Healthier Kraft mac and cheese is possible. I am not sure if it is advisable but you can do it.

I wrote a post about this years ago and I decided to update it because it seems to be popular. Why? I think it is because we are all looking for comfort and the bright orange and blue box for $1 is an easy source.

Since I created this recipe, Kraft has dropped artificial dyes but this stuff retains that bright orange color. There was a whole grain version as well, but I couldnt find it at my store.

I did a review of macaroni and cheese boxes to see if I could find a healthier version. I didnt like any of them. My son likes Annies as he says it tastes better than Kraft.

The only cooking skill Kraft Mac and Cheese requires to make it is boiling water. My teenage son and daughter will make this every day for lunch.

I am not a fan for a couple of reasons. First – this:

Dehydrated cheese in a packet! Does this seem like real food to you? I think this belongs on the space station. Give me a real slice of cheese over this any day of the week.

Second – this:

Isnt that interesting? If you look closely, the 260 calories is per 2.5 ounces and it is when it is unprepared. Who sucks down the cheese packet and crunches on the uncooked macaroni?

When you prepare it – which is 1/3 of the box :

360 calories, 12 g fat, 4.5 g saturated fat, 49 g carbohydrates, 9 g sugar, 10 g protein, 2 g fiber, 710 mg sodium, 12 Green, 12 Blue, 12 Purple WW SmartPts

Velveeta Shells & Cheese

Don’t let Velveeta fool youwhile this mac and cheese is made with a packet of cheese sauce, it’s not necessarily healthy by any means. From the 12 grams of fat and the ridiculously high amount of sodium, it’s best to leave this “liquid gold” on the shelf. Keep in mind this is just one serving! You’re much better off trying your hand at making your own mac and cheese from scratch.

Copycat Kraft Macaroni & Cheese Dinner is better for your wallet and tastes like it came from the famous blue box, but without the taste of a cardboard box.

I know, I know, but there are so many people who love the boxed stuff and have asked me how to cook it in a Pressure Cooker. Well, here is your chance to make a Copycat Kraft Macaroni & Cheese Dinner, on the Stove Top or in a Pressure Cooker, in larger portions, without the Blue box that has been sitting on a shelf for who knows how long.

While, this Copycat Kraft Macaroni & Cheese Dinner still isn’t as homemade as my Instant Pot or Pressure Cooker Macaroni and Cheese, or my Pressure Cooker Creamy Mexican Macaroni and Cheese, it is still cheaper than using the Blue Box. Plus, you can make a whole pound of macaroni, if you like.

At the very least, you now have the Pressure Cooker method to make a box of Kraft Macaroni & Cheese. So, here we go

Cast of Ingredients for Copycat Kraft Macaroni & Cheese Dinner

If you can, get the De Cecco brand of Elbow Macaroni. It holds up much better in a Pressure Cooker and is more forgiving than most of the other brands.

Hoosier Hill Farm Big Daddy Mac tastes pretty identical to the Kraft Mac & Cheese Dinner, as the ingredients are quite similar they did a great job with the recreation and recipe! I like the products from this company, as they are always fresh and very tasty. The Hoosier Hill Farm Cheddar Cheese Mix is what I use too.

How To Make Healthified Boxed Mac N Cheese

This really isnt going to be all that different than making a box of mac n cheese as you normally would, but the important difference is boiling broccoli with the noodles.

I find 7 minutes to be the magic cooking time for both the noodles and the broccoli, but feel free to adjust to your liking.

Drain the noodles and broccoli when theyre done, stir in cottage cheese and the cheese packet, and thats it!

Depending on your cottage cheese, you may want to add in a little milk to make it creamier. If you do, just do 1 tbsp at a time until you get the consistency you like.
