How To Keep This Dip Warm & Stop It From Solidifying
A problem with any hot dip made from cheese is that it can tend to solidify if left at room temperature for too long.
Luckily, this recipes combination of cream cheese and chili layers with that Tex Mex cheese means that, while it will still thicken as it sits out, it will only be the top.
However, you REALLY should keep your dip warm if it’s not eaten right away for guests, and avoid any kind of solidification, consider buying a food warming dish or plate!
The dishes are basically a long-lasting candle that is hidden underneath your container, and the warming plate/tray are plug-in electric plates that you can find at any thrift store.

What Kind Of Cheese Blend Is Best Here
This recipe calls for using some Tex Mex cheese in your chili cheese dip, but what does that actually mean?
Tex Mex cheese is a bit of a confusing term, as there is no real specific rule for what qualifies a cheese as being Tex Mex. Typically speaking, it is any blend of cheese meant to evoke that kind of Tex Mex feels to it. This usually ends up with a 50 / 50 blend of Cheddar and Monterey Jack.
Some companies, however, will go even further, using an interesting blend of different flavor profiles through spices. Common additions include things like cumin, chipotle powder, and cayenne pepper.
When looking for your own blend of cheese for this recipe, try and just pick something that you like and that you would feel happy eating on its own.
One other thing to note is that a lot of pre shredded cheese blends you buy from the supermarket contain things like cornstarch, which helps stop the cheese from sticking together. Make sure that you like how they melt before using these, otherwise, you can shred your own blend of cheese.

Too Add Beans Or Not To Add Beans
If youre looking to serve up an extra hearty, decked-out Chili Cheese Dip, the addition of beans wont hurt one bit.
You can use any 15-ounce can of beans: black beans, pinto beans, or my personal favorite, Bushs Best Chili Beans. In the case of Bushs Chili Beans, you can add in the entire can, but with any other type of canned bean, take care to drain and rinse them before they join in with the rest of the Chili Cheese Dip ingredients.
If you plan to add beans, add them to the mix when you add the Rotel and beef broth.

How Do You Make This Chili Cheese Dip In The Instant Pot
This recipe can be made either in the Instant Pot or the slow cooker, whichever you have! I dont generally use the slow cooker function on my Instant Pot, but this is one way to put it to use.
To make this chili cheese dip in the Instant Pot, start by adding the cans of chili, the rotel, and the cream cheese to the liner. Set it to Slow Cook on HIGH and let it go for 90 minutes with the lid on . However, you can also use the Instant Pot 6 qt Glass Lid since we are not pressure cooking with this recipe.
After 90 minutes, stir the cream cheese brick completely into the chili and rotel, and then add the shredded cheese. Stir it around and put the lid back on for 15 more minutes until the cheese is completely melted. Give it another mix, and then its ready to serve!
You can either serve the dip directly in the slow cooker or Instant Pot , OR you can put it in a serving bowl as pictured below!
How To Make It With Leftover Chili
If you have leftover homemade chili, you can absolutely use it as the base for this Chili Cheese Dip!
- Just add two cups of leftover chili, Rotel, and only three-quarter cup of beef broth to a large skillet. Because there is no way for me to gauge the consistency of your homemade chili, its best not to add all the beef broth at once. Bring the mixture to a simmer.
- With a homemade chili, you omit both the chili powder and the cornstarch from the recipe, and again, its best if you use low-sodium taco seasoning.
- Once your homemade chili and broth mixture has reached a simmer on the stovetop, add in the cubed Velveeta and the Cheddar, stirring occasionally until melted.
If the mixture is too thick, you can add in the remaining quarter-cup of beef broth!

Making Chili Cheese Dip In Advance For Company
If you want to make this dip in advance to serve to company, reheat it in the crockpot! This way it will stay warm throughout your event and guests can help themselves.
To do this, turn your crockpot on the low setting and stir occasionally until it is heated through. This should take about twenty-five to thirty minutes if youre reheating the entire batch.
Once the dip has reached the desired temperature, turn the crockpot down to the warm setting.
How To Make Chili Cheese Dip From Scratch
Why Use Shredded Cheese Instead Of Pre
Pre-shredded cheese comes from the store with a coating made up of corn starch and a few other powdery things that keep the shredded cheese from clumping together. Unfortunately, if you want that melty gooey goodness, pre-shredded cheese wont work due to that coating.
Solution? Grate your own cheese! No coating, no weird clumping when it melts, and cheese is the only ingredient.
What Is Chili Dip
Chili dip is a cheesy dip made with cheese, canned chili, and Rotel tomatoes. If you want to take the time you could use a homemade chili. We use Velveeta cheese in our chili dip. A delicious dip that only requires 3 ingredients is a real winner in our book. Am I alone in thinking that there is something so comforting about eating chips and dip and binging a new tv show? Sure it is probably a bit better to share it with friends butI am just a real sucker for snack foods.
