5 CHEESE SOUTHERN BAKED MAC & CHEESE| How To Make Southern Baked mac and Cheese

You dont have to bake the mac and cheese in this recipe. Everything gets fully cooked and is essentially ready to eat after the cheese and noodles are added. However, I love the extra gooeyness that comes when the cheese is baked and I think baking it adds a level of sophistication you just dont get without.

Macaroni And Cheese Variations

This recipe is easy to adapt to other variations. Here are some of our favorites:

Baked Mac and Cheese: Once the pasta and cheese sauce are combined, add it to a baking dish and bake with a little more cheese and breadcrumbs sprinkled on top. We shared this Baked Macaroni and Cheese a while back.

Garlic Mac and Cheese: Fresh garlic and roasted garlic are excellent in this recipe. Add either to the butter just before adding the flour. For fresh, Id use 2 to 3 cloves. For roasted garlic, you can increase to 6 cloves or more. See our recipe for making roasted garlic.

Use a Variety of Cheeses: Cheddar isnt the only cheese to use. Try easy melting Gruyere, Fontina or Monterey Jack. For more flavor, a bit of parmesan or pecorino cheese is lovely, and for a more adult dish, try blue cheese!

Spiced Macaroni and Cheese: Mustard , nutmeg, and a pinch of cayenne pepper are classic additions to the cheese sauce. Smoked paprika is also delicious.

Broccoli Mac and Cheese: A kid favorite! Stir roasted broccoli or steamed broccoli into the pot before serving. Heres how we make roasted broccoli.

Lighter Mac and Cheese: Swapping half of the cheese sauce for pureed cauliflower cuts calories and still tastes incredible.

How To Make Creamy Mac And Cheese

Its incredibly easy to make creamy stovetop mac and cheese, provided you use the right ingredients and ratios. Here are the basic steps for cooking the noodles and making the homemade mac and cheese sauce:

  • Cook the noodles to al dente, drain and set aside.
  • Now comes the fun part, making the creamy cheese sauce. Melt some butter in a large pot and then whisk in some flour, salt, and pepper.
  • Slowly add in some heavy cream and milk, cooking until it bubbles. Were going for rich and creamy macaroni and cheese, so the heavy cream is necessary!
  • Then reduce the heat to low and add in some shredded sharp cheddar cheese and shredded mozarella cheese.
  • Stir until melted and then add the cavatappi noodles to pot. Stir until the noodles are coated and then let sit for 5 minutes to thicken up.

    • Pasta Shapes to mimic the classic recipe, I normally use elbow pasta. But any short-cut pasta works just as well! Medium shells, penne, rotini, etc. Just note that different pastas will have slightly different cook times, so use the recipe times as an approximate.
    • Cooking Liquids like I mentioned above, I prefer the taste and consistency of chicken broth, evaporated milk and heavy cream. However, feel free to test out different proportions of those liquids, or try out different liquids. Just note that I can only vouch for this recipe as written.
    • Cheeses As with most mac and cheese recipes, the types of cheese called for are not the only ones you can use. Monterey Jack, Pepper Jack, Colby, Gruyere, sharp cheddar any and all!
    • Seasonings feel free to add in additional seasonings that you love in your mac and cheese.

Save The Feta For Your One

Feta is not a particular melty cheese, which is why we like to pair it with another cheese to form the creamy sauce for this one-pot spinach and feta mac and cheese. The feta acts a little bit more like a garnish or mix-in for this recipe. If you want to go for a full cheese overload, mix a little bit of the feta into the sauce right at the very end, and then top off each bowl with another handful of crumbled feta.

If you want to take a slightly more measured approach, just use the feta crumbles as a topping right before serving. We recommend adding a sprinkling of freshly cracked black pepper to the top of each bowl as well, which will help to offset the extreme creaminess of this dish. A little bit of grated lemon zest, Calabrian chili oil, or chopped parsley would also make good garnishes.

    What Type Of Cheese

This classic mac and cheese recipe is made with cheddar cheese. I particularly love medium or sharp cheddar cheese but any type will do. If you want a more luxurious mac and cheese or youre really trying to impress a crowd, you could use a combination of different cheeses. Just be sure to select a type of cheese that is good for melting, like white cheddar, smoked gouda, gruyere, brie, goat cheese, mozzarella, or fontina.

    Sweet And Savory Meatloaf

Meatloaf is a simple dish made of ground beef that has been shaped to look like a loaf and combined with several other ingredients. Often this dish is eaten as a main meal but the taste goes very well with the flavors of mac and cheese. Again, this is a side dish that is super easy to make and doesnt call for a lot of ingredients.

If you enjoy both dishes, you can even make your own mac and cheese stuffed loaf. This is going to be a dinner that you wont be able to resist. You may find that this dish requires a little more effort to make but if you have the time to spare it is certainly worth a try.

Gather The Ingredients To Make One

The ingredients list for this one-pot spinach and feta mac and cheese is fairly straightforward. Youll want to start, of course, with your favorite pasta. You can use regular elbow macaroni, but we love the added texture of a slightly longer, twistier pasta like gemelli or cavatappi. Theoretically, though, you could make this with any dried pasta even spaghetti youll just need to adjust the cook time accordingly.

To make the cheese sauce that forms the base of this recipe, we recommend using Swiss cheese , milk, and either water or vegetable stock. Youll also need olive oil, spinach , and of course, feta cheese. A dash of freshly ground black pepper gives the dish a nice little kick of spice without making it spicy. Most of these ingredients are things that you probably already have in your pantry, which makes this a great option for a weeknight dinner.

Tips For The Best Mac & Cheese

    • Freshly grated cheese dont use pre shredded. They have anti caking agents that can make the sauce grainy.

    • No bloated overcooked pasta Cool macaroni slightly and lightly coat in butter. This stops the macaroni from absorbing more liquid while baking, resulting in bloated overcooked pasta and less sauce.

    • To avoid lumps in your sauce, stir constantly as you slowly pour the milk in and keep stirring once the milk is all added. If necessary, switch to a switch to get rid of stubborn little lumps!

    • Plenty of sauce Because I like my Mac and Cheese saucy, not dried up so you can cut it like cake!

    • Can you make Mac and Cheese ahead of time? Most recipes are not suitable for making ahead, but this recipe is! The best way is to cool pasta then toss with sauce and adding breadcrumb topping. Cool, refrigerate or freeze then bake on the day of .

    • How long can Mac and Cheese stay in the fridge? Unlike most, this Macaroni Cheese recipe is good for 3 to 5 days in the fridge. Most Mac and Cheese will not keep well because theres not enough sauce so it gets absorbed by the pasta and youre left with dry, sauceless pasta.

    • Freezing? Yes! Assemble, cool, do not bake, just freeze it. Thaw then on the day of, bake per Note 5 in the recipe.

    • Add ins? This recipe is great as it is, but theres tons of add-in options. Add shredded chicken, sautéed onion and bell peppers/capsicum, bacon, hot sauce , dried herbs of choice.

Cooking Tips For Baked Mac And Cheese

    • Boiling the pasta cook the pasta less than you normally would. I like to boil my elbow pasta for between 4 and 5 minutes. The pasta will continue to cook in the oven, and you dont want it to get mushy.
    • Use room temp liquids if you can cold liquids generally take longer to thicken than warmer ones. I usually set my milk and half and half out while the water for the pasta is coming up to a boil.
    • The cheeses use your favorites! Our personal favorites are the cheddar and gruyere used in this recipe, but you can be very creative with the cheese selection here. Mozzarella, gouda, smoked gouda, swiss, monterey jack, colby jack, colby. There are plenty of reader comments down below the recipe that talk about the cheeses they used!
    • Shred your own I know its a pain, and its SO tempting to use the pre-shredded cheese in the bags. But those bags of cheese contain a starchy substance that keeps the cheese from clumping which also prohibits it from melting as well as it should.

Kasespatzle Recipe Traditional German Macaroni And Cheese

How to make Homemade Mac N Cheese | EASY Mac and Cheese Recipe

When I say Im making a Kasespatzle recipe, people look at me funny. Like Im making up new words out of thin air.

Its a real thing, though. In fact, its a traditional German macaroni and cheese recipe. I wrote this recipe for my book, Melt: the Art of Macaroni and Cheese.

If youre looking for a hearty baked mac with crunchy sourdough croutons on top, check out this recipe.

Many folks believe that macaroni and cheese is a purely American dish.

Theyre surprised when I tell them that most European countries not only have their own versions, but that some of theses recipes appeared on the culinary map long before macaroni and cheese became popular in the United States.

The Italians, stalwarts of all things cheese- and pasta-related, combined these two ingredients into many a hearty dish, such as baked ziti and cacio e pepe.

The Swedes have their makaronipudding, a simple, stoic casserole of macaroni and any number of northern cheeses, such as Gruyère or Emmentaler.

The French quite possibly perfected cheese sauce with their lovely Mornay, sister sauce to Our Lady of Béchamel, expanding upon the basic roux and milk combination with a few handfuls of shredded cheese.

Aged Cheddar And Parmesan Team Up To Make Perfect Mac And Cheese

The sharper, more complex flavors of aged cheddar team up well with salty Parmesan cheese. This combo is amazing in grilled cheese sandwiches and the same goes for mac and cheese.

How To Make The Creamiest Macaroni And Cheese

Youre only looking at six ingredients . Itcan even be made in under 30 minutes .

I love that you can keep this as a quick stovetop mac and cheese or slide it into the oven to get bubbly and browned. I love it both ways.

Were going to call this our basic mac and cheese not because it isnt incredibly delicious, but because its the perfect base for other variations. Take a look below for some suggestions.

To make our go-to macaroni and cheese, you will need the following:

Pasta: The shape and size are entirely up to you. Look for pasta that will hold onto the creamy sauce. Elbow macaroni and shells are great options.

Butter and Flour: Its the combination of butter and flour that thicken the sauce. We like to use unsalted butter for this and then adjust salt to taste when making the sauce. That said, salted butter will work if that is all that you have.

Cheddar cheese: Whenever we make macaroni and cheese, we reach for sharp white cheddar cheese. Its flavorful and melts beautifully. For more cheese suggestions see our notes below. Whatever cheese you use, its best to grate it yourself. I know its extra prep time, but hand-grated cheese melts so much easier into the sauce.

Cream cheese: The mac and cheese would be excellent with just cheddar cheese added, but to make it ultra creamy, well stir in some cream cheese. It adds a lovely silky texture, and since it has a little zinginess, it brightens up the flavor a bit.

Whats The Difference Between Manwich And Sloppy Joes

    Macaroni and Cheese

Technically Manwich is a pre-made sauce thats used to make sloppy joes. Im not sure exactly whats in it, and have never tried it myself, so I cant say that my recipe tastes similar or not. Manwich is marketed as a easy way to make sloppy joes but in reality, homemade sloppy joes are JUST as easy to make!

    Finishing The Ultimate Make

Once the cheese sauce was ready, I added the cooked macaroni. I stirred the mixture until the macaroni was nicely coated.

Then, I poured the macaroni into a greased casserole dish.

I topped the macaroni and cheese with additional Cheddar cheese and sprinkled on the Panko breadcrumbs. Finally, I dotted the top with some butter.

At this point, I covered the macaroni and cheese and refrigerated it for the next day. I could have gone ahead and baked it at this point as well.

The next day, I baked the macaroni and cheese in a 375° F oven for about 45 minutes. After 45 minutes, it was hot and bubbly, and the top was golden brown.

The Ultimate Make Ahead Macaroni and Cheese was out of this world. It was creamy, cheesy, and full of flavor. Yum!
