    A Few Things Of Note When Choosing Milk:

    If you have access to a reputable dairy that has raw milk, I would recommend this over any other option. Its going to give you a fantastic cheese.

    If raw milk isnt an option, then be sure you purchase milk that is not homogenized or ultra-pasteurized.

    Ultra-pasteurized milk is processed at a much higher temperature than standard pasteurization. The proteins in the milk end up broken down and it makes it nearly impossible to make a good curd.

    And of course, the fresher the milk, the better the cheese.

    Rennet can easily be found in most health food stores or homebrew supply stores, or you can purchase it online.

    I prefer liquid rennet when making cheese because its one less step I need to worry about.

    You can use rennet tablets, which is what I had on hand, but youll need to crush the tablet well and mix it in water until its dissolved. Its not difficult, it just adds another step to the process, and Im all about easy and quick in the kitchen.

    And again, powdered citric acid is quite easy to get your hands on. Most homebrew supply stores carry it, or you can purchase it online if you cant source it locally.

    Yes and no. You may be able to improvise and make your own rennet instead of buying rennet to make mozzarella cheese, but you will need some sort of rennet. My friend, Wardee from Traditional Cooking School, explains:

    Rennet coagulates milk into curds quickly, without producing acid. In my opinion, acid-coagulation creates too soft of a curd for hard cheese and too much acid to create stretchy-melty perfection.

    If you have fresh stinging nettles available, you can make a homemade vegetable rennet that should work for mozzarella cheese. Cultures for Health provides full instructions for rennet nettle on their website, including substituting dried nettle for fresh. You’ll want to gather the nettle before it goes to seed, which will make it unfit for cheese making.

    To make nettle rennet, combine 2 pounds fresh, clean nettle leaves with 4 cups water in a large pot. Bring to boil, reduce heat, cover and simmer for 30 minutes. Add one heaping teaspoon of salt and stir to dissolve. Drain nettle mixture in a cloth lined colander until quite dry. Use 1 cup of nettle rennet per gallon of milk.     Problem Without Citric Acid

    If you plan skipping citric acid and use rennet only, it will work to an extent but you may find your mozzarella cheese has a bit of texture problem where the cheese could hardly coagulating well.

    Thats because of the calcium regulation as explained above.

    Think of citric acid as a medium to make the mozzarella curd shrink and soft.

    Ideally, the cheesemakers will add a suitable volume of citric acid and rennet to get the best consistency.

    Types Of Cheese Made Without Rennet

    Here are a few types of cheese that are made without rennet. These cheeses are not long aged and are freshly served soon after their production:

    • Cottage cheese: Cottage cheese is coagulated with an acidic ingredient: like vinegar. If you are looking for rennet-free cheese, choose cottage cheese.
    • Cream cheese: This is a fresh cheese made without rennet.
    • Mozzarella cheese: Stella mozzarella cheese has a soft texture that is perfect for making Panini or pizzas. Frigo cheese also has a perfect mixture of tanginess and saltiness. Both these types of mozzarella cheese are made without rennet.
    • Provolone cheese: This cheese is known for its intense flavor and serves as a great addition to warm sandwiches and casseroles.
    • Ricotta cheese: Organic ricotta cheese is light, sweet, rich and made with no rennet.

    A second approach to cheese without rennet uses acidity to create the curds. Both lemon juice and vinegar will work, especially for soft, fresh cheeses. However, citric acid and tartaric acid are used in serious recipes as powders, they’re more concentrated, easier to measure and therefore more reliable to work with. via

    Milk contains roughly about 85% of water and 15% of solid content. Out of these solid, it has about 22% casein a protein in milk, 38% lactose a sugar, 30% fat, 5% ash, and 5% whey.

    Citric acid and rennet are both chelating agents to coagulate or to glue the caseins together.

    They worked together to form curds, but in a slightly different approach. Citric acid is also much cheaper than rennet. The commonly used animal-derived rennets also raised the ethical concerns.

    What Can I Do With The Leftover Whey

    Dont throw out that pot of whey! It is very nutritious and can be used in a variety of ways. Pour it into a couple of mason jars and store it in the fridge. It can be used instead of water in most baking or cooking recipes, or in the following ways:

    • Smoothies
    • Water the plants with it
    • Drink it plain

    This is an easy recipe for crumbly homemade cheese without rennet.

    Following this homemade cheese recipe without rennet, you can easily and quickly make homemade cheese with very simple ingredients.

    This homemade cheese has similarities to cottage cheese, ricotta cheese, mozzarella cheese and Indian paneer cheese but it may not be exactly the same.

    The texture of this cheese is soft and you can easily make homemade crumble cheese or crumbly cheese to add into your salads, making it a great substitute for crumbled feta cheese in salads like watermelon salads.

    The making of paneer includes few more steps, which I havent followed here.

    This homemade cheese is even more easy to make.

    However, the initial steps are just like making paneer and the taste is quite similar to mozzarella cheese in my opinion.

    Forget that shredded stuff in a bag. Forget those tasteless bricks wrapped in plastic.

    Even the fancy fresh mozzarella you can get at the store bobbing in vats of whey doesnt compare to the wonderful pillow of cheese you are about to make.

    In fact, I would be seriously surprised if this mozzarellaeven makes it to the fridge.

    Mine sure didnt.

    Why Do We Need Rennet In The First Place

    Rennet is derived naturally from the mammal stomach.

    It contains a set of protein-cutting enzymes. For vegetarian, you can use gluten-free vegetable rennet like this one. The enzymes like chymosin and lipase will break down the caseins.

    With that, rennet acted like a knife to cut off the Casein Macro-Peptide tails which located all over the surface of casein miselles.

    See the image above. It results in the release of peptides . Later drained with whey.

    Without the tails, casein micelles are then free to bind to each other with the help of calcium ions which facilitates the curd formation.

    How Can I Make Rennet At Home

    Instructions for Making Nettle Rennet Rinse 2 pounds fresh leaves under cool, filtered water. Fill a large pot with 4 cups water.     This stage all happens in your stainless steel pot. There’s no need to throw on your gloves just yet, but you do want your slotted spoon and your thermometer handy. We’ll start by pouring the milk into the pot, whisking it well to distribute the cream and butterfat, and then adding the citric acid.

    Many recipes call for diluting the citric acid in water before adding it to the milk, but I haven’t been able to find a compelling reason to dirty the measuring cup or dilute the milksprinkling the citric acid in and giving the milk a good stir works every time. Just make sure to stir for at least 15 to 30 seconds to ensure that the acid fully dissolves and isn’t just sitting on the bottom of the pot.

    Then turn the heat on to medium-low, and continue to stir the pot regularlywe definitely don’t want the bottom to scald. As the temperature rises, perhaps as early as 70 or 75°F , you’ll start to see tiny little clumps of curd starting to form. Meanwhile, dilute the rennet in water unlike citric acid, rennet is so powerful and fast-acting that dilution is the best way to ensure it mixes into the milk evenly before coagulation freezes everything in place.

    When the milk reaches 88 to 90°F , add the rennet and stir well until it’s evenly combined with the milk, about 30 more seconds.

    Now Comes The Hardest Part And Its Not That Hard At All Making A Ball

    Wrap the cheese curd in on itself, forming a ball and tucking the edges up under the bottom. You may have to exert some pressure and twist it a little to get it to stick.

    This is why its easier to do three smaller mozzarella balls rather than one large mass. I dipped my mozzarella ball back in the hot whey for a moment to get the edges to fold under properly.

    1. Sprinkle the citric acid powder into a cool, empty, large non-reactive stockpot. Pour 1/4 cup water over it and stir it to dissolve.

    2. Pour the milk into the citric acid solution and stir it to combine.

    3. Put the pot over medium-low heat and heat it to 90 degrees You may notice the milk beginning to curdle, but this is a good thing!

    4. When the milk reaches 90 degrees, remove the pan from the burner and pour in the rennet mixed with water.

    5. Stir the mixture with a gentle, circular up and down motion for about 30 seconds, then use the spoon to stop the motion of the milk so it will be still.

    6. Place the lid on the pot and walk away and live your life for exactly five minutes. Dont touch the pan!

    After five minutes, the mixture should resemble a very soft custard.

    It really was fun to stick our hands in there and feel the consistency. A lot happened in those five minutes! It definitely firms up in a mass, but is still very, very delicate and loose.

    7. With a spatula long enough to reach the bottom of the pot , cut the curd into a 1-inch checkerboard pattern, making lines across, then lines in the other direction.

    It was at this time that an array of cut the cheese jokes broke out among all of us very mature women.

    Im still laughing.

    8. Return the pot to the the burner over medium heat and stir it gently until the temperature of the whey reaches 105 degrees.

    9. Use a slotted spoon to transfer the curd to a colander set over a bowl.

    Thats mozzarella in there!
