Keto Mac and Cheese is perfect for anyone with a macaroni cheese craving that cant eat real macaroni. I know! BUT, tender cauliflower and crispy bacon and a suuuper creamy cheese sauce can help. Hear me out:

  • First, you want to break up a head of cauliflower into florets and add those to boiling water cook, covered, for about 8 minutes, or until tender.
  • Drain cauliflower in a colander and set aside.
  • Add milk and softened cream cheese to a saucepan gently whisk until the cream cheese is completely melted. I use the same saucepan, or pot, for boiling the cauliflower and for making the sauce. Less pots and pans to wash.
  • Stir in some garlic powder, chili powder, dried herbs, salt, and pepper. Just add whatever other herbs and spices that you like.
  • Whisk in shredded cheddar cheese and shredded mozzarella cheese. You can also use different cheeses Gruyere, Gouda, Monterey Jack, etc But, whatever cheese you choose, make sure it is shredded because, it needs to quickly melt into the cream sauce.
  • Once the sauce is smooth, stir in the drained cauliflower gently stir around so that the cauliflower is covered with the cheese sauce.
  • Transfer cauliflower to a 9×13 baking dish and bake, uncovered, for about 18 to 20 minutes, or until hot and bubbly. I also like to add a topping of pork rind panko crumbs for a nice crunch.
  • While that bakes, dice up few slices of bacon and fry until crispy.
  • Remove casserole from oven, top with prepared bacon, and serve.

    Making the Roasted Cauliflower

    To begin making this cauliflower mac and cheese, heat a skillet on medium heat and preheat the oven to 425 degrees. Next youll want to dice your bacon into small bits in order to roast it alongside the cauliflower. Break the cauliflower into small bite sized pieces, we used elbow noodles for reference size. You can do this with a knife, or your hands like we did.

    Now its time to add the cauliflower and bacon into your skillet. Cook for 5-7 minutes, you are looking for slightly browned cauliflower and fully cooked bacon. If you like the bacon extra crispy add it to the pan first and get it started cooking before the cauliflower. Once cooked dice your onion and mince the garlic, these will go into the skillet next. Cook for a final 10 minutes, or until the cauliflower is cooked and the onions are translucent.

    The cauliflower should be slightly al dente because it is going into the oven to bake after roasting. Macaroni and cheese should have a bite so dont be scared if your cauliflower seems a little hard right now.
