  • Whisk: Now add in the flour to the butter, then slowly whisk in the milk. Next, add in the cheese. Continue to mix until the cheese is melted.
  • Serve!
  • The Recipe Critic Pro Tip:

Your cheese will start to get clumpy or stringy if it gets too hot. To avoid this, add the cheese end at the very end, then promptly remove it from the heat.

    What Type Of Fries

This is a personal choice, but I think the best Cheese Fries are made with steak fries that you season yourself with seasoned salt.

I dont recommend the already seasoned steak fries they sell in stores because the flavor can be over whelming when combined with all the toppings.

Fast food style thinner fries are a good back up option, however they usually dont hold up to the toppings as well as steak fries.

Also, in a pinch, a crinkle fry is a good runner up to the steak fry. They are thicker and will do a little better than the thin fries.

Prepare the fries however you would likein a traditional fryer, air fryer or in the oven. You just need hot fries!

If you are preparing the fries in something other than the oven, make sure you still preheat the oven so you can pop the fries in and melt the cheese right at the end.

These Texas Cheese Fries are next level in all the right ways. They are always the first to go at a party.

    Texas Cheese Fries Toppings:

There are so many types of Cheese Fries recipes floating out in the world and I love just about all of them.

This is the most classic version, most commonly called Texas Cheese Fries, with melted cheese, bacon, jalapeños and green onions.

I was born and raised in Texas, and for the life of me, I can not tell you what *makes* these cheese fries Texan. Maybe the jalapeños?!

But I can tell you, they are absolutely delicious and full of flavor. Both pickled jalapeños or fresh jalapeños work great use whichever ones you personally prefer.

Optional fun topping twists on these classic cheese fries:

    • Blue Cheese: in place of the other cheese or in addition to them.
    • Chili: a meat style Texas chili is great on top to create chili cheese fries!
    • Caramelized Onions: always so good.
    • Nacho Cheese: if you want to go Fair Style, this is the cheese you need.
    • Shredded Chicken: adding chicken to these, takes an appetizer or side dish and transforms it into a delicious dinner!

Why Is My Cheese Sauce Bland

Thats on the cheese. I like to use EXTRA sharp cheddar when making cheese sauce because I love the flavor. Your cheese sauce will ultimately end up tasting like the cheese that you use, because that is exactly what it is. If you use milk cheddar cheese, you arent going to get a rich, cheesy flavor. The dry mustard in this recipe helps to enhance that flavor but dont overdo it on the mustard. Still want more flavor? Try adding some hot sauce, jalapeños, or worcestershire sauce.

How To Make Homemade Cheddar Cheese Sauce For Fries

    Cheese Fries with Bacon

The nacho-style cheddar cheese sauce is one of the most popular types of cheese on the planet.

Whats great about making it yourself is that youll take control of what goes into it, such as the flavour intensity as well as the seasoning.

The ingredients below are simple. However, they also double as emulsifiers to keep the cheese in a creamy and smooth sauce form without breaking into layers of oil and solid curds. Heres how to make it:

    • 1canevaporated milk, unsweetened
    • 1-2tspof any hot sauce of your preferences

    Getting The Perfect Consistency

A common question I hear is “How do you thicken a cheese sauce without flour?”.

Cheese is naturally thick so it doesn’t necessarily need a thickener. The hard part is getting it SMOOTH and CREAMY! All I do for this white cheese sauce recipe is melt my cheese in MILK. Although there is not much room for error, there are a few things that you have to keep in mind.

The TYPE of cheese you use makes a difference. For example, sharp cheese does not melt as well as a mild cheddar. Neither does parmesan.

    I use American cheese for 2 reasons…

  • It is white.
  • It also melts well!
  • So just adding milk to it will give you a deliciously creamy sauce that will NOT harden up on you when cooled! YAY to flourless cheese sauces!

Start With A Mild Or Sharp Cheddar

How to melt cheese onto chips with perfection!

Youll find the classic, Cabot cheddar cheese in four basic flavors: Mild, Sharp, Extra Sharp and Seriously Sharp The sharpness level indicates how long the cheese has been aged, with aging increasing as you go from Mild to Seriously Sharp.

The texture of the cheese also changes as the cheese ages. Mild and Sharp Cheddar have a smoother, creamier texture than Extra Sharp and Seriously Sharp Cheddar. They also have a higher moisture content than Extra Sharp and Seriously Sharp Cheddar and are, therefore, easier to melt.

    Tips For Perfect Cheese Fries

    • You can use any cut of fry that you like curly fries, crinkle fries, steak fries or potato wedges all work just fine. I typically use thin cut traditional fries as they bake up ultra crispy.
    • I recommend grating your own cheese for this recipe bags of pre-shredded cheese are often coated in anti-caking agents and they dont melt as well.
    • Serve your fries with a side of ranch for dipping, or you can even drizzle some sauce over the top.
    • Cheese fries are best when served immediately after they come out of the oven.
    • I like to transfer my baked fries to a skillet before I add the cheese and bacon for more of a restaurant-style presentation, but thats an optional step.
    • While this dish is often made with shredded melted cheese, you can also use a homemade or store bought cheese sauce if you prefer. You can even make a Mexican version with queso!

Melting The Cheese Over The Stove

  • 1Use a non-stick skillet. Cheese can very easily stick to the side of a pan or dish during the melting process. Select a dish with a non-stick coating to melt your cheese to avoid this problem.XResearch source
  • 2Place the cheese over low heat. Place your cheese over the stove at low heat. Never start heating cheese on high or medium heat, as this will cause cheese to heat unevenly.XResearch source
  • 3Add a dash of corn starch and evaporated milk. A little starch and milk keeps cheese from separating too quickly, resulting in a lumpy, uneven mixture. The amount of each will vary, depending on how much cheese you’re melting, but you only need a small dash of each to keep the cheese smooth.XResearch source
  • 4Try adding American cheese. You can also add a few small slices of American cheese, as this type of cheese has properties that helps cheese melt smoothly. If you don’t mind the taste of American cheese, throw a slice or two into your cheese mixture.XResearch source
  • 5Add an acidic ingredient like vinegar or beer. If your cheese gets lumpy as it melts, a small amount of an acidic ingredient can help. Alcohol, like white wine or beer, works great and adds flavor. If you’d prefer not to use alcohol, however, you can try something like vinegar or lemon juice instead.XResearch source
  • 6Whisk the cheese continuously. Use a wire whisk or fork to continually whisk the cheese as it melts. This will mix in any added ingredients and also keep the cheese mixture smooth.XResearch source

    Melting Cheddar On The Stovetop

  • 1Shred the cheese. Use a box grater to finely shred the cheddar. Shred the cheese right out of the refrigerator, since it shreds better when its cold. If its giving you trouble, place the cheddar in the freezer for 10-30 minutes to harden it. Then attempt to shred it again.
  • Feel free to use already-shredded cheddar for this. However, the cheddar usually has a better flavor if you grate it yourself from the block.XResearch source
  • 2Place room-temperature shredded cheese in a non-stick pot. After shredding it, allow the cheddar to reach room temperature before you apply heat. The outcome will be smoother and the cheese will require less heat to melt at room temperature. Pile the shredded cheese into a non-stick pot with ample room that can easily accommodate it.
  • 3Use low heat. Put the pot of cheese over the lowest heat setting your stove will allow. Always melt cheese at the lowest heat possible.XResearch source If you apply high heat to cheese, you risk losing the moisture and fat in the cheese, which results in lumpy or greasy cheese.XResearch source
  • 4Watch the cheese closely and stir it frequently. Dont leave cheese unattended on your stove, since it can melt and begin to burn very quickly. Stir the cheddar frequently to keep it moving around the pot. This will ensure the cheese is melted through evenly and prevent it from sticking to the pot and/or burning.
  • Melted Butter Is A Must

    How to Make Nathan

The key to an evenly-greased and toasted bread is to brush the top and bottom of the sandwich with melted butter. You can microwave the butter and easily brush the liquid on each slice. This allows you to control how much of the fat is applied so it doesnt get too soggy.

Do this step right before adding to the preheated pan. If you have salted butter, that would enhance the flavor further. The milk solids in the butter transform into nutty, deep golden brown hues when gently heated and this elevates the taste and texture.

    Hints Tips & Variations

The only thing that can possibly go wrong with this recipe is to add the cornflour directly to a pan of liquid. Dont do it. Always add a little liquid to the cornflour in a separate bowl, stir, then add to whatever you want to thicken.

    • The turmeric, mustard and garlic are optional, but they add a glorious colour and extra flavour.
    • Substitute some of the cheddar with mozzarella for a really stringy cheesy chips!
    • You could add curry powder for a hint of heat, resulting in a delicious cheesy curry sauce for chips.

    1. Toss shredded cheese and cornstarch together so your cheese gets coated and you dont end up with any big cornstarch lumps in your sauce. The cornstarch will help thicken your nacho sauce and prevent it from curdling.

    2. Heat evaporated milk over medium heat until milk just begins to simmer.

    3. Remove the milk from heat and stir in the cheese, a handful at a time, until all the cheese has been incorporated and it has completely melted into the sauce.

    4. Add hot sauce, salt, and cayenne, and then taste and add more if needed.

    5. And the final, most important step: drizzle your homemade nacho cheese over something delicious, and try not to eat the entire pot.

Welcome to the Cheese Sauce that you didnt even know you needed in your life. Soon you will be making this sauce bi-weekly and cursing my name that you are no longer able to consume chips, fries, or broccoli without it. ITS LEGIT GUYS.

Its not Queso. Its not nacho cheese. Its just CHEESE, sharp cheddar cheese, but in dip form. Perfect for your fries, your chips, or your spoon.

Its the original recipe from Shake Shack. Remember last year when quarantine first started, and all these restaurants started publishing secret recipes for everyone? Shake Shack shared their cheese sauce recipe.

First of all, if you have never been to Shake Shack, get in the car and start driving. It is my FAVORITE place to eat fast food. Better than In N Out. Better than Five Guys. Shake Shack has the best burgers, the best shakes, the best fries

Anyway, of course I had to try out their recipe. I made it and then ordered 3 large cheese fries from Shake Shack to be delivered, so that I could compare.

No surprise, the homemade one was better. It was more flavorful. I followed the exact recipe as shared , but they must have to add some preservatives or something in order to mass produce? I dont know. What I do know is that this stuff is liquid gold and Im now adding cheese sauce to everything.
