So, these keto mozzarella sticks taste best when they’re freshly cooked. And honestly, they’re usually gone before you can even think of storing any leftovers!

That being said, you can store any remaining mozzarella sticks in an airtight container in the refrigerator, where they’ll last for around 7 days.

You can also keep them in the freezer for as long as 8 months before they start to lose their texture. When you’re ready to reheat your low carb sticks, bake them in a 350°F oven for 10 about minutes or until they reach your desired temperature.

And you can even prepare and freeze the uncooked mozzarella sticks ahead of time – you’ll just want to fry them within 3 days after freezing.

How To Make This Keto Friendly Recipe

Prep + Freeze

  • Cut string cheese in half crosswise. Prepare 3 small bowls: one with whisked eggs and cream, one with coconut flour, and one with the remaining ingredients of pork rinds, almond flour, and seasonings.
  • Dunk cheese in egg wash, then in coconut flour. Dunk back in egg wash, then pork rind crumb mixture. Transfer to a parchment-lined baking sheet and freeze for at least 2 hours. If you have time, freeze them overnight.
  • Cooking time!

  • When its time to fry, heat avocado oil in a 10 or larger cast iron skillet . You will need enough oil so that its about 2 inches deep in the skillet. You want the oil to reach 375°F before frying the cheese sticks.
  • Once the oil has reached the proper temperature, add the cheese sticks in small batches to avoid dropping the temperature of the oil too quickly. You will want to maintain an oil temperature of between 350°F 375°F the entire time the cheese sticks are frying. These fry quickly, about 3 minutes in total to get all sides crispy and golden brown. You want to work fast to avoid heating the cheese inside for too long, or else the cheese inside may begin to leak out and burst.
  • Once fried, transfer to a paper towel-lined plate to drain off extra grease. Make sure to allow the oil temperature to return to 375°F before continuing with the next batch. Garnish with basil or parsley and serve with marinara, ranch or your favorite dipping sauce.

    Lets be honest, mozzarella sticks are the best when eaten right away. They dont really store too well. But if you really want to save some leftovers, put them in an airtight container and keep in the fridge. They will only last a couple of days, but I doubt you will be able to resist that long anyway!

    The key to the perfect fried cheese sticks turns out to be a double breading + freezing before frying. This ensures that the mozzarella sticks dont burst in the hot oil and that the breading stays put as well. Follow the instructions and these will be the best cheese sticks youve ever had, promise.

    Do I Have To Fry Them

    There are a few different ways to cook your homemade mozzarella sticks. Personally, my favorite way is to pan-fry them in olive oil or coconut oil, I just really love certain things fried but sometimes I dont like doing the actual frying, so when thats the case I know I have other options.

    Just remember though that an important step is to freeze the mozzarella sticks them before cooking them.

    Baking Bake them at 400 degrees for only about 5 minutes. Keep an eye on them, because they might need to be turned in order to get them browned on all sides. Keep in mind though that they may not get as brown and crispy as they would if they were fried.

    Air Fryer Place the mozzarella sticks at the bottom of the air fryer basket. Air fry on 400 degrees for about 5 minutes or so. If they arent crispy enough, set the timer for another 5 minutes.

    Pan Frying Turn the stovetop burner onto about medium-high heat. Wait until the oil is hot then add your cheese sticks. Fry for about 1-2 minutes on each side. Be careful not to keep them in the pan too long, otherwise, the cheese will start to ooze out. If your oil is too hot, then the outside will get too crispy without the cheese melting on the inside.

    Dude Whats Up With The Smell Of Pork Rinds

    If you are new to using pork rinds for cooking, Im just going to say it they dont smell good. In fact, I very much dislike the smell.

    BUT the taste is nothing like the smell. They dont taste bad on their own at all, and when you combine them here with parmesan and seasonings for breading youll be shocked at how reminiscent this recipe is to your favorite pub-style mozzarella sticks.

    How To Prevent The Cheese From Melting Through The Coating

    The problem I had in making these cheesy treats is that they kept melting when cooked.

    It helps to freeze them for at least an hour first, but you may still ended up with a gooey cheese mess.

    It was a conversation with one of my coworkers that finally led to solving the issue with how I was cooking the keto mozzarella sticks.

    Best Method For Cooking

    I’ve tried multiple methods of cooking these low carb mozzarella sticks and deep-frying or pan-frying seems to work best. The cheese stays in tact and does not leak out. The crust on the outside also crisps up nicely and provides a nice crunch.

    The air fryer does work to some degree, but they tend to leak if you overcook them. They’re pretty easy to overcook. If you do try to cook these in the air fryer, I suggest doing so on parchment paper. Otherwise, they may melt through your basket and make a mess in the bottom of your air fryer.

    When baked in the oven, these did not hold up too well, either. They melted into delicious piles of cheese goo that I still happily gobbled up with a fork.

    How To Make Gluten

  • First cut the cheese sticks in half, mix together the almond flour breading, and whisk the eggs. Line a baking sheet with parchment paper.
  • Roll the cheese in the breading mixture, coat in the egg, and then dip again in the almond flour / parmesan.
  • Place on the prepared baking sheet and freeze until solid at least 1 hour, or until ready to fry.
  • Use a large deep skillet filled with at least 1 1/2 inches oil so the mozzarella sticks dont stick to the bottom as they cook. Heat the oil to 350ºF to properly cook the exterior crispy while the cheese melts and stays inside.
  • Cook about 6 cheese sticks at a time, flipping to brown all sides evenly. Serve immediately.

    Can You Make Them In An Air Fryer

    Yes, you can! I recommend using the same method as these air fryer mozzarella bites. Youll just need to swap the high carb breading with the kind in this keto mozzarella sticks recipe instead.

    However, if you want to bake the mozzarella sticks, you absolutely can and they are still delicious just not quite as crispy.

    Ok, so, if you would prefer to have air fryer keto mozzarella sticks, you can make them pretty quickly – it will take around 5-6 minutes for the cheese to reach that ooey-gooey, stretchy consistency that makes mozzarella sticks what they are.

    Follow the same instructions up until step 3. Then, set the air fryer to 380°F and cook for – as I just mentioned – 5-6 minutes.

    Having said that, you’ll want to check them every few minutes to make sure they don’t overcook. You’ll know they’re done once the cheese starts to pop out from underneath the breading.
