Halloumi Hell: How Will We Survive The Cheese Crisis

How to make Homemade Halloumi Cheese

Its one of Britains best-loved imports, but now supplies of the squeaky Cypriot cheese are running perilously low

Gently, I pull my halloumi from its loose plastic wrapping. I do this delicately, since, like funfair goldfish or those waterproof watches you can buy at the airport, halloumi comes sealed in a bag of liquid, as if the poor cheese was in a rush to reach you and has lost a good part of its weight in sweat. I slice the spongy, cuboid form and let its segments slap and sizzle into the pan, where its edges turn from brilliant, Tipp-Ex white to a golden yellow. The rectangles dont melt so much as separate at each end, until each resembles something like a chubby letter H, or an artists representation of a chromosome.

Halloumi has been a consistent part of my diet for most of the nine years Ive been in London. Its appeal is in its zesty tang and its odd, formless texture. That tooth-satisfying squish and give that makes it readily applicable to so many methods of cooking barbecued in strips, cooked with a salad, or positioned as a meat substitute wherever needed.

Alas, there are mounting alarms that the worlds halloumi stocks are now at risk and it turns out, much like that one Joni Mitchell song that predicted the death of parks but not the decline of centralised taxi services, we really dont know what weve got till its gone.

A lot of people call it a squeaky cheese and its not meant to be squeaky! Its so versatile

The Origin Of The Species

Halloumi was first made on Cyprus, an island nation in the eastern Mediterranean, during the . Back then, farmers used either sheep’s or goat’s milk which was heated in a large pot along with rennet, enzymes found in the stomachs of herbivorous animals. Rennet causes the milk to separate into curds and whey. To make halloumi, the curds were pressed into blocks then, after they were cool, boiled again in the whey. The blocks of halloumi were preserved by soaking them overnight in a salty brine, then packing the blocks of cheese in mint leaves to keep them fresh.

While food manufacturing technology has advanced since the Byzantine era, halloumi is made using the same ingredients and method. Today, it’s possible to find halloumi made with vegetarian rennet and very often made with cow’s milk. And though refrigeration is readily available in most parts of the world, halloumi is still packaged in brine with flecks of dried mint leaves sprinkled on top.

Waldeck says the way halloumi is made the two-step process that cooks the milk, presses the whey out of the cheese then cooks the cheese again in the whey is the reason so many people love it.

“The second cooking compounds the cheese and gives it a higher melting point,” she says. “That’s the secret.”

Is Halloumi Cheese Good For You

In a word, yes. There are a number of health benefits to eating halloumi cheese. For one thing, the amount of fat in it is actually very low for an animal-based food item such as cheese . This means that it can be eaten more often without worrying as much about weight gain or other general dietary concerns related to high levels of saturated fats and cholesterol. Halloumi also happens to contain almost no lactose content which makes sense given that you dont need milk when creating this type of cheese!

Overcoming Challenges In The Us And Abroad

To seize the cheeses full potential in the US, where sales of specialty cheeses are significantly high, manufacturers and producers must overcome significant hurdles, according to Fact.MR.

Chief among them is the cheeses high price, which is currently kept up due to reliance on imports, Kumar noted.

Domestic production of halloumi cheese is significantly low in the US, hence imports from Europe, Middle-East and Asia-Pacific largely meets the demand. This stands as one of the key factors for the low share in North America in the halloumi cheese market. Owing to the import oriented consumption, the price of halloumi cheese is significantly high in the US as compared to other countries, Kumar said. It would be uncertain to comment on whether this restrain will continue impacting the halloumi demand in the US, as in the near to mid-term the prospects of domestic halloumi cheese production in the US seems to be low.

However, Kumar added, there is significant potential for the cheese in the US, and producers and manufacturers interested in tapping into this unmet demand should focus on increasing the goat and sheep milk supplies in the US, so domestic production can increase.

Kumar said.

European producers and marketers are grappling with other challenges that could extend to the US once the cheese gains more traction.

To address this, producers are exploring efforts to boost production through genomic schemes.

How Healthy Is Halloumi

While grilling or frying cheese sounds, well, magnificent, it also sounds seriously heart unhealthy, so we asked how healthy is halloumi? “It’s pretty salty,” Waldeck admitted, but quickly added, “it has a bunch of calcium.”

A recommended serving size of halloumi is about 1 ounce or 28 grams. That single portion has 90 calories with 70 calories derived from fat. In the “good news-bad news” department it had 6 grams of protein and provided 20 percent of the daily requirement of calcium, but also had a whopping 297 milligrams of sodium and 20 milligrams of cholesterol. In other words, if you’re on a low-salt, low-fat diet, it might be wise to steer clear of fried halloumi.

Stir gently, increasing the heat slowly to 100-106°F during 20 to 30 minutes .

Then keep at this temp for another 20-30 minutes with intermittent stirring .

When this point is reached, the curds can be allowed to settle for about 5 minutes under the whey.

The cooking of the final cheese in hot whey is integral to the making of Halloumi, so we will begin by filtering off the whey from the curds until you can see the curds below. I do this using a sanitized colander and just scooping the whey out with another ladle, bowl, or cup.

When the whey has been separated and transferred, slowly heat the whey to 185-195°F .

Some Pairings And Flavor Notes

How to Make Halloumi Cheese

It’s the flavor Waldeck returns to. She recalled a time touring Greek, Turkish and Cypriot restaurants in Brooklyn, New York, and being served a salad that included watermelon and toasted halloumi. She liked the contrast of the sweet fruit and salty halloumi so much she created her own salad recipe, taking it a step further.

“I did a recipe with watermelon and I know it sounds crazy, but beets topped with grilled halloumi cheese, green onions and a citrus vinaigrette,” she says. “You’ll often see grilled halloumi and strawberries or other fruit in the Mediterranean region.”

So, what’s the difference between halloumi and that other fabulous Mediterranean favorite, feta? Waldeck says it goes back to how it’s made. Unlike halloumi, feta is only cooked once when it’s manufactured, making it softer and crumblier. You can’t put feta directly on the grill and that makes halloumi unique.

“I use feta a lot, like halloumi, and for the same reason,” Waldeck says. “You can use a little bit and get a lot of flavor.”

We all know how we will look back at the summer of 2018.

It wont be remembered as the summer that England won the World Cup again, it wont be remembered as the summer that Love Island finally jumped the shark, or the summer that Brexit finally did whatever it is that Brexit is currently doing. It will be remembered as the year that halloumi went massive.

So far this year, weve had the phenomenon of the halloumi fries, launched in Nandos to the groans of delight from bros and vegetarians alike, and weve had the halloumi burger hitting supermarkets and revolutionising barbecues.
