Your 3-ingredient chili cheese dip includes:

  • your go to Chili recipe
  • A block of full-fat cream cheese, softened
  • Shredded Cheese Sharp Cheddar Cheese, Pepper Jack Cheese

In a large skillet on the stove top, combine cream cheese and chili over medium-low heat.

Spray a baking dish with cooking spray, spoon the chili mixture over the bottom.

Top with shredded cheese.

Bake for 10-15 minutes until you have melted cheddar cheese.

Remove your easy chili dip from the oven and top with green onion, green chilies, hot sauce, black olives, and sour cream.

How To Make Chili Cheese Dip

Combine the cream cheese and chili in a medium bowl. Dont worry if the cream cheese is not thoroughly mixed with the chili its okay to have some chunks of the cheese.

Stir in half of the shredded cheese and then spread the mixture in a 9 pie pan. Sprinkle the rest of the cheese over the top.

Bake the chili cheese dip for 10 to 15 minutes at 375°F or until the cheese is melted and the dip is hot.

    You can use any 15-ounce can of beans: black beans, pinto beans, or my personal favorite, Bushs Best Chili Beans. In the case of Bushs Chili Beans, you can add in the entire can, but with any other type of canned bean, take care to drain and rinse them before they join in with the rest of the Chili Cheese Dip ingredients.

    If you plan to add beans, add them to the mix when you add the Rotel and beef broth.

    How Do You Make This Chili Cheese Dip In The Instant Pot

    This recipe can be made either in the Instant Pot or the slow cooker, whichever you have! I dont generally use the slow cooker function on my Instant Pot, but this is one way to put it to use.

    To make this chili cheese dip in the Instant Pot, start by adding the cans of chili, the rotel, and the cream cheese to the liner. Set it to Slow Cook on HIGH and let it go for 90 minutes with the lid on . However, you can also use the Instant Pot 6 qt Glass Lid since we are not pressure cooking with this recipe.

    After 90 minutes, stir the cream cheese brick completely into the chili and rotel, and then add the shredded cheese. Stir it around and put the lid back on for 15 more minutes until the cheese is completely melted. Give it another mix, and then its ready to serve!

    You can either serve the dip directly in the slow cooker or Instant Pot , OR you can put it in a serving bowl as pictured below!

    How To Make It With Leftover Chili

    If you have leftover homemade chili, you can absolutely use it as the base for this Chili Cheese Dip!

    • Just add two cups of leftover chili, Rotel, and only three-quarter cup of beef broth to a large skillet. Because there is no way for me to gauge the consistency of your homemade chili, its best not to add all the beef broth at once. Bring the mixture to a simmer.
    • With a homemade chili, you omit both the chili powder and the cornstarch from the recipe, and again, its best if you use low-sodium taco seasoning.
    • Once your homemade chili and broth mixture has reached a simmer on the stovetop, add in the cubed Velveeta and the Cheddar, stirring occasionally until melted.

    If the mixture is too thick, you can add in the remaining quarter-cup of beef broth!

    Making Chili Cheese Dip In Advance For Company

    If you want to make this dip in advance to serve to company, reheat it in the crockpot! This way it will stay warm throughout your event and guests can help themselves.

    To do this, turn your crockpot on the low setting and stir occasionally until it is heated through. This should take about twenty-five to thirty minutes if youre reheating the entire batch.

    Once the dip has reached the desired temperature, turn the crockpot down to the warm setting.

  • Brown the Beef Add the ground beef to a large skillet . Add the taco seasoning and an extra teaspoon of chili powder and work into the beef with a wooden spatula. Cook on the stovetop until fully cooked through.
  • Simmer Add a drained can of Rotel and low-sodium beef broth to the beef and allow it to come to a simmer.
  • Thicken In a small bowl, stir together cornstarch and water and stir into the beef. Reduce the heat to maintain a simmer and simmer for about five to seven minutes, just until slightly thickened.
  • Add the Cheese Reduce the heat to low and add cubed Velveeta and shredded Cheddar cheese to the mix. Stir until melted. Serve with tortilla chips or Fritos and enjoy!

    Why Use Shredded Cheese Instead Of Pre

    Pre-shredded cheese comes from the store with a coating made up of corn starch and a few other powdery things that keep the shredded cheese from clumping together. Unfortunately, if you want that melty gooey goodness, pre-shredded cheese wont work due to that coating.

    Solution? Grate your own cheese! No coating, no weird clumping when it melts, and cheese is the only ingredient.
