You can also consider finding spices and flavoring, like nutritional yeast, that might help add some cheesy flavor especially if you are leaning to a more whole-food plant-based diet.

Prepare A Lactic Starter

We are first going to make our own lactic bacteria starter culture.

All grains, such as wheat, barley rice, etc., come complete with their own population of natural bacteria. We can access these by changing the grains a bit:

  • Choose your grains and after soaking and rinsing the grains over a few days you will see small sprouts beginning to form. This is a natural event in all plant grain/seeds and when it happens – the starch in the grain/seed changes into a more accessible food for the bacteria. Schinner details this sprouting in her book.
  • My variation here is to begin with some malted barley since the malting process has already taken care of the change in starch and it is ready for fermentation. This can be found at most health food or homebrew stores.
  • You can now take the sprouted or malted grain and add it to a jar of water at room temperature.

    Place this in a quiet place at room temperature for 2-3 days. You will see some bubbling and will notice a very tangy change to the flavor. This is the result of enzymes in the grains and lactic bacteria growing.

    This will be the lactic starter culture to ferment the sugars in the cashews which creates that nice tangy flavor we are looking for. Once the fermentation tastes a bit tangy, place it in the fridge to slow things down. This will keep for a few weeks and remain active.

    Blending Your Cashew Cheese

    Blending the cashew cheese in your food processor will require a little patience. Its not like making nut butter, which can take up to ten minutes of processing, in my experience. But it wont be the right consistency right away.

    Once you start blending the go-to cashew cheese as instructed, give it some time. Stop often to scrape the processor down, then start it again. After a few minutes of this, the cheese will be ready.

  • Choose a mold to pour your cheese into and spray it with a little spray oil and add any stick-like objects that you have to make different sized holes throughout your cheese.
  • Pour the coconut milk into a saucepan and add all of the ingredients while the milk is still cold.
  • Stir with a whisk then turn the heat on to medium.
  • Continue to stir frequently until it begins to boil.
  • Turn the heat down to low and stir and allow to boil slowly for 6 full minutes.
  • Pour the hot cheese sauce into the mold.
  • Let it cool uncovered for about 15 minutes on the countertop.
  • Place it in the fridge for at least 3 hours uncovered to allow it to set completely and it to dry out slightly.

    We reached out to vegan cookbook author Dreena Burton of Plant Powered Kitchen and The Colorful Kitchen blogger Ilene Godofsky Moreno to find out their recommendations for the best vegan cheeses on the market. Here’s what they said:

    Vegan Parmesan Cheese: Parmesan substitutes vary from simple shakers made with blends of nutritional yeast and nuts by companies like Parma to more authentic-looking shreds and wedges from Violife, Burton says.

    Vegan Mozzarella Cheese:Miyoko’s Kitchen Fresh Italian-Style Vegan Mozz is the real deal,” Moreno says. “The texture is eerily similar to traditional mozzarella, and it’s delicious fresh in a caprese salad or melted on pizza.” Burton agrees that Miyoko’s Kitchen makes a terrific mozzarella substitute.

    Vegan Cheddar Cheese: Moreno’s go-to Cheddar is Daiya Cheddar shreds: “It gets super melty when grilled in a sandwich or mixed into pasta.” Other good brands of melty vegan cheeses, according to Burton, include Follow Your Heart and So Delicious.

    Vegan Ricotta Cheese:Kite Hill has nailed the unique texture of ricotta cheese, Moreno says. “My mom recently started swapping out the traditional ricotta in her famous lasagna for Kite Hill’s vegan version, and no one in my family could even tell the difference!”

    Vegan Cream Cheese:Toffuti and Go Veggie are among the best companies offering soy-based cream cheeses, says Burton, who also recommends trying out artisanal nut-based cream cheeses.

    What Appliance Do I Need To Make Vegan Cashew Cheese

    There are different approaches to making cashew cheese. Some folks like to use a high speed blender. Personally, I find that you have to add a lot of liquid to make the cheese blend properly in a blender.

    This results in something thats closer to cashew cheese sauce or cashew cream than cashew cheese. And while I love both cashew cream and cashew queso, cashew cheese is its own entity.

    So, I like to use my food processor when making my go-to cashew cheese. This creates a texture that falls someplace in between ricotta cheese and hummus.

    When I was working on Food52 Vegan, my editors asked me a few times about the consistency of cashew cheese. To some extent, this is a matter of preference.

    You might want to create a loose, creamy cashew cheese for folding into baked pasta. On the other hand, you might prefer a really thick batch to crumble onto salads.

    But for the most part, what you want to whip up in the food processor should resemble a thick batch of hummus. It should be uniform and creamy, but the texture wont be silky smooth.

    Another way to think of this go-to cashew cheese recipe is as a savory cashew butter. Thats sort of what it is: it wont crumble as neatly as, say, feta. But you can definitely dollop it on top of any dish that youd usually add a crumbly cheese to. And its perfect for spreading.
