Why Is It Called Sharp Cheddar

So Whats Sharp Cheddar? Cheddar cheese is one of those unique cheeses that has a descriptor before it, the term sharp. Sharp is the term that indicates how cheddar changes in flavor and texture as it ages. Mild cheddars are aged 2 to 3 months, sharp 6 to 9 months, and extra-sharp 1 1/2 to 2 years old.

What Makes Cheddar Sharp

Extra Sharp Cheddar Cheese Nutrition Facts

According to Cabot, mild cheddar is aged for two to three months. Extra sharp cheddar cheese is aged up to a year, and their specialty cheeses can be aged anywhere from 16 months on to several years.

When a cheddar cheese ages, two things happens. First, the texture of the cheese changes. It goes from smooth and creamy to crumbly with salt-like crystals called calcium lactate. Second, the taste gets stronger . The longer the cheese ages, the more pronounced these effects are.

There’s no regulation in the United States around the use of “sharp” as a descriptive term for cheddar. So, for example, a Wisconsin cheese might be considered “sharp” after a different aging time.

Cabot has four cheese graders on staff who determine when the cheese is ready for packaging and thus what designation it receives.

You might also see certain cheeses at the grocery store such an extra sharp white cheddar. Sharp indicates it’s been aged, but what’s the difference between white cheddar cheese and yellow cheddar?

Some cheddar cheeses are left in their natural cheese state and some are dyed with annatto to turn the cheese yellow. There’s no difference in taste, so white versus yellow is entirely dependent on your preference .

Seriously Sharp Vs Extra Sharp: Cabot Clears Up Which Cheese Is Sharper

When youre faced with cheese-aisle options like Seriously Sharp and Extra Sharp, how are you supposed to know which is the sharpest?

Cabot Cheese has a stronghold in the Northeast, where its 1,100 farms are located, so anyone who lives in that part of the country is familiar with the name. The brand makes at least 10 different types of cheddar cheese, not even including their flavored cheddars. With options like New York Extra Sharp, Vermont Sharp, and Seriously Sharp some in both orange and white versions it can be difficult to discern which level of sharpness youre getting.

We talked to the Nate Formalarie, communications manager at Cabot Creamery Co-operative, and he broke down just how sharp each of the brands cheeses are.

To verify his comments, we also conducted our own taste test to see how sharp the Seriously Sharp actually is, and if its that much sharper than the plain sharp.

In order of least sharp to sharpest, heres how Cabot ranks their cheeses:

Its A Big World Of Cheese Out There But This Is The Group Of Essential Cheeses You Should Really Know

Were not cheese snobs. Weve confessed to loving a couple classic mozzarellas, a burrata, and a melty American cheese amongst other such pedestrian choices. That said, theres a time and a place for everything, and even though we might prefer a nice milky creamy ball of mozz on a day to day basis, where would our lives be if we couldnt indulge in the occasional stinky cheese from a well-curated cheese plate?

Whats that you say? Cheese shops and carts intimidate you?

Totally understandable. It can be truly overwhelming to peer into a glass case lined with hundreds of cheese in various shapes, sizes, colors, and mold labels, particularly if you grew up in a strictly Blue Box Easy Mac and Kraft Singles family like a few of us did.

Where do you even begin when it comes to fancy cheeses? Which are mild, and which are stinky? Which will melt well on my burger and which is better appreciated off a cheeseboard with a drizzle of good honey? And when the heck did generic blue cheese expand into 38 different varieties*?

*Or, depending on where youre from, when the heck did all those amazing varieties of blue cheese get reduced to that one generic type at the supermarket?

These are some of the questions cheese virgins might experience their first time in the shop, but never fear! Everyone has to start somewhere, and youve come to the right place.

Special thanks to the folks at Murrays in New York for letting us shoot their beautiful cheese .

The Difference Between Sharp And Mild Cheddar

When it comes to cheddar cheese, the difference in taste comes down to aging. Mild cheddar cheese is generally aged 2 to 3 months, while sharp cheese ages up to a year. You will likely find several levels of cheddar cheese, and they all taste slightly to very different.

  • Mild Cheddar: This cheese is aged for the shortest time and has a subtle, creamy taste. The texture is generally smooth and does not crumble easily. If you need cheese for melting, mild cheddar is an excellent choice.
  • Medium Cheddar: This variety is aged a bit longer than mild cheddar. Therefore, it has more flavor. This medium cheese is also an excellent choice for melting and slicing.
  • Sharp Cheddar: This cheese has a distinct flavor and is stronger tasting than mild or medium cheddar. It ages longer than medium cheese, sometimes up to a year. It can melt well, but you will need to add extra heat to do so.
  • Extra-Sharp Cheddar: Aged the longest, this cheese has a bold, prominent taste. It is the sharpest cheddar and does not melt well. It crumbles easily. If you are looking for a cheese to eat without melting or slicing, extra-sharp cheddar is a good choice.

What Is The Longest Aged Cheddar

  • What Is The Longest Aged Cheddar?

Longest Aged Cheddar

One of the most popular cheeses in the United States is cheddar and when you look around, you will notice several different varieties available, most of them involving varying degrees of sharpness. A sharper cheese tends to be older so if you are looking for older cheddars, you want to find extra sharp or the sharpest option available to you. Although most cheddar is only aged a few years at the most, it is sometimes aged much longer, whether on purpose or by accident, and this changes the flavor slightly.

Aging Effects

Before knowing how old the longest aged cheddar was, it is important to know what happens to cheddar as it ages. We already mentioned that it gets sharper but not everyone has a good understanding of what exactly this means. As the cheese ages, bacteria are able to produce more enzymes that will in turn break down the fats and proteins in the cheese. This in turn tends to give the cheese a taste that is nuttier and even a bit beefy. The important thing to remember, however, is that aging cheddar is not an exact science and therefore not all older cheddars will taste the same it depends on how well they were prepared and a little bit of luck, but the experts are able to produce consistent results.

Curdle The Milk And Cook The Curds

Curdling is what brings the cheesy texture we know and love to life. An enzyme called rennet is added to the milk mixture to curdle the protein naturally found in milk, separating solids from liquids. When the solid curds form, the watery whey left behind can be drained so only the curds remain.

The curds are then heated to an even higher temperature so they release excess whey and melt together, creating the first signs of cheese.

    What Makes Cheddar Cheese White

As mentioned, any cheddar cheese that does not have coloring added, whether due to annatto, paprika, or artificial food coloring, is white to pale yellow. The cheese may be white or yellow. It depends on the brand and region. For example, cheddar in Vermont or New England is typically white, while the cheddar in Wisconsin is usually a deeper yellow.

White cheddar cheese depends on the season and what the cows are eating. Cows milk can range from white to yellow, depending on what they eat and what farmers feed them. The grass cows graze on contains beta-carotene, imparting a yellow look to milk. When you make cheese, the milk affects the color. However, farms now give cows a more uniform diet, and uncolored cheddar is white. Modern white cheddar cheese does not taste different from yellow cheddar.
