Additionally, vitamin K2 is much easier for the human body to absorb than vitamin K1, and it has a longer half-life in the body. On this note, peer-reviewed research suggests that K2 may be up to 10x more bioavailable than K1 .
While research on vitamin K2 is still in its relative infancy, the compound is thought to be important for cardiovascular and skeletal health. Most notably, research indicates that higher vitamin K2 intake may reduce the risk of arterial calcification, which can lead to heart disease .
On the positive side, Gouda cheese is one of the best dietary sources of vitamin K2.

If youre unsure what to put on your plate at a barbecue or what recipe to choose for your next cookout heres what you need to know: Many people on the ketogenic diet try to stay between 20 and 50 grams of net carbs for the day. What does the net in net carbs mean? In this case, you would take the carbohydrate tally for the meal and subtract the fiber and any sugar alcohols to get the net carb number, according to Atkins.com. The reason people use net carbs for calculations when on low-carb diets such as keto, per Atkins, is that these are the type of carbs that most significantly affect blood sugar levels.
By the way, U.S. government agencies like the Department of Agriculture and the Department of Health and Human Services dont recognize net carbs as a macronutrient like total carbs, protein, and fat. Net carbs is a term associated with fad diets such as keto and Atkins.

How To Make Cheese: Detailed Step
You can use bleach to sterilize everything before you make cheese, but I rarely do. Hot water and soap will do a good job.
If using pasteurized milk, dilute 1/4 teaspoon calcium chloride in 1 cup water per gallon of milk, then start heating the milk.
Step 1: Heat milk to 84 degrees F. You dont need a double boiler for this cheese, whereas other cheese requires it. Milk proteins tend to scorch easily, but with Gouda you only heat it to 84 degrees F initially, then use hot water. More on that later.
Step 2: When the milk is at 84 degrees F, add MM100 cheese culture. Measure out the desired amount , then sprinkle it into the milk. Leave the dried culture to reconstitute in the milk for one minute, then stir it thoroughly for 30 seconds.
Step 3: Let the milk sit quietly and ripen for 15 minutes while you do the dishes, or homeschool your kids, or put laundry away. You might even put your feet up and relax.
Step 4: Add rennet, diluted in 1/2 cup of water, and stir it into the milk very thoroughly for 30 seconds with a perforated ladle. Use an up-and-down motion to make sure it gets mixed into the milk evenly.
Step 5: While the milk coagulates, heat about two gallons of water to 140 degrees F for heating the curds later.
Step 6: Now the magic really starts! The rennet is slowly going to thicken the milk and turn it into curd.
You are looking for a clean break: When you insert a knife, the curd should break cleanly around it
Stir for 12 minutes. Be gentlevery gentle.

How To Smoke Gouda
When youre ready to smoke Gouda, its best to decide what wood to use. My recommended wood is hickory , but maple and fruit woods would taste amazing with Gouda as well.
Prior to smoking, you can choose to remove the wax seal or leave it on. Taking it off prior to smoking will allow for more smoke penetration all around the cheese. In contrast, if you choose to leave the wax on, it will keep the cheese a bit fresher, but you wont have as much smoke flavor near the seal.

Perhaps Id just never paid as much attention to cheese in America as I have since living in the Netherlands, but Ive noticed that the common classification of cheese in the grocery is either jong or oud . Digging a bit deeper, the Dutch actually classify their cheeses into six categories based on age:
- Young or NewGouda: aged 4 weeks
- Young MaturedGouda: 8 to 10 weeks
- MaturedGouda: 16 to 18 weeks
- ExtraMaturedGouda: 7 to 8 months
- Old or Fully MaturedGouda: 10 to 12 months
- Very Old or Very Aged Gouda: over 12 months
% Gouda Versus 50/50 Gouda/cheddar Mix
I decided to run a little experiment. I made two batches of mac & cheese. One using 100% red wax gouda and the other using a 50/50 mix of gouda and sharp cheddar cheese. Both of the cheeses I shredded myself. You really dont find shredded Gouda in a bag and even if you did, I would avoid the already shredded cheese. You will find mold inhibitors and corn starch often added to shredded cheese there is no reason to run the risk of those ingredients being harmful just to save you some time. A simple box grater or even your food processor gets the job done. That way you are not stuck with just using whats offering in the bags.
For both recipes I made a simple roux with ½ stick of butter melted, then added 3 tablespoons flour and ¼ teaspoon mustard powder. Then added 2 cups of milk, and when it boiled, added 8 ounces of cheeses . The 100% Gouda mac & cheese took longer to melt, I had to stir it more to evenly melt the cheese. It produced a rich, creamy mac & cheese that I just wanted to gobble up on the spot! The 50/50 mix was good but not as flavorful as the 100% Gouda. My kids still prefer the 50/50 mix over just straight cheddar.
