Pick Your Favorite Gluten Free Mac And Cheese Recipe

I tried gluten-free Kraft Dinner (a.k.a. Kraft Macaroni & Cheese) | Robyn’s Gluten-free Living

Lets dig into my gluten free pasta and cheese recipe options.

The first variety, pictured above, is the roux-based macaroni and cheese. It calls for a few more ingredients, but it makes a just-right balance of creamy and cheesy.

The second variety, called queso-style, is pulled from our recipe for gluten free cheese sauce. It makes a thick, rich sauce thats the easiest way to make the cheesiest sauce.

The third variety, called almost-instant, calls for cheddar cheese powder. Its a specialty ingredient that you probably dont already have, but it tastes like The Box and its the only type of gf mac and cheese that my non-gooey-cheese eating gluten free son loves.

A Note About Lactose Intolerance

Though many types of cheese are gluten free, people with celiac disease may still have trouble digesting them. Celiac disease and lactose intolerance sometimes occur together because the immune reaction that damages the villi lining the small intestine also damage the lactase enzymes which help the body digest lactose. Common symptoms of lactose intolerance include:

  • Flatulence
  • Nausea
  • Diarrhea

A long-term gluten free diet gives the small intestine time to heal and may eventually resolve symptoms of lactose intolerance, but there are no guarantees.

Is The Dairy Aisle A Gluten

Many dairy items are simply produced and have very few ingredients. For example, eggs and milk are generally gluten-free, as little production happens during manufacturing.

But not everything in the dairy aisle is produced simply, which is why its important to understand the ingredients and read packaging. In general, dairy products that are produced with all-natural ingredients are typically gluten-free.

Is Kraft American Cheese Healthy

H

Kraft American cheese is not healthy. In fact, Kraft American cheese slices are considered one of the worst cheeses for you. The individually wrapped slices are not slices off of a real block of cheese, but formed separately in manufacturing, and they are loaded with unhealthy additives and preservatives that can cause a slew of diseases and ailments.

Aside from all the additives and preservatives, Kraft American cheese slices are loaded with sodium. One single slice has nearly 300 milligrams of sodium! That can do serious damage to your waistline if consumed regularly, along with causing high blood pressure and heart disease.

In addition to the scary amount of sodium in a single slice, Kraft American cheese slices are made with vegetable oils that are loaded with unhealthy fat putting you at risk for clogged arteries and obesity.

7. Nacho Chips

Most nacho chips only have corn-based grains. I have had great luck with Tostitos, although obviously the multigrain flavor is out. Stick with chips that have just a few ingredients. Add some salsa and cheese for a delicious snack!

6. U.S. Lea and Perrins Worcestershire Sauce

The first ingredient in Canadian and British Lea and Perrins Worcestershire sauce is malt vinegar, which contains barley. However, the same sauce in the United States is gluten-free, using spirit vinegar instead of malt vinegar. No, I dont know why. But I do know I got my parents to buy me a few bottles on their last trip to the U.S.

5. Taco Shells

Like nachos, most taco shells are corn-based and gluten free. They are an excellent idea for meal night: chop up some vegetables, put out some sour cream and salsa, fry up some ground beef, grate some cheese, and let everyone create their own taco!

4. Chapmans Ice Cream

This Canadian ice cream company makes all of their original ice cream flavors gluten-free. Many of their other products are gluten-free too, and feature a symbol that is easy to spot. Plus, they offer many other specialty products, including lactose-free and low fat ice cream.

Each mac and cheese recipe Ive outlined is best served immediately. This means preparing it, mixing it, and chowing down.

However, if you do need to prepare it ahead of time, heres what I recommend: First, cook the pasta, let it cool, and then coat it with a light layer of olive oil. You dont have to refrigerate it if youre planning to eat it the same day.

Next, prepare a gluten free mac and cheese sauce from recipes 1 or 2, let it cool, and then store it in an airtight container. When youre ready to serve, reheat the cheese in a saucepan , add the cooked pasta, and combine.

What Is A Cheese Contamination

Cheeses contamination is a term used to describe the presence of gluten in cheese. Cheese contamination occurs when gluten-containing ingredients such as flour, barley malt, oats, and other grains are accidentally introduced into the manufacturing process.

The U.S. Food and Drug Administrations policy states that any product containing gluten must be clearly labeled as gluten-free. There are many types of cheeses that may contain gluten.

Cheese That Is Not Labeled Gluten

If the packaging does not say gluten-free, then you will need to carefully read the ingredients on the label before purchasing. As a rule, cheese with fewer ingredients has a better chance of being gluten-free. A natural cheese, like Swiss or Jack, may contain only three ingredients: milk, salt, and enzymes, which means that it contains no gluten.

Processed cheeses, on the other hand, like American cheese usually include several different kinds of natural cheeses, like Colby, Cheddar or Jack, and stabilizing emulsifiers, as well as butter, milk, milk protein concentrate, and whey powder. Processed cheeses might also use artificial colors and preservatives, which may contain gluten. Artificial color and stabilizers or thickeners often contain trace amounts of gluten, so should be avoided. Manufacturers are getting better at clearly identifying wheat based products, so you may even see wheat listed on the ingredients, making this unsuitable for a gluten-free diet.

Shredded and grated cheeses can also be a potential problem, since the cheese may be lightly covered in starch, which may be wheat-based, or corn or potato. Again, be sure to read the label carefully for any wheat starch.

Can Dairy Be Sustainable Yes And Heres Why

Dairy farming is one of the most sustainable food production practices available today. Not only does it provide us with an abundant supply of nutritious foods like cheese, yogurt, and milk but it also helps protect our natural environment from pollution and deforestation.

A lot of people are concerned about whether or not milk from cows can be considered sustainable.

But it actually makes perfect sense! Dairy cows, like all ruminants, are designed to convert grass into energy for their bodies. In fact, the word ruminant means to chew the cud. Cows dont produce much meat on their own.

The stabilizer to cheese products is usually casein. Casein is a protein found in milk. Cheesemakers use this protein to help stabilize the product during manufacturing.

Its important to note that many cheese companies add other ingredients such as salt and sugar to make their products more appealing.

These additives arent harmful, but they may impact the nutritional value of the final product.

Avoid Cheese Packaged At Deli Counters

Kraft Macaroni & Cheese Dinner: with Cauliflower Added and Gluten Free Review

Its unfortunately also possible for any cheese to have gluten cross-contamination introduced when its handled or packaged. Many stores, especially more upscale supermarkets, buy large wheels or blocks of cheeses, and then cut them up to sell in smaller quantities. If this cutting and repackaging take place in the deli section where workers also make sandwiches, or in the bakery section where workers are using flour, the cheese can become cross-contaminated.

Therefore, its best to stick with cheese that was packaged at the manufacturing facility.

To tell the difference, the cheese thats repackaged at local stores usually is wrapped in basic plastic wrap thats held closed by a stick-on label, while cheese thats packaged at the manufacturing facility usually has a more substantial shrink-wrap-style plastic cover, sometimes with the label printed directly on it. If in doubt, of course, you should ask.

In addition, if you purchase cheese sliced at the deli counter, you risk that cheese being cross-contaminated in the slicing machine since a few sliced deli products contain gluten. Again, youre better off purchasing cheese that was pre-sliced and then packaged at the manufacturer, although some people have reported success by asking the store personnel to slice their cheese and other deli products in the early morning after the equipment has been cleaned and before its been used for gluten-containing deli products.

Unless you are a serial buyer for the same brand over and over you should check the label for every product you buy. That way you wont be surprised by an upset stomach or headache later when you find out that new sauce did have gluten in it. Most of the gluten containing ingredients youll see are pretty obvious. Theyll say some combination of: wheat, barley, rye, gluten, wheat protein, gluten protein, etc. If you see any of these keywords on a bottle, the bottle contains gluten.
