Creamy One Pot Macaroni And Cheese
I have all kind of macaroni and cheese recipes on the blog, and today I have a Creamy One Pot Macaroni and Cheese to add to the collection. This is a great recipe to make for lunch when your kids are in the mood for something simple, hot, and filling, and you need something that comes together in without any fuss. This recipe is so easy and we loved the extra creamy results.
This recipe is extra easy because you cook the macaroni right in the milk that helps to make the sauce. Theres no water to boil or noodles to rinse. You just cook it all in one pan and its done in about 15 minutes. This is literally just as easy as that blue box stuff, but it tastes like real food and doesnt have a fluorescent orange glow to it. Trust me, that fake mac n cheese is just gross once you start making your own.
My other stove-top macaroni and cheese recipe is still a favorite, but I dont always have canned milk on hand. The difference between the two is that this recipes makes a really thick and sticky macaroni and cheese , and the other recipe has almost a runny sauce to it. They are both excellent but different enough that I wanted to share both recipes.
Making It Ahead Of Time
Like most baked pasta dishes, mac and cheese is perfect for making ahead of time. Here are a few tips:
- The sauce can be made ahead and stored, covered in the refrigerator, for two days. Warm the sauce before mixing with cooked pasta.
- Mac and cheese can be made ahead, spooned into a baking dish and stored, covered in the refrigerator, for two days. Cold macaroni and cheese may take a little longer than 30 minutes in the oven to be fully heated and cooked through.
- You can also freeze stovetop or baked mac and cheese for up to two months. To reheat, defrost overnight and bake or warm on the stove until heated through. Or bake from frozen. It will take about 1 hour.

Why Use The Instant Pot For Mac And Cheese
Obviously Instant Pot Mac and Cheese is pretty straightforward and simple and thats kind of the point, in my opinion? I creep around on the internets and lately Ive seen people chatting about how frustrating it is when people just use the Instant Pot for basic recipes like Mac and Cheese.
Excuse me but Id like to respectfully disagree. Theres a reason why people use the Instant Pot for basic recipes like mac and cheese, and its because, especially in this case, the mac and cheese your Instant Pot can give you is NEXT LEVEL GOOD. I am not food-sciencey enough to tell you how or why this works, but the texture of the creamy sauce that you get a little melted butter, and cheese, and milk?
It just works differently in the Instant Pot! You cannot replicate this on the stovetop with the same ingredients and I do not know why. Starch? Pressure? Does it matter? The IP holds the magic.
The Instant Pot is so good to us.

I Have Too Much Liquid
No, you don’t, really. Once your pasta is al dente, you are done with the free liquid. So you MUST drain it. Don’t worry about getting every drop of the liquid out. Just use a cup and remove the liquid you can easily remove before adding the cheese.
Should I cook longer to get rid of the liquid? No, drain per the instructions.
My pasta is mush. Your pasta is cooking too fast. You need to look for al dente.
My cheese looks bad. Some cheap cheese will separate quickly. Get better cheese.

Heat the oven to 375 degrees. In a separate pan or a skillet, melt 3 tablespoons of butter.
Add ¼ cup of flour, cook and stir for about 1 minute to form a roux.
In a medium pan, heat milk until it boils.
Pour hot milk into the hot flour-butter mixture gradually, while whisking. Continue cooking the mixture, constantly stirring, on medium or high heat until the mixture bubbles and thickens – about 1 or 2 minutes.
Remove the pan from the heat. Add salt, nutmeg, black pepper, 1 and ½ cups cheddar, and ½ cup Gruyere, or pecorino Romano, or Parmesan. While off heat, whisk until all cheese is melted and the cheese sauce has even consistency. Set aside.
Bring a large saucepan with water to boil. Add macaroni, cook 3 minutes less than indicated in manufacturer’s directions, so that pasta is still undercooked inside. The pasta will continue cooking as it bakes. Transfer macaroni to a colander and rinse under cold running water really well. Running the pasta under cold water will stop the cooking and will wash off the excess starch. Drain pasta well.
Add drained macaroni to the cheese sauce.
Butter a 1.5-quart casserole dish. Pour the pasta with cheese sauce into the prepared dish.
Sprinkle the remaining ½ cup cheddar and ¼ cup Gruyere .
Bake for 30 minutes, until browned on top. Transfer dish to a wire rack for about 5 minutes, then serve.

Plus if you freeze it and its still a bit warm, water crystals will form and then thaw into your dish and could make it separate when you bake it. Besides, its so fast to make, theres not really a reason to freeze your macaroni and cheese.
