My favorite blend of cheese for baked macaroni and cheese is extra sharp cheddar and Gruyere , but you can try it with other two other types of smooth melting cheese such as:

  • Monterey jack
  • American
  • White cheddar

Then keep in mind some of those cheeses are more mild then others like mozzarella for instance in which youd want to add some bold parmesan or romano cheese. You can also just use all sharp cheddar here.

Also keep in mind not all cheeses are created equal. Ive listed the brands of cheese I like to use here. Cracker Barrel cheddar melts smoothly and has a great flavor, and I like that Murrays Gruyere has a stronger flavor than some other brands.

Baked Mac & Cheese Ingredients:

  • Pasta I use Cellentani pasta, because it has texture and is great at capturing all of the melty cheese. If you cant find cellentani any cut of macaroni type pasta or shells will work.
  • Butter either salted or unsalted.
  • Flour just general all-purpose.
  • Milk/Cream Either half & half or whole milk. I tend to use half & half. Its creamier and has a better flavor than whole milk, but less fat than heavy cream.
  • Seasonings & Herbs fresh thyme, paprika, salt, and pepper.
  • Cheese You cant have mac & cheese without cheese. I used a blend of cheddar, gouda, meunster, fontina, and mozzarella. This blend of cheeses works so well. They balance and compliment each other. Do you have to use this blend? No! Feel free to mix it up and get creative.

White Pepper Vs Black Pepper:

White pepper and black pepper are both the fruit of the pepper plant. They are processed differently which causes the change in color, and end up tasting slightly different. White pepper is hotter than black pepper, but black pepper has a more complex flavor. White pepper tends to have more floral and earthy notes to it.
