While strolling through a newly remodeled local Aldi store, I noticed a product Ive rarely seen before at the discount grocer: cheese curds. My family eats a lot of cheese, so I picked up a package.

Aldis Happy Farms Cheese Curds come in three varieties: cheddar, mixed cheddar, and jalapeno. I opted for the cheddar. They sold for $3.99 for a 12-oz. package at the time of publication.

What are cheese curds anyway? The Wisconsin Cheeseman states that cheese curds are: Fresh Cheddar cheese in its natural, random shape and form before being processed into blocks and aged. Curds have a mild taste with a slightly rubbery texture and should squeak when eaten.

Aldis cheese curds are made in the U.S., and the ingredients are simple: cultured pasteurized milk, salt, enzymes, and annatto.

The package says the cheese curds should be served at room temperature, or you can speed things up and eat them sooner by microwaving them for 15 seconds after taking them out of the refrigerator. The curd should be squeaky when you chew it if its been warmed properly.

The package also states that the cheese curds should be used within five days once the package is opened, and they may be frozen for up to two months before opening. Refreezing is not recommended.

So Lets Make Homemade Fried Cheese Curds

These ALDI cheese curds do indeed have the perfect squeaky, chewy, cheese-curds-ish quality youd look for in authentic Wisconsin cheese curds. Theyre of course good to snack on right out of the bag or just slightly warmed, but then I started thinking about fried cheese curds but then, about how much I dont like to fry things in my kitchen because of the amount of oil it takes and the smell that lingers.

So, the thought process continues why not throw together a batch of homemade oven fried cheese curds? I also had a box of panko Id picked up on special buy at ALDI a while back, so decided that would impart a nice little crunch to these and help offset the oven baking process.

A little panko, a little flour, a little egg, a little seasoning, and how could these homemade cheese curds go wrong? Yes, breading each of these little cheese curds is a slightly messy process. But then again, breading anything is a slightly messy process we suffer through it for the deliciousness of the end result.

See, these are just crazy messy little lumps of cheesy deliciousness. But sometimes the proof of a recipe is really in the taste, not the eye candy. Why should you have to wait for the state fair to roll around in order to enjoy a cheese curd experience, right? Plus, with this recipe the breading doesnt overwhelm the cheese curds but adds just enough flavor and crunch to enhance them.

If you have access to a reputable dairy that has raw milk, I would recommend this over any other option. Its going to give you a fantastic cheese.

If raw milk isnt an option, then be sure you purchase milk that is not homogenized or ultra-pasteurized.

Ultra-pasteurized milk is processed at a much higher temperature than standard pasteurization. The proteins in the milk end up broken down and it makes it nearly impossible to make a good curd.

And of course, the fresher the milk, the better the cheese.

Rennet can easily be found in most health food stores or homebrew supply stores, or you can purchase it online.

I prefer liquid rennet when making cheese because its one less step I need to worry about.

You can use rennet tablets, which is what I had on hand, but youll need to crush the tablet well and mix it in water until its dissolved. Its not difficult, it just adds another step to the process, and Im all about easy and quick in the kitchen.

And again, powdered citric acid is quite easy to get your hands on. Most homebrew supply stores carry it, or you can purchase it online if you cant source it locally.

How To Freeze Cheese Curds

To freeze cheese curds, you want to make sure they dont all clump together. The moisture in the cheese can sometimes make the curds stick together upon freezing. Heres how to do this:

  • First, toss the cheese curds in a bit of flour or cornstarch. This will absorb the excess liquid and keep them from sticking to each other.
  • Then, place the cheese curds in a freezer bag. Remove the excess air, then seal the bag.
  • Label and date it, and place it in the coldest part of the freezer. Be careful not to place anything heavy on top of the cheese curds, or they will get squished.

Heat Curd & Remove Whey

If in a colander, transfer the curds into a heat safe bowl. Next, microwave the curd for 1 minute.

If desired, add 1 tsp of salt to the curds for added flavor.

You will notice more whey separation from the curd. Drain off all whey as you did before. Quickly work the cheese with a spoon or your hands until it is cool enough to touch .

Microwave two more times for 35 seconds each, and repeat the kneading as in the last step to aid in more whey drain off and ensure even heating of the curds. Drain off all of the whey as you go.
