Daiya definitely has a presence in the online vegan and dairy free communities. Its original blend is readily available in most stores and decently priced, making it an easy and usually first choice for many.
However, the original blend has a strong, almost overpowering taste that many admit to not liking. While I do think that adding it to pizza tames down that taste a bit its still not a favorite for us.
Neither had a big stretch, but the original had more of a stretch than the cutting board blend.
But hold on. The new cutting board blend series is completely different. These shreds actually mimic mozzarella cheese, melt well, and taste really good.
Believe it or not, most commercial restaurants that have a vegan cheese like Mod Pizza or Blaze Pizza, actually are using this Daiya cutting board blend.

Despite trying out 10 different brands, we know that there are even more out there. We just didnt find them local to us. The brands that we did find and try are:

I will be upfront that we had tried a few of these before. Specifically, we had tried both of the Daiyas, Trader Joes, and Aldis. We had tried a different shredded flavor from Violife also.

What We Looked For
Vegan: All entries were strictly free from dairy and animal products.
Taste: We looked for a vegan cheese alternative that tasted as close to the dairy version of each cheese type as possible. Specifically, we looked for creaminess, saltiness and acidity, as well as a cheesy aroma.
Texture: We looked for a vegan cheese alternative that was as close in texture as its dairy version. We looked at whether they cut or grated the same as regular cheese, and how they felt on the tongue.
Cooking: All the vegan mozzarella alternatives were melted under the grill to see how they acted when cooked. We looked for a texture as close to melted mozzarella as possible, and for the flavour to remain unaffected after cooking.

What Affects The Amount Of Lactose In Cheese
“Most cheeses are naturally lactose-free or contain very low levels of lactose since the cheese-making process involves separating milk into whey and curds,” Meyer says. “Most of the lactose is found in whey, which is removed, and cheese is made from curd. Lactose levels are also affected by fermentation and time. Any remaining lactose is transformed into lactic acid via fermentation. The longer a cheese is aged , the less lactose it will have.”
Fineberg adds that the way a cheese is processed and the type of milk used can affect the lactose content in the cheese. “Cheese has much lower lactose levels than other dairy products because much of the lactose is lost in the whey ,” she says. “Aging cheese can further reduce the lactose levels because during the fermentation process, bacteria turns the lactose to lactic acid. Additionally, in terms of the type of milk used, goat’s milk has slightly lower levels of lactose than cow’s milk.”

In fact, you can make lactose-free cheese yourself. All you need is lactose-free fresh milk , salt and vinegar essence. This is how you produce a kind of mozzarella. Boil the milk with the salt in a pot. Remove the pan from the heat and stir in the vinegar essence. Stir a little and let it rest for 10 minutes. Then put a fine-mesh sieve in a bowl and a fine-mesh cloth in it. Pour the mixture into the sieve and close the cloth tightly.
This way you can press out the whey. Then leave the cheese in the cloth and in the whey for an hour. Now the cheese is actually ready. Take it out of the cloth and you have made your first lactose-free cheese. You can also leave it to mature for a while, which will make it even more aromatic.
