Took the self-guided tour and learned about the cheese-making process, which we found interesting. Ate lunch after the tour. Our group tried the grilled cheese, cheeseburgers, cheese curds, and mac and cheese all were delicious! Of course, we had to try the ice cream too . We werent disappointed. It was outstanding!FYI There was a person at the entrance making sure everyone had on a mask. There are tables both inside and outside to eat on. You can only order ice cream from outside though. We enjoyed this visit, and had to buy some of their ice cream when we returned to our homes in IL.

Meet Tillie: Tillamook’s Former Spokescow

Yellow rubber duckies have always been popular with the little ones, but what about yellow rubber cows? Although nowhere near as amphibious, Tillamook’s squeaky toy cow “Tillie” was a fan favorite from day one, eventually bordering on cult sensation. This friendly cow with the sweeping joyful smile captured mascot status and held that mantle for over 50 years. Bringing joy to children as a toy, and joy to adults as a collector’s item.

Now discontinued as their solo brand ambassador, the original “Tillie of Tillamook” rubber squeak toy remains a lucrative antique at online auctions and . Original Tillies fetch far over their original prices, with mint condition Tillies still housed in their rustic farmland packaging. Periodically, newer editions of Tillie are on sale at the Tillamook factory, making the Tillamook County Creamery headquarters not just an enticing tourist attraction, but one to keep tabs on for Tillie.

Canning Soft Velveeta Or Soft Cheese

Cube a box of Velveeta

Place in a double boiler with 3 oz canned milk and slowly melt. When melted, add 1 tablespoon of vinegar and stir in

Add 1/2 teaspoon of dry mustard and 1/2 tsp salt and stir well until totally smooth and melted

Pour the cheese into jars leaving a 1/2 inch headspace. I use 8 oz jars. I can always open two if I need a pint.

Carefully wipe the rims of the jars to remove any wayward cheese and place lids that have been heated in nearly boiling water on top of jars

Put rings onto the jars and tighten down slightly. Place jars in waterbath canner rack and lower into water that has already been heated so not to crack the hot jars of cheese. Bring the water to a boil and at the point of boiling, set your timer for 10 minutes and continue to boil.

Remove jars from water and allow to cool on a dry towel. You will hear the lids pop as they seal.

And so, Ive learned something new out of necessity. I LOVE having cheese in the can. It is so easy and I dont have to worry about refrigeration. The cheddar gets a little sharper as it ages and tastes wonderful when opened. So cut the cheese and call me Happy!!

I think the Creamery has done an excellent job of laying out a self-guided tour and providing their history as well. Ate in the cafeteria and had the grilled cheese and chowder. And topped it off with some very delicious creamy ice cream!! Dont forget to get your picture taken in the Tillamook Bus.

My family and I love Tillamook cheese and were excited to visit the factory and eat at the cafe there, but were a little underwhelmed. We were there the day after Thanksgiving and there were hardly any workers actually making the cheese in the observation area. Then we ordered mac & cheese and a grilled cheese sandwich in the cafe and the sauce on the mac was bland, and the grilled cheese pretty standard. We were imagining something a little more gourmet , and wished we had saved our calories for the ice cream, which was good, but something you can get at the grocery store. I still love the cheese they make, but probably wouldnt go out of my way to visit the factory again.

The Tour Okay But How They Turn Milk To Cheese

This part of the tour is the nitty gritty. And, if youve visited the Tillamook Cheese Factory before the 2018 renovation, this part will be the most familiar to you.

The Creamery receives milk literally 24/7. About 1.6 million pounds of high-quality milk a DAY. And EVERY SINGLE truckload is tested by an operator to make sure it meets Tillamook standards including the absence of antibiotics.

To top it all off, every drop of milk that enters the Creamery is made into cheese or ice cream within 24 ours. Thats.a lot of dairy yall. But how do they do it? Well, this is where the FACTORY part of the tour comes in.

I wont go into detail about this part, mostly because I forgot. But basically you get a window tour of the factory and manufacturing process. There are little signs that explain each step, going from the milk delivery alllll the way to packaging. And yup, those are actual workers doing all the steps. I personally would be weirded out to have hundreds of people watch me work every day, but they seem used to it haha. A few of them will even wave back if they see you.

What About Visiting The Tillamook Creamery With Food Allergies

If you have a food allergy, youll have to read their allergen statement and decide for yourself if you feel comfortable. In general, we steer clear of the ice cream because Garrett has a peanut allergy, and they do use the same equipment for all their flavors, although they do sanitize between. But, we totally feel comfortable with their cheeses and eat them all the time.

Cracker Barrel Cheese Is Bold And Versatile

Well admit that we were surprised when biting into the first slice off the block of Cracker Barrel Aged Reserved Cheddar. Could this possibly be made by the same Cracker Barrel Old Country Store and restaurants found near interstate exits all across America? It turns out that no, there is no affiliation, and the cheese brand is actually owned by Kraft Foods, which has been producing it since 1954.

Once we cleared that up, it started to make sense that Kraft was saving its higher-end cheeses for its higher-end cheese line. The line of Cracker Barrel cheese bars has about a dozen different flavors, including several cheddars, gouda, asiago, and Swiss. They also produce macaroni and cheese, sliced and shredded cheeses, as well as spreads and snacks, but some of those products were harder for us to find in stores.

The bars are clearly created with the intention of slicing and serving as a cheese course. The Cracker Barrel website even offers cheese pairings for those interested in making their own arrangements. While not the worlds most exclusive cheese, we like that theyre accessible, crowd-friendly, and enjoy the textures and bold flavors of the cheeses. We also appreciate the guidance for pairings for those interested in learning how to incorporate cheese into their dining and entertaining experiences.

Tillamook Will Need To Show That The Plaintiffs Here Have Misconstrued Its Advertising

In its FAQ, Tillamook also makes an express claim: While a large dairy farm may not look the same as a much smaller one, we can assure you that every farm we work with is held to the same strict quality and animal care standards that our farmer-owners adhere to in Tillamook County, noted Acevedo.

This assurance goes beyond the geographic origin question and speaks to the animal treatment issue raised by the plaintiffs. Tillamook must substantiate this assurance, and it does seem to try to do so elsewhere on its website. Tillamook expressly discusses its partnership with Columbia River Dairy, for example, noting that is aturally recognized for its environmental stewardship and sustainable agriculture, as well as its claim in another section of the website that ll farmers who supply milk for Tillamook products pledge not to use artificial growth hormones.

Tillamook will need to show that the plaintiffs here have misconstrued its advertising, especially given Tillamooks seemingly candid statements about its operations throughout its website.

But he added: Objective support for its claims will be key for Tillamook, but that is only part of it. Bear in mind that it is from the perspective of the consumer reading Tillamooks website and seeing its advertising that the statements will be evaluated. What Tillamook meant by its statements is secondary to what consumers reasonably believed Tillamook was saying.

The Dairy Industry Has Been Doubling Down On Marketing Efforts To Trick Consumers

In a letter signed by The Center for Food Safety, Friends of Family Farmers, Humane Voters Oregon, The Center for Biological Diversity, Food & Water Watch, Farm Forward, and Factory Farming Awareness Coalition, the animal welfare groups said the lawsuit would help shine a spotlight on the conditions of dairy cows in the wake of recent animal abuse allegations at Natural Prairie Dairy and Fair Oaks Farms.

As consumer demand grows for dairy products from animals raised humanely on sustainable family farms, the dairy industry has been doubling down on marketing efforts to trick consumers into believing that their products reflect these consumer values when they do not.

“Tillamooks marketing intentionally depicts cows roaming freely on rolling green hills, while knowing that this is not the reality of how these large, industrial facilities operate. On industrial dairies, cows are intensively confined with little or no access to pasture, artificially and repeatedly impregnated starting at around two years old to produce mass quantities of milk, and then separated from their young calves shortly after birth.

Once they stop producing enough milk to meet the intense and unnatural industrial demand, they are culled and sent to slaughter at a fraction of their natural lifespan.

So picture this. Its a bona fide emergency survival situation. You are holed up on your home and living off of the emergency preparedness supplies you stored. And youve got one heck of a hankering for some yummy melted cheese. But youre just not in the mood for the Velveeta, that nasty powdered stuff, or the squirt kind of cheese. You want a good solid bite of a yummy Parmesan, or Swiss, or a sharp cheddar. But hey, cheese doesnt store for a very long time, right? Well, in this case, Im happy to tell you that youre wrong. And if youre a true cheese addict, then youll be happy to hear that youre wrong for once, right?

A couple of tips you should know though.

  • Dont use paraffin wax. It tends to crack. Cheese wax warms slower and heats to a higher temperature and thus plies better to your cheese shapes and sizes. Cheese wax is also less crumbly and you can use less of it than paraffin. Remember, its reusable too!
  • I have yet to find a hard cheese that I cant wax. So long as its hard enough to be in a solid block, you can wax it.
  • The cheese surface should be clean and dry prior to waxing.

    Tillamook Creamery Accused Of Falsely Advertising Dairy Products

    SALEM, Ore. A class-action lawsuit claims that an Oregon creamery association falsely advertises the source of its milk, a report said.

    The lawsuit was filed by the Animal Legal Defense Fund against the Tillamook County Creamery Association in western Oregon, The Statesman Journal reported Monday.

    The lawsuit by the California-based organization said most of the association’s milk comes from Threemile Canyon Farms in Boardman rather than from cows grazing on coastal family farms.

    The lawsuit filed Monday in Multnomah County Circuit Court lists four Oregon consumers from various parts of the state as plaintiffs and seeks an injunction against misleading advertising, and monetary relief.

    The association’s dairy products are “made from milk from the largest industrial dairy in the country that confines tens of thousands of cows on concrete in the desert of eastern Oregon,” the complaint said.

    “The Tillamook County Creamery Association adamantly disagrees with the allegations made in the lawsuit and we will aggressively defend ourselves,” said Tori Harms, corporate communications director.

    The association is owned by about 80 families, Harms said.

    Much of the association’s milk has come from at least five dairies near Boardman, 163 miles east of Portland.

    The plaintiffs purchased Tillamook products believing they were sourced from pasture-based farms in Tillamook County and were willing to pay more based on the company’s advertising, the lawsuit said.

    How perfect.

    After all, the place seems synonymous with every ounce of deliciousness the generous bovines there deliver the key ingredient in slabs of sweet-cream butter, ice cream scoops stacked high and, of course, hunks of salty cheddar. For Oregonians and consumers grazing dairy cases nationwide, the town, county and brand that shares the name are inextricably linked.

    Tillamook is cheese. And this week, the big cheese plans to party. With events in Portland and at the coast, Tillamook County Creamery Association, which makes Tillamook Cheese and is described by some in the industry as North Americas most successful farmer-owned dairy cooperative, will celebrate 100 years in business. It plans to moo over its history, extol its innovations, tout its growth and revel in a welcome twist of tastebud economics:

    When times turn tough, Americans buy more cheese.

    BILL ROCKS GRANDMOTHER milked one or two cows, made butter and sold it in Neskowin in the early 1900s. Five generations later, the 83-year-old dairymans grandsons help out on the 1,000 or so acres in Cloverdale, south of Tillamook, where his daughter and son-in-law, Amy and Rob Seymour, coax milk from 280 Jersey-Holstein crossbreeds.

    Yet, you wouldnt find Seymour, 51, earning her living any other way.

    Its all I ever wanted to do, she says. I always loved cows.
