While it has been shown frozen veggies retain more nutrients than their fresh counterparts , pre- frozen cauliflower is not the best option for this recipe. When a vegetable is frozen the water molecules expand and push on the cell walls, stretching them out and causing the water based vegetable to go mushy . Thats why its best to stick to fresh over frozen cauliflower for this recipe.

This keto mac and cheese recipe really only requires three easy steps: boil the noodles, make the cream sauce, bake the mac and cheese. Simple, delicious and comforting.

In a large pot, boil the pasta for 7-8 minutes . Drain and set aside. In a medium saucepan, melt the butter over medium heat, add the cream and sour cream, then turn it to low and stir in the cheese and seasonings.

How To Make A Low Carb Quiche
ALMOND FLOUR CRUST
Preheat the oven to 180C / 350F electric or 160C / 320F fan assisted. Line the bottom of a 9-inch pie dish with parchment paper and grease the sides really well.
Place the almond flour and salt in a food processor and pulse briefly. Add the butter and egg and pulse until the mixture forms a ball.
Alternatively, stir together with a fork, then knead.
Press the dough into the pie dish and prick the bottom with a fork multiple times so it does not bubble up.
Bake for 10 – 12 minutes until slightly golden, then let cool.
Note: Many recipes recommend blind-baking the crust weighted. This means that you line the crust with parchment paper and add weights such as rice or beans into the middle to help the dough keep its shape when par-baking. I did not do this and still had no issues with the crust bubbling up. I think as long as you prick the dough with the fork you can avoid this extra step.
FILLING
In a large skillet over medium heat, sauté the onion and garlic in olive oil for 2 minutes. Add broccoli and sauté a further 3 – 4 minutes until al-dente. Set aside to cool.
In a large bowl, add the eggs, heavy cream , almond milk, cheddar cheese and gruyere, mustard, pepper, salt and thyme. Whisk to combine and set aside.
Once the broccoli has cooled, add it to the egg mixture and stir to combine.
ASSEMBLE:
Turn the oven up to 200C / 400F electric or 180C / 350F fan assisted.
Pour the egg mixture into the pastry and bake for 35 – 45 minutes until it has set.

This is an important concept in low carb and Keto diets, so its best to understand the idea behind it. The way we calculate net carbs is to take the total amount of carbohydrates in a food and subtract the fiber because our body can’t digest it or get any energy from it. It passes right through you, without making a dent in your low carb diet. - This keto and mac cheese recipe features white cheddar, but the great thing about the ingredient list is you can easily swap in your favorite cheese varieties. If you don’t have Gruyére, substitute grated mozzarella cheese or regular cheddar. If you prefer a more mild white cheddar flavor, you can use half cheddar and half white cheddar. Change it up to your liking and enjoy!
- The crispy topping is optional. If you feel like skipping that step, simply bake the low-carb mac and cheese until it is hot and bubbly, about 15 minutes.
- To crush pork rinds, place several in a Ziploc bag, then use a rolling pin to break them down into crumbs. Save any extra in the pantry for another use!
- The cheese sauce is pretty rich . The best way to adjust this is to taste the sauce and either add more almond milk to mellow it out, or a little bit more heavy cream to make it extra rich.
