If you do end up using pre-shredded cheese in this recipe, you may need to add a little splash of whole milk. The added starch from pre-shredded cheese will thicken the recipe, so you may need something else to loosen it again. You will know at the end if you want to add a little milk to yours or not!

Youve been asking for it, and Ive been working on it this is the Instant Pot Mac and Cheese that will make your mouth completely water, and have you reaching for seconds.

The lusciously creamy cheese sauce, enveloping every noodle so full of flavor, yet so simply made.

This mac and cheese is just as easy as making that macaroni in the blue box but is SO much better for you. No preservatives and other hard to pronounce ingredients. Just pure cheesy goodness!

When I was developing this recipe, I used cheeses that I found melted really well, and gave a good classic mac and cheese flavor, however, Ill also be detailing different cheeses you can use if you prefer another mixture.

How To Make Homemade Roux For A Creamy Sauce

To make a simple and flavorful roux, start by melting a stick of butter in a medium saucepan.

Whisk in the salt and pepper. A very important step is to continue stirring for a good 2-3 minutes until roux turns a bit darker in color. It becomes richer and even more fabulous.

Slowly whisk in the milk until mixture is thick and creamy. This step will take a couple minutes over medium heat.

Stir in cheese until creamy and cheese is melted through. I prefer a finely shredded mild cheddar. It melts quickly and has a perfect cheddar flavor.

What Spices Can I Add To Mac And Cheese

Basic spices that you may already have in your pantry that would work well include red pepper flakes, cayenne pepper, Italian seasoning, chili, onion, and garlic powder. If youre willing to take a trip to the store, spices like cumin, curry powder, dry mustard, and paprika are all wonderful additions.

How To Avoid Grainy Cheese Sauce:

  • The type of cheddar makes a difference. High quality aged cheddar cheese will give you a stronger taste and smoother texture. More mild and inexpensive cheddar cheeses will have less flavor and almost a grittier taste.
  • Use fresh grated cheese. Pre-shredded store-bought cheese will not melt the same as freshly grated cheese, and grating the cheese helps it melt smoothly and evenly in the sauce.
  • Bring the cheese to room temperature. I like to grate the cheese very first, before moving forward with the recipe. That allows it to sit at room temperature while I prepare the white sauce.
  • Use low heat. In order for the cheese to melt properly and smoothly we want it to have gradual changes in temperature . When its time to add the cheese to the white sauce, remove the sauce from heat and let it cool for a few minutes. It only needs to be warm enough to melt the cheese.
  • Dont over-stirthe sauce once the cheese has melted. Add the noodles and quickly assemble in pan and put into the oven.

Variations Of Mac And Cheese

  • Bacon if you love bacon, feel free to add some crispy, crumbled bacon to the topping, or even inside the mac and cheese as well!
  • Stovetop if youd prefer not to bake this mac and cheese, you dont have to! Make sure you boil your pasta until al dente , and youll only need about 3 3 1/2 cups of cheese total. No need to layer the pasta and cheese, just add all the cheese to the sauce, then combine with the pasta.
  • Different Toppings Im a huge fan of the cheese layer on top, since it gets nice and crispy, but we also love tossing 1 cup of panko with 2 Tbsp of melted butter and using that as a topping. 1 cup of crushed Ritz crackers with 2 Tbsp of butter work amazingly well too!
  • Different Baking Times the recipe calls for a lower baking temperature and time, but most of the time I find myself adjusting that based on my familys tastes. I like to bake this mac and cheese at 350 F degrees for 30 minutes, then broil for 2-3 minutes to get that glorious cheesy crust.

  • A sharper cheddar cheese will add a stronger cheese flavor.
  • Pre-shredded cheeses contain additives to keep it from sticking together which affects the way it melts. The sauce is best if you shred your own cheeses.
  • Allowing the baked macaroni and cheese to rest for a few minutes after baking will thicken the sauce.
  • Most importantly of allDo not over bake this recipe.

When cooking your macaroni noodles, cook them according to the package directions but you want them to be still firm. If your package says 6-8 minutes, just cook them 6 you get the idea. I choose not to top this baked macaroni casserole with a bread crumb mixture but if you really like bread crumbs on your macaroni and cheese, by all means, add some!

Once your sauce, pasta, and cheese cubes are combined, pour it into a greased 9X13 baking dish. Now youre ready to prepare a breadcrumb topping.

Preparing a Crispy Breadcrumb Topping:

  • Melt 1/4 cup of butter in a small saucepan or in the microwave.
  • Place 3/4 cup of Panko breadcrumbs into a small bowl.
  • Add the melted butter to the panko breadcrumbs and stir well until all of the breadcrumbs are coated with the melted butter.
  • Add the topping to your casserole dish, and spread it out as evenly as possible.

This might take a little longer than boxed mac n cheese, but let me tell ya, the extra time and effort is SO worth it. Plus, most of the ingredients you need are ones you already have on hand, and the steps are simple.

PASTA. Begin by cooking pasta according to package directions, and set aside.

SAUCE. In a large saucepan, melt ½ c. butter over medium heat. Whisk in the flour and cook for 2-3 minutes. Add garlic salt and pepper to taste. Slowly pour in the milk, whisking until smooth. Heat the mixture to a low boil until thickened. Remove from heat.

ASSEMBLE. Add the hot pasta to a greased 9Ã13 baking dish. Then, sprinkle 6 cups shredded cheese over the pasta . Pour the thickened cream sauce over the pasta and cheese. Let it sit until the cheese has melted and then stir together.

TOP & BAKE. Melt 2 TB butter over medium heat. Add in bread crumbs, stirring constantly until golden brown, about 3-5 minutes. Pour over the mac and cheese. Bake at 325° for 14-15 minutes. Serve warm, and ENJOY!

Of course, you could always go with a cheese that melts easily, like American or Velveeta, and including at least some of those cheeses will lend your cheese sauce a creamier finish. But you could also make a custom cheese sauce out of nearly any cheese by starting with a bechamel base and adding a cup of cheese for each two cups of milk while the sauce is still hot. Some cheeses, like extra sharp cheddar, will have a harder time melting, while others, like fontina and gouda, will easily mix into your sauce. If youre including a cheese that emulsifies less readily, consider using a different cheese as a sauce and sprinkling the harder cheese across the top of your dish as a finisher. And dont limit yourself to cheese varieties in the pre-shredded bag aisle cream cheese, and other soft cheeses like ricotta, are your friends too.
