Easy Vegan Blue Cheese Recipe

During this time of social distancing, I’ve been experimenting with making aged vegan cheeses. The first recipe I tried was a vegan blue cheese recipe from the book Vegan Cheese by Jules Aron. The process to make the cheese from start to finish took weeks, but the final result was indeed delicious. It was a fun experiment for sure, but if you’ve been following my blog for a while then you’ll know I’m all about making vegan cooking quick and easy. So I rolled up my sleeves and set out to make an easy vegan blue cheese recipe so you can enjoy this dairy-free delicacy without the weeks of prep.

Several rounds of recipe testing later and I figured it out! It might not be exactly the same as traditional blue cheese, but my version is creamy, tangy, got that funky kick to it, and even has the pretty green and blue veins throughout. However, because of its creamy texture, its more often compared to a thick yogurt, similar to Greek or skyr. Its also often likened to cottage cheese, however, it lacks the lumpy texture.

To make quark, milk that has been soured via the addition of acid is warmed until it curdles and then is strained before bacterial strains are added to ferment the lactose further. Next, its continuously stirred to prevent hardening and to give quark its signature thick and smooth texture .

As for its flavor, it can be best described as mild and neither sweet nor sour, meaning it lacks the tangy aftertaste of yogurt. So if youre not a fan of yogurt unless its smothered in honey to tame its sour power, quark just might be the stuff for you.

How To Make Vegan Blue Cheese Step By Step

  • Add cashews to a bowl. Pour over boiling hot water from the kettle so that the cashews are submerged. Leave them to soak for 1 hour.
  • After 1 hour drain and rinse the cashews.
  • Add soaked cashews, white vinegar, refined coconut oil, white miso paste, salt, onion powder, garlic powder and water to a blender jug and blend until smooth.
  • Divide half the mixture between two 4.5 inch round springform pans .
  • Sprinkle the top of each with spirulina.
  • Then divide the remaining mixture between the two springform pans placing it on top of the sprinkled spirulina.
  • Smooth down and sprinkle more spirulina on top.
  • Use a butter knife to gently and briefly swirl the spirulina through each cheese. You want to spread the spirulina through the cheese to create green/blue swirls. But dont mix it in, otherwise your whole cheese will turn green/blue.
  • Smooth down the top of each cheese.
  • Place it into the freezer to set overnight.
  • Then let it sit in the fridge for 1 hour before removing from the springform pans and serving.

The Key To Making Vegan Blue Cheese Taste Aged And Tangy Is The Right Combination Of Ingredients

  • Raw cashews: provide a smooth creamy base. If you cannot eat cashews, try blanched almonds or macadamia nuts instead.
  • Refined coconut oil: coconut oil becomes solid when cold so it helps this cheese firm up into a nice spreadable texture. No other oil will work here. Make sure you buy refined coconut oil which is flavourless, and not unrefined coconut oil which tastes strongly of coconut.
  • Apple cider vinegar: provides a sour tang.
  • White miso paste: makes this cheese taste like it’s been aged. I buy this in my regular grocery store, but Asian grocery stores, health food stores, or also carries it.

The thing is, Im certainly open to trying new foods, and Im excited to eat loads of cheese #winning. So here are the different types of cheeses I found, most are pretty widely available in most Supermarkets, other are a bit fancier and can only be bought online .

Roquefort Cheese Go With Roast Potatoes

If youve heard of blue cheese, you must know Roquefort cheese. This cheese is the most popular one in the marble family with a 100-year history.

Nobody knows exactly how the story of Roquefort cheese, but the Roquefort cheese process generally involves cave mold infestation.

The Roquefort cheese is exclusively produced in the north of rocky areas in Roquefort Sur Soulzon, France.

With strong, dry north wind constantly blowing through the rocky areas, caves in Roquefort Sur Soulzon are full of mold, which creates a perfect condition for blue cheese.

What makes this blue cheese substitute special is taking 13 liters of sheeps milk to make a cheese pan. After forming cheese curd, cheesemakers will leave the cheese in the cave uncovered for three months.

After the ripening phase, the French cheese will be wrapped in aluminum foil and sent worldwide.

To Make Easy Vegan Blue Cheese:

Soften the cashews: Add the cashews to a medium pot and cover with water. Put over high heat and bring to a boil. Boil for about 10 minutes until the cashews are tender. Drain and rinse with cold water. Alternatively, you can soak the cashews, by placing the cashews in a bowl, covering them with water, and allowing the cashews to soak for a minimum of 6 hours or overnight. Drain and rinse before using.

Both of these methods will soften the cashews making them easier to blend into a creamy texture.

Make the cheese base: Add the softened cashews along with the coconut oil, apple cider vinegar, miso paste, salt, onion powder, and garlic powder to a food processor. Blend, stopping to scrape the sides as needed until the mixture becomes as smooth as possible. It will become a bit sticky and will be warm from the friction.

Prepare your mold: Lining the mold with plastic wrap or parchment paper, or you can use a silicone mold. You can use any mold or dish you like, I used two of these mini springform pans to make two wheels of cheese.

Form the cheese: Scoop about ½ of the cheese mixture into the mold and spread out. Sprinkle about half of the spirulina across the surface. Add the remaining cheese mixture, and sprinkle over the remaining spirulina.

Use a knife to stir the cheese in the mold 2 – 3 times to mix in the spirulina and create veins in the cheese. Don’t overmix.

What We Looked For

Vegan: All entries were strictly free from dairy and animal products.

Taste: We looked for a vegan cheese alternative that tasted as close to the dairy version of each cheese type as possible. Specifically, we looked for creaminess, saltiness and acidity, as well as a cheesy aroma.

Texture: We looked for a vegan cheese alternative that was as close in texture as its dairy version. We looked at whether they cut or grated the same as regular cheese, and how they felt on the tongue.

Cooking: All the vegan mozzarella and camembert alternatives were melted under the grill to see how they behaved when cooked. We looked for a texture as close to melted cheese as possible, and for the flavour to remain unaffected or improved after cooking.

Traditionally quark was made without rennet. But thats because traditionally quark was made with raw milk. Pasteurized milk will not set or thicken as well as raw milk and so a tiny bit of rennet is used.

If youre vegetarian you can use vegetarian rennet, however some people report that it has a bitter flavor.
