Why Cheddar is Orange When Milk is White

Many people believe that Velveeta is not real cheese. Many people would disagree with this statement and say that it is real cheese. It is not a 100% cheese, but it does contain real cheese.

The main ingredient in Velveeta is cheddar cheese, which makes it a type of cheddar. It also contains whey, milk and salt.

Velveeta has been around for over 100 years, so it must have some advantages to be around for that long!

Is Cheddar Cheese Orange Naturally

This question has been asked by many people, but the answer is not so simple. The color of cheddar cheese is a result of the natural process that occurs during the production of this cheese.

In order to make cheddar cheese, milk needs to be curdled and then heated. This heating process breaks down the protein molecules in milk and creates a new compound called carotene . Carotene turns into an orange color when it reacts with air.

The pigment carotene can also be found in carrots, pumpkin, and sweet potatoes these vegetables turn orange when they are cooked or exposed to light for a long time.

So I Called Kraft To Find Out

Their customer service rep was quite helpful trying to locate the answer to a seemingly simple question:

What do you use to colour your Cheddar Cheese products?

They kindly put me on hold and came back with this information:

The following FDA Certified artificial food colors MUST be declared in the ingredient line on the package:

The colorings listed above CAN NOT be declared in the ingredient line as artificial coloring. Yellow #5 and Yellow #6 are derived from non-animal sources

If we use something to color a food product, other than an FDA Certified artificial color, , that too must be declared in the ingredient line indicating its presence in the product and that it is being used for coloring.

In summary, they only use colours that are deemed safe by the US FDA. When artificial/synthetic food colourings are used, they must be listed. Customer Service also noted they are not privy to exactly what is used in Kraft products .

So we still dont quite know what they use to make their cheddar or marble cheese orange, but we should know whether the above artificial dyes are used based on the ingredients listed.

Did you know Cheddar cheese is orange because of food colouring? I just found out. It’s not like it’s toxic or anything, but still it was a shock. Somehow I’d always assumed the orangeyness was just a byproduct of some traditional cheese making process. I checked my package of cheese and sure enough, it listed “colour.” So why is Cheddar coloured orange? I felt like a rat in a maze trying to find out.

Orange You Glad I Asked

First of all, I found out that in fact, not all Cheddar is orange, including most of the stuff in England, although other cheeses, like Cheshire, are. In the States, Cheddar from Wisconsin is mostly orange, whereas Cheddar from New England is usually white, as are Cheddars from Ontario and Quebec. I went to a hard core cheese store which sold only white Cheddar. Sometimes people think they can taste differences, but these are more likely the result of differences in aging or in pasteurized versus raw milk. The cheese guy I spoke to said he just preferred unadulterated cheeses on principle.

Colour My World

Since at least the 1800s, in those Cheddars that are orange, the colour comes from annatto or roucou, the red seeds of the achiote tree native to central and south America. The Aztecs used it as body paint. The seeds contain bixen and norbixen, which are caretenoids and antioxidants. But that doesn’t seem to explain why they were added to cheese in the first place.

Shopping for cheese can be a pretty intimidating experience once you venture beyond the familiar grocery store brands. And thats not just when it comes to the obscure French cheeses. Even good old cheddar comes in all sorts of colors and price points.

It is believed that people find orange cheddar more appetizing than white cheddar, so in goes the color.

To make orange cheddar, Josh Windsor, assistant caves manager at Murrays Cheese, said many cheesemakers color the cheese, usually with annatto, a food coloring derived from the seeds of the tropical achiote tree native to the Americas.

The most common theory for why some cheddar is dyed at all, he said, is that the added color gives cows milk cheese, like cheddar, a consistent look throughout the year.

Pastures where cows graze are full of green grasses that are rich in beta carotene, the red-orange pigment found in many plants. Cows bodies do little with the beta carotene, so it eventually ends up in the milk, Windsor explains.

The milk itself will still appear white due to the way the butterfat in milk scatters light, he said. However, if you make butter or cheese from that milk, the resulting product will appear more yellow or orange when the cow had been feeding on more green, leafy pasture.

Why Some Cheddar Cheese Is Bright Orange

One of the most popular cheeses in the world, cheddar cheese originally hails from Somerset, England, according to Cheese.com. Today, any cheese producer can make the pasteurized cow’s milk product and sell it under the name cheddar, as it is not a protected cheese in the same way Italian Parmigiana Reggiano is.

A hard cheese with a soft to crumbly texture and a taste that becomes sharper with the passage of time, cheddar can vary quite a bit depending on the brand, age, and location you’re purchasing it from. The natural hue of cheddar cheese is a pale yellow, but wander down the dairy aisle of almost any supermarket and you’ll likely notice a wide gradient of colors all being sold as cheddar cheese: from pale milk to bright orange. You may assume the answer to this colorful question is artificial dye or bleach, but the truth is more complicated.

This leads me to believe at some point cheddar cheeses began to be dyed a bright orange as more of a mark of differentiation than of matching the hue of light golden English cheddar. Although it is true that the darker the tone of the cheese the better the diet of the cow, cheese will never naturally be as dark as the bright orange cheddar we see on store shelves, and the reason for this goes way back.

Over 200 years ago, when cheddar first became popular, cheesemakers took advantage of the reputation of darker, yellower cheese by dyeing cheese to make it a bold orange, claiming that the considerably darker color of the cheddar meant it was tastier.
