This Mac and Cheese is easy to make on the stovetop and its ready in just 15 minutes. Skip the box and make the good stuff!

Its easy to make your own delicious mac and cheese at home in under 15 minutes. Boil your pasta in one pot and in another make a simple cheese sauce. The sauce starts with a traditional roux . Salt, white pepper, onion powder, and ground mustard are whisked in to add flavor. Milk is then poured in and as it comes to a simmer the roux slowly mixes in. The roux acts as a thickening agent and just as small bubbles appear for the simmer, your mixture should already be thickened. The heat is turned off, shredded cheese is stirred until melted, and then all that is left to do is stir in the drained al dente pasta from your other pot. Youll never use a boxed mix again!

How To Measure Pasta For This Recipe

Macaroni and Cheese Recipe | How to Make Mac and Cheese

Sometimes a reader or two has had an issue with how much pasta this recipe needs. This recipe is written by volume and sometimes people think that since a cup is 8 ounces that they can simply use 12-16 ounces of pasta or go by the weight of the dry pasta written on the box.

Youll end up with problems if you do this. Please follow the volume instructions and measure your pasta dry in a measuring cup meant for dry items . Small pastas like ditalini or little wagon wheels can go up to about 2 cups and be fine in the recipe, and large ones like bow tie or cellentani can as well. If you will stick to elbow pasta until you get the hang of things youll be better off.

Ive made this recipe with every pasta shape on the market and if you will measure in cups, your recipe will be just right.

Tips To Make Homemade Mac And Cheese

  • Cook your pasta al dente as the noodles cook extra in the sauce and you dont want them mushy.
  • Dont forget to salt your pasta water.
  • While not everyone agrees with rinsing the pasta after cooking, in this particular recipe it stops the noodles from cooking and the sauce is created with a texture that pairs perfectly with the rinsed noodles.
  • A sharper cheddar cheese will add a stronger cheese flavor.
  • Pre-shredded cheeses contain additives to keep it from sticking together which affects the way it melts. The sauce is best if you shred your own cheeses.
  • Allowing the baked macaroni and cheese to rest for a few minutes after baking will thicken the sauce.
  • Most importantly of allDo not over bake this recipe.

When cooking your macaroni noodles, cook them according to the package directions but you want them to be still firm. If your package says 6-8 minutes, just cook them 6 you get the idea. I choose not to top this baked macaroni casserole with a bread crumb mixture but if you really like bread crumbs on your macaroni and cheese, by all means, add some!

Ingredients & Possible Substitutions For Stovetop Mac And Cheese:

  • Butter: a fat is needed for creating the sauce. Oil can be used as a substitute if needed for dietary reasons, however, butter is recommended if possible for flavoring.
  • Flour: all purpose flour is used for creating the sauce, this makes the cheese sauce nice and thick. If needed some substitutions are: cornstarch, tapioca, flour, or a gluten free all purpose flour.
  • Milk: any type of milk will work in this recipe. Keep in mind that a dairy whole milk will provide a creamier sauce. You could also use a half and half
  • Cream Cheese: this ingredient is added to add stabilization to the cheese sauce. This helps prevent the sauce from breaking during reheating if there are leftovers. It also creates a smooth, creamy finish to the sauce. If needed it can be left out but keep in mind that reheated leftovers will be a bit greasier.
  • Cheese: Use your favorite cheese! A blend of cheeses using a sharp cheddar and parmesan is a great blend. Other options would be to use a gruyere, or a sharp white cheddar.
  • Seasonings: use more or less to taste.

  • In under 20 minutes, youll have rich cheesy mac and cheese for one, portion-controlled and so good you could cry. And if you are feeling extra hungry or want to make it for two or more, the recipe sizes up with just a slightly longer cooking time .

Making Mac And Cheese Ahead Of Time

    • Make as directed , transfer to baking dish and cool completely. Cover tightly with foil and refrigerate 1-2 days ahead.
    • Before baking, let dish sit on counter for 30 minutes.
    • Bake at recipe temperature for 25-35 minutes, until hot and bubbly.

As a caveat, this recipe, as with most mac and cheese recipes, loses some of its creaminess when made ahead. This dish has been tested when made right away, which yields the best results.

I would increase the amount of sauce slightly if you need to make this recipe ahead of time.

    Choose Your Cheeses Thoughtfully

You might think you can just throw whatever cheeses you happen to have in the fridge into your mac and cheese, and, to a certain extent that’s true. But if you’re looking to make the creamiest mac and cheese you possibly can, you’ll want to be a little more discerning. A cheese like Parmesan, for instance, isn’t going to melt super well, meaning it’s better for a topper than for your creamy cheese sauce. Cheddar and similar cheeses that melt well will make your sauce the creamiest it can be.

The leftovers from this mac and cheese recipe need to be refrigerated. Let the leftovers cool completely, cover, then refrigerate for up to 3 days. For optimal texture, add enough milk to thin the sauce before packing up the leftovers, that way you can easily scoop out a portion to reheat, and the milk will meld into the cream sauce as it reheats.

    • Plenty of sauce Because I like my Mac and Cheese saucy, not dried up so you can cut it like cake!

    • Can you make Mac and Cheese ahead of time? Most recipes are not suitable for making ahead, but this recipe is! The best way is to cool pasta then toss with sauce and adding breadcrumb topping. Cool, refrigerate or freeze then bake on the day of.

    • How long can Mac and Cheese stay in the fridge? This Macaroni Cheese recipe is good for 3 to 5 days in the fridge. Most will not keep well because theres not enough sauce so it gets absorbed by the pasta and youre left with dry, sauceless pasta.

    • Freezing? Yes! Assemble, cool, do not bake, just freeze it. Thaw then on the day of, bake per the recipe.

    • Add ins? This recipe is great as it is, but theres tons of add-in options. Add shredded chicken, sautéed onion and bell peppers/capsicum, bacon, hot sauce , dried herbs of choice

Make The Cheese Sharp White Cheddar

If you’re looking for the smoothest, creamiest cheese sauce for the best macaroni and cheese ever, you’ll want to use sharp white cheddar. This cheese, according to , makes for the most luxurious sauce. Other kinds of cheeses can get gritty, stringy, or otherwise unappetizing, but not sharp white cheddar that one stuns every time. Plus, the flavor is the perfect compliment to your otherwise rich, fatty dish. The sharpness of the cheese will cut through the butter and cream flavors to round things out.

    Can I Use Pre

Pre- shredded cheeses are mixed with either potato starch, powdered cellulose, and natamycin or a combination of the three to prevent clumping. These agents have an impact on how the cheese melts. The best mac and cheese uses freshly shredded cheese as they melt better, but pre-shredded cheese can also be used as a time saver. The results may not be as velvety smooth, but itll still taste delicious.

What Are The Best Cheeses For Baked Mac And Cheese

As I mentioned above, the secret to creamy baked mac and cheese is Velveeta cheese! This American cheese just melts smoother than other cheeses and gives the sauce that creamy mouthfeel that we’re all looking for. I’ve found that an equal ratio of cheddar cheese and Velveeta cheese yields the best of both worlds — a smooth, creamy mac and cheese with plenty of rich, sharp cheddar flavor.

If you like a combination of other cheeses, you can feel free to replace some of the cheddar with other good melting cheeses. Try Gruyere, Pepper Jack or Monterey Jack, gouda, smoked gouda, Swiss or mozzarella. The options are endless, so pick your favorites!

    Be Careful With The Roux

Do you love mac and cheese? Did you know you can make it ...

Though a roux is important for thickening up your cheese sauce, you want to make sure that you don’t add too much of your flour and butter mixture because otherwise the sauce can get too thick, which negatively impacts the creaminess. Too much butter and flour will make your sauce more like glue than a creamy, rich sauce.

Noodles with ridges are always a good choice: cavatappi, cavatell, rotini, and even penne are all good mac and cheese noodles.

So How Do You Make Homemade Macaroni And Cheese

  • Start with Butter. It is well-known how I feel about butter . It is the base of the sauce and gives off a nuttiness that is integral to the cheese sauce. The butter is melted in a large saucepan or pot, then flour is added, and whisked together to make a thick paste. This is what will give the cheese sauce the structure it needs.
  • Choosing the right CHEESE. What type of cheese should you use? A sharp cheddar cheese is always a good choice. It has the strong cheese flavor you are seeking and still melts nicely. Gruyere Cheese is also a nice choice but it can be pricey. If you are looking for a strong flavor and don’t want to shell out the cash, you can substitute with Swiss Cheese. Monterey Jack melts like a dream and has a mild flavor. If you want to up the spice factor, use Pepper Jack Cheese. You can sprinkle the top with parmesan for a sharp flavor as well.
  • It is important to add the cheese in increments, whisking well after each addition. This ensures the cheese melts in small batches so it doesn’t overwhelm the sauce. Another key is to layer the cheese. Cheese is added to the cheese sauce, and then once it is poured into a baking dish, more cheese is added to the middle of the dish. Of course, you need to top it with cheese as well. Basically, there is A LOT of cheese!
    • 1 1/2cupPanko Bread Crumbs
  • In a large pot, bring salted water to a boil. Add macaroni and cook according to package instructions. Drain.
  • Add salt, pepper, nutmeg, and dried mustard.
