I get asked that a lot and my answer is always no. As the pasta and cheese sauce sit, it will thicken and when you thaw it and bake it, the creamy consistency is just gone. Its thick and gloppy. Plus if you freeze it and its still a bit warm, water crystals will form and then thaw into your dish and could make it separate when you bake it. Besides, its so fast to make, theres not really a reason to freeze your macaroni and cheese.

How To Avoid Grainy Cheese Sauce:

  • The type of cheddar makes a difference. High quality aged cheddar cheese will give you a stronger taste and smoother texture. More mild and inexpensive cheddar cheeses will have less flavor and almost a grittier taste.
  • Use fresh grated cheese. Pre-shredded store-bought cheese will not melt the same as freshly grated cheese, and grating the cheese helps it melt smoothly and evenly in the sauce.
  • Bring the cheese to room temperature. I like to grate the cheese very first, before moving forward with the recipe. That allows it to sit at room temperature while I prepare the white sauce.
  • Use low heat. In order for the cheese to melt properly and smoothly we want it to have gradual changes in temperature . When its time to add the cheese to the white sauce, remove the sauce from heat and let it cool for a few minutes. It only needs to be warm enough to melt the cheese.
  • Dont over-stirthe sauce once the cheese has melted. Add the noodles and quickly assemble in pan and put into the oven.

This recipe is the best because its SO easy to make. No fussing with making a roux or a cheese sauce.

Here are the simple steps:

  • Preheat oven and spray a baking dish with nonstick cooking spray for easy clean up.
  • Cook pasta as directed on the package for al dente texture .
  • While the macaroni cooks, combine most of the cheese with the flour, ground mustard, and pepper.
  • When the pasta is cooked and drained, mix it with the cheese mixture.
  • Place in greased pan, and pour milk over macaroni. Top with remaining cheese and dot with butter. Cover with foil.
  • Bake for 45 minutes, taking foil off after 30 minutes if desired for a crisper top.
  • Most milk should be soaked up by the time it is done cooking, but we find it best to let this sit for about 10 minutes before serving.

    How To Freeze Cooked Macaroni And Cheese

    Step 1: Cool Completely

    Leaving your warm mac and cheese at room temperature for too long places it at risk for harmful bacterial growth. The safest way to cool your warm mac and cheese dish is by placing it in an ice bath.

    Pour ice water into a flat pan or dish which is wider than the mac and cheese serving dish. Fill it only one-third of the way with water and a few ice cubes. Place your macaroni dish in the ice bath so that the base is surrounded by the ice water and cools down quickly.

    Leave the dish in the ice bath for at least 5 minutes, until cool to touch or near room temperature. Dont ever place mac and cheese that is still warm in the freezer. The steam forms ice-crystals which will ruin the texture of the dish once thawed.

    Step 2: Portion

    If you are freezing the dish in its entirety, skip this step and go straight to step 3. Portion the mac and cheese into individual servings so that you do not have to defrost the entire batch at once and can take out just as much as you need at a time.

    Step 3: Wrap and Seal

    For smaller portions, scoop each portion into a resealable freezer bag. Lie the bag flat and press out all the air before sealing.

    If you are freezing an entire casserole, make sure the dish you have baked your macaroni and cheese in is freezer-friendly. Cover the whole dish twice with cling film, making sure that all the corners are well-sealed and that no gaps are left open where air can enter.

    • Start with blocks of cheese that you grate yourself at home, rather than using bags of pre-shredded cheese from the store. The pre-shredded cheese includes stabilizers and other ingredients to prevent the cheese from clumping, which inhibits its ability to melt smoothly in the dish.
    • If you prefer a crispier, darker brown top on your mac and cheese, place the dish under the broiler during the final minute or two of baking. Just be sure to keep a close eye on it so that the bread crumb topping doesn’t burn.

    This is your classic mac and cheese there are no surprises here and theres no fuss at all. Its simple, its quick, and its completely made from scratch.

    Its perfectly cheesy without being too gummy, and the crunchy tops are just to die for before you get into that creamy heaven underneath.

    You can of course choose to bake these in individual ramekins to avoid any kind of sharing or you can dump the entire mixture into a 2-qt baking dish.

    Either works. Its just that sharing can be a bit difficult on this one.

    How To Make The Crispy Topping

    I decided to use panko breadcrumbs for this crispy topping because the texture of them cant be beat. Theyre so light!

    But they also need a little help to get nice and golden.

    Grab a skillet and melt a couple more tablespoons of Challenge salted butter. Add in the panko and toast, stirring constantly, for 2-3 minutes until the panko is golden brown.

    Keep a close eye on the panko, though, and definitely dont walk away we want the breadcrumbs to be golden, not burnt!

    As soon as the panko is beautifully golden, immediately remove the pan from the heat and sprinkle the breadcrumbs over the mac and cheese. Bake the whole thing for about 30 minutes or until the tops and edges are golden brown and delicious.
