Is Monterey Jack And Pepper Jack The Same Cheese

Homemade Pepper Jack Cheese

However, Monterey Jack and Pepper Jack are not the same cheese. The reason for that is that even though they share the same basis, Monterey Jack is simply just that, just the plain cheese with nothing added.

On the other hand, Pepper Jack is made by mixing the original Monterey Jack with some additional flavors usually sweet peppers, some herbs, garlic, and jalapeñso. Every Pepper Jack recipe is a little bit different, though, so this may vary a bit.

Monterey Jack Cheese Recipes

The Monterey Jack cheese taste is slightly mild, making it a perfect cheese to be used in line-up of tasty meals. Here is some inspiration that I am sure you will love:

We had to include pepper jack cheese at the top of our list.

If you are a cheese lover, you have probably had pepper jack at some point in your life.

This cheese is a blend of Monterey jack cheese with a mix of peppers and spices.

Each pepper jack you try will probably be slightly different, but they all will have a similar characteristic of a smooth base cheese with a kick of spice.

Pepper jack cheese can be eaten on its own as it is not painfully spicy, but it makes a great grilled cheese or nacho as well.

We love how easy it is to find Pepper Jack, and it can be fun to taste the different varieties that are on the market.

Some will undoubtedly be spicier than others.

Another great feature of the pepper jack cheese is that it is moderately priced.

Most of the time, you can get pepper jack for the same price you can get a cheddar or mozzarella.

Some of the fancier flavored cheeses will start to get quite expensive.

Form Curd Salt & Add Pepper

The dry curds can now be transferred to a colander or draining pan where they should be allowed to drain for a few minutes with a gentle stirring.

Add Salt while still in the draining colander as soon as the curds have drained well. Your final cheese weight should be about 2.5-2.75lbs. Adding 2.5% salt to this would be just about 1 oz. of salt. Add this in 2-3 doses and stir in until it absorbed by the curd.

If making one single cheese, you can add the pepper directly to the drained and salted curds and stir well before transferring to the cloth lined molds.

Here I am making two cheeses with different peppers , so I drain the curds first and then add to the molds in layers for each separate form. I mix the additions in well as I go. In either case make sure the additions are mixed evenly into the cheese.

Cut The Curd And Stir It

Once the curd is good enough, start separating the solids and the liquids. Cut it vertically in a checkerboard pattern for the cheese then allow it to rest for three to five minutes until the whey starts rising and floods the surface. This ensures the fresh cut surfaces become firm enough making them more resistant to breakage when you start making the horizontal cuts into the curd.

Using either a spoon or ladle start making the horizontal cuts. Make sure the final curds are about a half an inch in the end. Allow them to settle for about three to five inches so that theyre firm enough then start stirring gently from bottom to the top so that the curds remain moving and stay separated.

Keep in mind that at this moment they are fragile. As they keep moving in the warm whey, set the temperature back to 88F in case theres a temperature drop and keep stirring for another ten minutes.

    What Is Monterey Jack

Sargento® Sliced Pepper Jack Natural Cheese, 24 slices

This mild, meltable cheese originated when Franciscan monks brought their recipe for queso del pais, a fresh, white cheese, to Californias Monterey County in the 18th century. Commercial production of Monterey Jack began in the 1850s and is often attributed to Scottish immigrant David Jacks, who marketed the product as Jacks Cheese. By the 1880s, Jacks had 14 dairy farms across California producing the cheese. Today, Wisconsin is also a significant producer of this style of cheese.

At the start of World War I, imported Italian cheeses were no longer available in the United States. In response, cheese purveyor D.F. DiBernardi developed the recipe for Dry Jack to act as a substitute for hard, flavorful grating cheeses such as Parmesan and Grana Padano.

    Why Add Peppers To Cheese

Yes, why add peppers. Well I could just say that we do it because the Italians have been doing this forever but there is a real reason why they work so well.

Peppers in general have a strong spicy flavor often referred to as ‘picante’. This is due to a compound group that causes a ‘thermogenic’ effect. This means that they increase the body temperature and thus increase your metabolism .

In hot peppers this is the naturally occurring ‘capsaicin’ and in black pepper it is ‘piperine’.

Three of the most important qualities associated with the use of peppers in cheese are that:

    • These compounds are easily soluble in the fat of cheese and thus disipate the heat of the peppers so that the flavor of the pepper can shine through. They are not soluble in the water phase.
    • Cheese contains casein which tends to bind to capsaicin and relieves the heat sensors. This also promotes the focus on flavor from the peppers and lessens the heat effect.
    • They are both antimicrobial and antifungal and tend to inhibit growth both inside and on the surface of cheese.

If you have ever tackled that super hot habanera sauce that your friends challenged you to,someone may have offered you a glass of milk as your face turned that third shade of red… Yes, it was the fat and protein in the milk that took the heat away.

If you recall, about a year ago I made the cheese ball rolled in black pepper , I still have one of those aging in my cave and still nothing grows on the surface.
