Benefits Of Dairy Free Cream Cheese

Whether you are avoiding dairy due to dietary restrictions, health, or other reasons, there are several benefits to choosing a dairy-free substitute over traditional milk-based cream cheese:

  • Allergy-friendly. Over 6 million people in the United States have an allergy to milk . Dairy free cream cheese is typically safe to consume if you have a milk allergy, assuming you are not allergic to other ingredients in the product such as tree nuts.
  • Intolerance-friendly. Regular cream cheese contains small amounts of lactose . Though this amount can be tolerated by many people with lactose intolerance, others are more sensitive to this sugar. Since dairy free cream cheese is not made with milk, it does not contain any lactose.
  • Vegan-friendly. From better health to ethical and environmental benefits, there are many potential pros to following a vegan diet. As dairy free cream cheese is typically made with a plant-based milk or tofu, it is vegan-friendly.
  • Lower in saturated fat. When compared with conventional cream cheese, some dairy free cream cheese is much lower in saturated fat a type of fat that may negatively affect heart health when eaten in excess. Most health professionals agree you should limit your saturated fat intake to less than 10% of your daily calories, which is around 20 grams per day for the average person .

Soak the blanched almonds overnight. Or for at least 6 hours.

Chefs note: If youre in a rush, you can use un-soaked almonds and use more water when blending. Though it wont blend quite as smooth.

Add the almonds and the rest of the ingredients to a food processor. Blend till smooth.

Chefs note: For quick almond ricotta then only add half of the water, to begin with, and increase the amount of water, if/as needed. This will stop you from having to drain the cheese at all.

Youll probably need to stop and scrape down the sides of the jug a few times.

Taste and adjust any of the seasonings as needed. I.e., more nutritional yeast for cheesiness, acidity with either lemon juice or ACV, more flavor with garlic/onion powder, etc.

Optionally, place the mixture in a cheesecloth or nut milk bag and let it drain for between 2-3 hours . You could also allow it to chill in the fridge to further set/harden, or use it immediately.

  • A soy milk with a neutral taste, so without sugar and without flavouring, will give you a ricotta with a mild, neutral flavour that is more suitable for cooking both sweet and savoury dishes.
  • In general, the higher the percentage of soy written in the ingredients list of the milk, the higher the yield of ricotta that you can get from that milk .
  • So, in conclusion, while all the soy milks we tested worked well to make ricotta cheese, when it comes to eating the ricotta, in our opinion, milks without sugar and without flavours produce a better, more versatile ricotta cheese.

With interest in plant-based everything exploding, its easier than ever to find vegan cheeses with flavors and textures that hew pretty close to your favorite dairy ones or are just plain good on their own. Thanks to bacteria-cultured nut milk cheese, which is essentially processed the same way as dairy cheese, more and more vegan-friendly cheeses are becoming available online and in grocery stores.

To help navigate the hundreds of options, we asked our Food Network Kitchen recipe developers to taste some newer products and popular stand-bys. We tried to choose cheese with fewer ingredients listed on the label, and to stick to those that are less processed . We didnt abide by any hard-and-fast rules, but, like Goldilocks, went with a variety that felt just right:

Vegan cheese is no different. From standard cheddars to ricotta and everything in between, there is either a product or a recipe to try.

The alt-dairy industry as a whole is experiencing vast growth. Despite conventional dairy reporting a surge in sales in 2019, alternatives are being heralded as a major disruptor. Figures being floated include sector value projections of $32 billion within the next 10 years and vegan cheese is driving that forward. Its safe to say that there will be many more vegan cheese products being launched during that time.

How To Make Vegan Ricotta

Making vegan ricotta from store-bought soy milk is actually very easy and it only takes about 45 minutes with a bit of practice! First, bring the soy milk to a boil then immediately transfer it to a bowl and quickly add the vinegar. Stir with a spoon for 1 minute and you will see the milk begin to curdle. Now wait for 10 minutes.

In the meantime, place a strainer over a large bowl/pot, then cover it with a piece of cheese cloth or a clean kitchen towel, but one that doesn’t taste like detergent.

After the 10 minutes, pour the curdled soy milk into the strainer, wrap it in the cheese cloth, put a weight on top and let it drain for at least 1 hour.

I put a bowl full of water over the milk to drain to add a little weight and get a nice firm ricotta within 30 minutes to 1 hour.

Once the milk has been drained the ricotta is ready to be used for both sweet and savoury dishes. If you like to eat it as it is, add a pinch of sea salt or chopped aromatic herbs and a drizzle of extra virgin olive oil.

For best visual results, use a ricotta cheese mold that you can purchase online. The ricotta will have the same shape as the one you find in cheese stores and it will be easier to convince skeptical friends and relatives to taste it.Put the ricotta in the mold, press it well, then store it in the refrigerator for up to 5 days. When you’re ready to eat it, discard the excess drained water and flip the mold upside down onto a plate to get the ricotta out.
