Philly Cheesesteaks With Garlic Cream Cheese Sauce

October 18, 2016 by Tonja

Philadelphias beloved cheesesteak is iconic and a cultural obsession. Most argue the cheesesteak is rarely duplicated successfully outside of Philadelphia. What they do agree on is that the cheesesteak consists of a crusty hoagie roll filled with thinly sliced sautéed beef and melted cheese.

I am not a cheesesteak aficionado but I did create a darn good version here. This starts with sautéed tri-color of bell peppers, onions and mushrooms. Add to that thinly sliced marinated sirlion laid out on a hoagie bun with melted provolone cheese, broiled to perfection and slathered with a garlic cream cheese sauce. Oh yahthis sounds A LOT like game day food to me.

Tip: Freeze sirloin for 30-45 minutes before slicing. Its much easier to get thin slices this way.

How Do You Make A Cheesesteak

Basically you start by caramelizing your mushrooms and onions in some butter in a large skillet. Try not to salt the mushrooms until after theyve browned a little. While your mushrooms and onions are cooking, mix together the horseradish sauce.

Once your mushrooms and onions have caramelized to your desired level, slide them off onto a plate. Add more butter to the same pan, and add your steak. The steak cooks quickly, as you want it caramelized, but not so cooked that its tough.

Once your steak is mostly cooked, add your mushrooms and onions back into the pan and cook a minute or so more.

Now divide your steak mixture in half and spread to the opposite sides of the pan. Top with a few slices of cheese, and allow it to melt for a couple of minutes.

Use some tongs to mix the cheese into the meat mixture, slather your hoagie buns with the horseradish sauce or plain mayo, fill with meat mixture. Place on squares of aluminum foil, and wrap hoagies up tightly in the foil. Dont be afraid to squish the hoagie roll it up very tightly, itll give it a beat up sort of look and allow for a juicy hoagie. Place rolled hoagies in the oven for the flavors to meld together for 10-15 minutes.

What you end up with is a perfectly delicious and flavorful cheesesteak!!

  • The best cheese for Philly cheesesteak: Provolone cheese works best for a Philly cheesesteak due to its neutral flavor and melt. A strong runner-up would be sliced white American cheese slices . In Philadelphia, youll even find some food trucks and restaurants swearing by Cheez Whiz.
  • The best cut of beef for Philly cheesesteak: Thinly sliced ribeye is the go-to meat choice for a classic Philly cheesesteak. The marbling of ribeye is ideal because it creates a tender, easy-to-bite sandwich.

  • Leftover steak, or make the steak fresh. The idea is to use a very thin cut of meat though, !
  • Velveeta cheese sauce, buy the sauce pre-made, or buy a small block of Velveeta and follow instructions to prepare a cheese sauce. It is very simple, just add milk!
  • Bell peppers and onions. Of course you can get them fresh and slice them but as you know, I’m all about making life easy. So I always keep a frozen pepper blend on hand! You can also add sauteed mushrooms
  • Seasonings

The beautiful part about this recipe is that you can use leftover steak, or even chicken. The Velveeta cheese is the perfect pair to this sandwich, it creates that nice cheesy layer that every cheesesteak sandwich needs and deserves.

My local grocery stores sale these delicious loaves of bread, Cuban or Puerto Rican bread especially, for $1! Yes ONE dollar! It’s bananas, and I buy one almost everyday to go with dinner.

The Best Cheese For Philly Cheesesteak:

The most popular cheese is mild provolone. We have tested a variety of provolone brands and the only one we didnt enjoy was aged provolone from Costco. The flavor of aged provolone cheese was overpowering. Another popular option is white American cheese. Some restaurants in Philadelphia add a Velveeta-like cheese but we like provolone best.

Secret Ingredient To Tender Meat:

Like any Steak Sandwich, youll want to season the beef. I didnt want typical pan-seared steak slices that can turn out to be rather thick and chewy, so I brainstormed some ideas. Turns out Subways Steak pieces are marinaded in water and spices before its cooked so I wanted to tenderize my meat first, too.

I ended up soaking my thinly shaved steak pieces in a bowl of spices, water, and baking soda to really tenderize the steak. This will allow your beef to soften and the thinner the slices the better! Im convinced fast-food Restaurants have their signature taste to their beef because theirs doesnt taste like a plain seared ribeye steak. Tenderizing the meat not only gives it a signature taste but makes it much softer to chew down which is sometimes the opposite of what youd have at home.

Eating out is not always an option for our big family of 7 people and sometimes homemade is far more efficient. Thats why you should invest in a large griddle or cast-iron wok to make it easier to feed a crowd! Grab a spatula and get these hot sandwiches going!

The thing about a Pats Philly Cheese Steak is that they are the most magical sandwich youll ever eat but to enjoy them you have to go to Philadelphia, park in the most ridiculous environment ever where the only parking is the sidewalks around the restaurant, get in a long line that basically goes across the street and then order quick AND correctly so you dont become everyones least favorite person.

My version of Pats Philly Cheese Steak is as close as you can get to the real thing while staying home.

I am going to just say this and you guys can take it or leave it. Take it: Buy Cheez Whiz or you can use Provolone Cheese. You guys know me, I tend to stick with things that are as close to nature as possible unless I have a REALLY good reason. THIS is a really good reason! The flavor is amazing, the drippy quality of the cheese is awesome and makes the sandwich even better. Plus the authentic Pats Philly Cheese Steak is made with it, when you order you say with wiz so if you change the cheese, just be aware it wont taste quite as authentically Pats.

And I mean look at that drippy melty cheese? A note if you are admiring the photos and notice the beef is slightly thicker. I used a sharp chefs knife and sliced as thinly as I could for my sandwich and left my husbands a little thicker. Then I photograpphed HIS. Totally want to scream even typing that. The only difference was the beef was slightly thinner to begin with.

The best way to thinly slice beef is to use a mandoline. To make slicing easier I like to work with frozen beef that has thawed for about an hour Then run the partially frozen meat through the mandoline, this creates super-thin steak slices that shrivel up during the cooking and create those meat pieces commonly seen in steak rolls.

If you dont have a mandoline you can cut the beef with a knife. Simply slice against the grain and trim off any excess fat for easier slicing. To get those paper-thin slices a mandoline is the best tool!

Choose a leaner cut of meat for easier slicing or trim the fat. Beef with excess fat will be hard to cut or slice.

What Goes Into A Cheesesteak

Generally a hoagie roll is topped with a meat and onion mixture. Mushrooms are sometimes used, as are peppers. For a traditional Philly-style cheesesteak, cheez-whiz is used, but at many restaurants NOT in Philly, provolone is the most common cheese

My husband prefers no green peppers in his cheesesteaks, so I use cremini mushrooms , a yellow onion and then tossed some banana peppers on his before making them into hoagies. But if you like peppers, by all means, toss em in! Try some sweet and hot peppers together its amazing!

How To Make Philly Cheesesteaks With Peppers And Onions

The process is easy! Youll need a large, deep sauté pan to start. If you dont have any large sauté pans, a Dutch oven will do the trick.

I love to add bell peppers and onions to add a burst of color and a ton of flavor to these tasty cheesesteaks.

Heat vegetable oil over MEDIUM-LOW heat and sauté thinly sliced onion and bell pepper. You want to avoid browning the peppers and onions so if they do begin to brown, reduce the heat under the pan a bit. When they are nice and tender, transfer them to a large dish and set aside.

Add additional oil to the pan and then add half of the chopped sirloin to the hot pan. Season with a little Lawrys Seasoned Salt, or your favorite all-purpose seasoning, and a little garlic pepper. Cook and stir until browned and then transfer this first batch of browned beef to the dish with the peppers and onions.

Repeat the process with the remaining beef and seasoning. Transfer the second batch of browned beef to the dish and drain any juices from the pan.

Return the pan to the heat and transfer the cooked veggies and beef to the pan. Place sliced provolone over the top and cover the pan to allow the cheese to melt

Use tongs to mix the melted cheese throughout the beef and veggie mixture and its time to load up those hoagie rolls!
