How to make Beer Cheese Dip

This recipe is so simple youll find yourself making it often.

Start by placing a block of cream cheese in a small pot, and pouring in about half a beer.

Warm these two ingredients together over very low heat, until the cream cheese is soft.

Break it up into smaller pieces first, then whisk it vigorously until the mixture is smooth and creamy.

Next comes the cheddar cheese. I love the punch of flavor you get with extra-sharp chedddar, but honestly any kind of cheese would work. You could use pepper jack, or swiss, gouda, or even Velveeta!

Make sure its shredded and just add in a handful at a time, whisking each addition in until melted and smooth before adding the next.

Along with the last handful of cheese, pop in some dry mustard and garlic powder to bring all the savory flavors together.

And thats all there is to it!

Its really important that you see the base of the dip come together. The combination of butter and flour is called a roux and forms a thick paste before we add the remaining ingredients.

  • Cook bacon and then cook veggies in the leftover bacon drippings until tender.
  • Stir in flour .
  • Slowly whisk in the beer and broth into the soup base while bringing to a simmer.
  • Add remaining ingredients and cook until bubbly. Remove from heat.
  • Mix in cheese stirring until the soup is smooth.
  • Ladle soup into bowls , garnish with bacon crumbles, extra shredded cheese, and serve with cheesy toast.

    How To Make It

    • Shred the cheese and set it aside. Combine the seasonings and set those aside as well.
    • Heat the milk in the microwave for 45 seconds.
    • Melt butter over medium heat. Whisk in the flour and stir for 1 minute.
    • Slowly incorporate the milk and then the beer, whisking as you pour. If you add it too fast, the roux will thin out too much.
    • Add the seasonings, Worcestershire sauce, and the mustard. Let the mixture bubble gently, increase heat if needed.
    • Allow it to continue to gently bubble and thicken for about 5 minutes.
    • Reduce heat to low and let the base cool down. Gradually sprinkle in cheese and stir to combine.
    • Taste, and add a splash more beer if a thinner consistency or stronger beer flavor is preferred. Season with salt/pepper if desired.
    • Serve with soft pretzels, crusty bread, vegetables, or chips.

    The best beer for beer cheese is a Czech Pilsner or a Munich Helles because they work well with practically any cheese and have several desireable attributes. We state this as passionate beer cheese making veterans of many years, both professionally and at home.

    These two styles are well balanced, with mild caramel undertones, bready, biscuity notes from the lightly kilned malts and pleasant herbal nuances from the Noble hops with which they are spiced.

    Of course there are many other beer styles that are simply wonderful candidates.

    TIP: A rule of thumb is that the more flavorful the beer, the better the results.

    Look for low bitterness brews such as:

    • amber German style lagers such as bock, marzen, doppelbock
    • saisons and strong Belgian ales
    • wheat ales, especially if fermented with clean American yeast
    • English pale ales, English mild
    • blonde, amber and brown ales

    We strongly advise against using IPAs unless you understand hops varieties, their alpha acid make up and hopping schedules as they relate to levels of bitterness imparted to a beer.

    While in many cooking with beer dishes the bitter notes of a strongly hopped bevarage can be tuned down during prolonged simmering and/or neutralized with the adddition of a sweetener, this is not the case here.

    Also, IPAsare made with hops that typically bring about aromas of citrus or other tropical fruit, of pine needles, resin and potpourri. Understandably, none of these is welcome in a cheese dip.
