end. Stand the rolls upright on aplatter. Refrigerate before serving. Makes 6 to 8 servings.

2 BLT sandwich with goat cheese: Spread toasted sandwich bread with 1 tablespoon of softened goat cheese. Layer on 2 slices of cooked bacon , sliced salted tomatoes and Bibb lettuce. Top with another slice of bread spread with goat cheese.

3 Goat cheese eggs: Top scrambled eggs with goat cheese and chopped herbs, or use cheese as an omelet filling. Top huevos rancheros with goat cheese.
