When Kraft removed the synthetic dyes from its boxed mac and cheese, it had to add something in its place to make sure the product still looked and tasted the same for consumers. Today, Kraft Macaroni & Cheese is made with a blend of spices that help achieve that goal. They include bright red paprika, which is infused into the noodles as well as used in the cheese sauce. Rich, yellow turmeric, which contains a host of health benefits in addition to the perfect mac and cheese hue, is also included. Finally, some annatto is added. I always want to like the organic, “better quality” option in these taste testsnot to validate my own palate, but because I want so badly for food manufacturer marketing to live up to its advertised promises. I want to not feel bamboozled by health halos and instead, be delighted by a real one. Unfortunately, they did not meet them, no thanks to a new recipe released just earlier this year. And apparently, I wasn’t the only one let downit earned less than 1.5 stars on their own website by users begging for the old recipe back.
Cold, this is a harder, stiffer cheese than its competitors. It bites like a thin-sliced cheddar, but without the sharp, distinctive flavoror much flavor at all, really. It had barely any salt, but then left a vaguely milky aftertaste that wasn’t there while you were powering through the dry bite. This was also the poorest melter of the batch. When left to do so on its own, it ended with a chalky granularity akin to shredded cheeses cut with too much dehydrating cellulose. It was stubbornly slow to melt until nuked too, which revealed some creaminess and mildly warm flavor. But like a carrot on a stick, this pleasure was quickly taken away as it cooled quickly, drying out fast into a waxy coat far from ideal.
What Kraft Singles Are Really Made Of
The list of ingredients isn’t exactly clear, but what’s obvious is that Kraft Singles aren’t the most traditional cheese you can find. According to Business Insider, Kraft American cheese is usually a mixture of other cheeses that have been melted together. In an interview with Business Insider, Michael Tunick, a research chemist for the U.S. Department of Agriculture, explains that J.L. Kraft created Kraft American cheese because he was trying to get rid of some older cheeses.
Kraft’s solution, according to Extra Crispy, was to melt down all of the unusable pieces of cheese he had, then blend them together with a few other ingredients. The result was single slices of American cheese. Though Kraft was the first to process cheese this way, other manufacturers started to follow suit, which is why you’ll see products on shelves like Velveeta and Kraft Singles that taste like cheese but have labels like “pasteurized processed cheese food.”
Though it doesn’t sound very appetizing, it’s completely legal to make cheese this way, as long as its label calls out that it’s processed cheese, not real cheese. Hopefully knowing where it really comes from doesn’t ruin Kraft Singles for you, but despite its less-than-appetizing origins, it’s still one of the easiest cheese to toss on your sandwich when you’re craving an epic cheese pull.

This was unexpected since cheese is supposed to stay solid longer than cheese food by theory of composition alone. Because it melted so quickly, though, microwaving it creates a skin, similar to the Borden.
