Without a doubt, the lactose content of cheese varies more based on the maturation period than the milk that it is made from.
Firstly, a young and fresh Ricotta, whether it is made with cows milk or goats milk, contains about 2g/100g of lactose.
Moreover, a Camembert style cheese typically contains 0.1g/100g of lactose.
Thats already much lower than milk right? In fact, a similar soft ripened white mould cheese made with goats milk still contains around 0.1g/100g of lactose.
