The Swedes have their makaronipudding, a simple, stoic casserole of macaroni and any number of northern cheeses, such as Gruyère or Emmentaler.

The French quite possibly perfected cheese sauce with their lovely Mornay, sister sauce to Our Lady of Béchamel, expanding upon the basic roux and milk combination with a few handfuls of shredded cheese.

    Overall, I was most impressed with the cream cheese, cheese, greek yogurt, and sour cream. These are universal options most people will like.

    Some of them, such as pumpkin puree or peanut butter, added a unique flavor. Great if you like that flavor but not so great if you dont.

    Ive tested this recipe more times than Id like to admit, and through all those trials and errors, Ive come up with a few helpful tips.

    • Spray the crockpot. I know it might sound weird, but it really helps keep the pasta from sticking too much to the bottom of the slow cooker.
    • Use the right liquids. For most of my attempts, I was using regular, whole milk, and every time it would thicken way too much and sort of seize up on me. Ive found that a mixture of chicken broth, evaporated milk, with a little heavy cream for richness, yields the best creamy sauce.
    • Grate your own cheeses. I know I know. Its SO tempting to open a bag of pre-shredded cheese from the store and Ive done it on occasion. But most commercial pre-shredded cheeses are coated in cellulose, which essentially keeps the cheese from all clumping together in the bag. Ever noticed how bags of pre-shredded cheese that are coming up on their expiration date usually have clumps of cheese stuck together inside? Its because the cellulose is just about gone from the cheese. That coating prevents the cheese from truly melting down into a gloriously gooey cheese sauce, and can leave your sauce a bit on the gritty side.

    Youve been asking for it, and Ive been working on it this is the Instant Pot Mac and Cheese that will make your mouth completely water, and have you reaching for seconds.

    This mac and cheese is just as easy as making that macaroni in the blue box but is SO much better for you. No preservatives and other hard to pronounce ingredients. Just pure cheesy goodness!

    When I was developing this recipe, I used cheeses that I found melted really well, and gave a good classic mac and cheese flavor, however, Ill also be detailing different cheeses you can use if you prefer another mixture.

    Making The Cheese Sauce

    Make the cheese sauce while the pasta is cooking. The box will indicate how much milk and butter to use. Put this in a pan with the powdered cheese and heat over medium-low to medium heat. Stir frequently. You want to heat it to the point the butter is melted and its fully combined. Next remove it from the heat and add 1 cup of shredded cheese and 1/4 cup of milk. Mix together and set aside for now.

    Putting it all together

    Once the pasta is done pull the strainer out of the water to drain the pasta.

    Pour the pasta into your slow cooker. Pour the cheese sauce over the pasta and mix.

    If you need to make another batch of two boxes just repeat using the already hot water.

    Keeping the mac and cheese warm

    Remember to put the slow cooker on warm. You can do that a little in advance if you want.

    To make ahead and serve later, ensure that your pasta isnt overcooked. Err on the side of a little firm rather than too soft, as it will continue to absorb some of the sauce in the fridge.

    Store up to 4 days in the refrigerator, tightly covered.

    To reheat, add a big splash of water, milk or broth and place, covered, over low heat on the stove. Stir occasionally. If it is still thick and not saucy and creamy, add in another splash of liquid.

    Mac and Cheese is worthy of serving as a meal in its own right, served with just a fresh green salad or simple vegetable side. Nothing heavy because Macaroni Cheese is so rich as it is!

    As a side dish, it will compliment virtually any non-Asian main dish. From simple Baked Pork Chops to Steak, a Roast Chicken to Crispy Garlic Chicken Thighs, the only things I probably would not serve with Mac and Cheese would be very light summery mains such as a Tuna Tartare just a little too much contrast.

    And of course, festive gatherings! Thanksgiving, Christmas, Easter alongside a grand Roast Turkey or your Herb & Garlic Butter Slathered Turkey Breast, the juicy Roast Pork with impossibly Crispy Crackling or your Prime Rib thats so perfectly blushing pink all the way through, it makes you want to weep.
