Pepper jack melts easily, thanks to high moisture content.

Cut The Curd And Stir It

Once the curd is good enough, start separating the solids and the liquids. Cut it vertically in a checkerboard pattern for the cheese then allow it to rest for three to five minutes until the whey starts rising and floods the surface. This ensures the fresh cut surfaces become firm enough making them more resistant to breakage when you start making the horizontal cuts into the curd.

Using either a spoon or ladle start making the horizontal cuts. Make sure the final curds are about a half an inch in the end. Allow them to settle for about three to five inches so that theyre firm enough then start stirring gently from bottom to the top so that the curds remain moving and stay separated.

Keep in mind that at this moment they are fragile. As they keep moving in the warm whey, set the temperature back to 88F in case theres a temperature drop and keep stirring for another ten minutes.

Form Curd Salt & Add Pepper

The dry curds can now be transferred to a colander or draining pan where they should be allowed to drain for a few minutes with a gentle stirring.

Add Salt while still in the draining colander as soon as the curds have drained well. Your final cheese weight should be about 2.5-2.75lbs. Adding 2.5% salt to this would be just about 1 oz. of salt. Add this in 2-3 doses and stir in until it absorbed by the curd.

If making one single cheese, you can add the pepper directly to the drained and salted curds and stir well before transferring to the cloth lined molds.

Here I am making two cheeses with different peppers , so I drain the curds first and then add to the molds in layers for each separate form. I mix the additions in well as I go. In either case make sure the additions are mixed evenly into the cheese.

I warned you yesterday when I posted No Knead Pizza Dough that I am officially on a flatbread kick. My mind has been consumed with all the delicious combinations I can put on top of that wonderful dough to knock it out of the park and this first recipe is no exception. Spicy Chicken and Pepper Jack pizza made with Sargento Pepper Jack cheese is the perfect flatbread pizza for game night its a real guy pleaser, and a Jamie pleaser too.

Brian tells me theres some sort of NBA final coming soon. I wouldnt know, because I dont really follow sports. But I know enough to know that hell be begging me to make these for him and his buddies while they watch the game.

Im feeling pretty prepared for that now, with the dough recipe I shared and my constant lust for different kinds of cheese. If you looked in my fridge right now, youd see everything from Feta to Dubliner. Im pretty much prepared for any cheesy recipe that strikes my fancy. So when Sargento Cheese asked me to partner up with them on some cheese-loving recipes, I didnt have to think twice. I scoured their extensive recipe collection and stumbled upon Thin Crust Pepper Jack Pizza.

My idea of pizza heaven cheezy, spicy, saucy. I headed to the market to pick up a few items including Sargento Shredded Pepper Jack Cheese.

Making Pepper Jack Cheese

Put the 2 gallons of milk into a large stainless steel pot. Over medium heat, bring the milk up to a temperature of 90°F.

Sprinkle the mesophilic culture over the top of the milk and let it rehydrate for 2-3 minutes.

After its rehydrated, stir the culture in with a large stainless steel or wooden spoon using and up and down motion.

Once its stirred in, cover the pot and let it sit undisturbed for 30-45 minutes.

You need to keep the milk at 90°F during this time. I usually leave the pot in the burner but turn the burner off.

hen I carefully cover the pot in an old beach towel to insulate and hold in the heat.

Check the temperature a few times to make sure its holding steady.

During this time the milk is culturing or fermenting or ripening depending on which book you read.

What that means is that the culture we added to the milk is growing and reproducing. This is what gives the cheese its flavor.

After this ripening period, stir the milk to make sure that any cream that has separated is mixed back in well. You will only have to do that if you are using non-homogenized milk.

Get To Prepare The Pepper

Black Peppercorns

When preparing cheese with 2 gallons of milk, take between 1 to 1.5tsp of black peppercorns. They should be fresh and of high quality. Toast them for a while to the point where they pop inside the pan. This way, theyll start bringing out the oils and great flavors.

Grab a pestle and mortar and lightly crack them. The peppercorns should add a nutty or citrusy flavor while the cheese draws heat from the pepper. It should also give it an aromatic flavor.

Red Peppers

For this, you are required to use 0.75 to 1.25tsp of flaked pepper. You can also use jalapenos and for this you are required to wait until they turn red. After this, smoke them slowly with applewood. Theyre usually perfect for making cheese since theyre e hot, sweet and smoky.

For this, about a third to three quarters of a single pepper is suitable. If youd like to use either red hot or green pepper, blanch them first so that you dont have any bacteria developing inside your cheese especially if its the deadly kind of bacteria. You also have the option of using the pepper with or without seeds. Make sure you chop the pepper into small flakes to facilitate faster distribution into your cheese.

What Is Pepper Jack Cheese

Pepper Jack Cheese is a cows milk cheese which blends the creamy, buttery flavor of Monterey Jack cheese with the intensity of spicy peppers. -Elbow Macaroni: Were going to need 16oz of cooked noodles, but you can use any fun shape you want. Elbows are just a suggestion.

-Half and Half: A lighter and less fatty liquid option than heavy cream which is good because well need 2 cups worth!

-Whole Milk: We only need a cup of milk but feel free to use 2% or a non-cow/s milk alternative if you have it on hand.

-Butter: 4 tablespoons of butter will be the start of our roux and allow us to get a flavorful start. You can use salted or unsalted butter, or even margarine if you prefer!

-Flour: Adding 2 tablespoons of flour to the sauce is great because its the thickener that gives us a nice thick and creamy cheese sauce that we love to eat. Yum!

-Cheeses: I wasnt kidding when I said this dish was packed with cheese. We need 3 triangles of Laughing cow pepper jack cheese, 1 1/2 cups of grated pepper jack cheese and another 1 1/2 cups of grated cheddar cheese!

-Seasonings: Keeping the seasonings simple and common, we only need 1 1/2 teaspoons of salt and paprika and another teaspoon of black pepper to really flavor this dish.

And once again you need to keep the curds at 100°F for another 30 minutes. Stir every few minutes like before to keep the curds from clumping.

After those last l-o-n-g 30 minutes are up, put the curds and remaining whey into a colander lined with butter muslin or an old pillow case.

Make sure the colander is over the sink or another pot if you intend to keep the whey.

Add the sea salt and the pepper mixture that you chose. Mix it in carefully with your hands until its all equally distributed through out the curds.

Now allow the curds to drain until most of the whey is gone.

Start By Heating And Acidifying The Milk

Heat your milk to 88F which is about 31.5 Celsius by placing it in a pot or in a sink containing very warm water. If youre using a pot ensure you heat the milk very slowly and as it heats, stir it well.

Once the milk gets to 88F you can add the culture in. Start by sprinkling the powder over the milk surface then give it some time, about two minutes so that the powder gets rehydrated in order to prevent it from caking and so that it does not sink in clumps.

Maintain the warm temperature until youre instructed in the guidelines to increase it. The more you do this, the more consistent your cheese will be.

After youve stirred the culture properly, for an hour, hold the milk with the culture still until the culture starts to work. This rest is referred to as the milk ripening stage. It will initially be a slow process but the speed will increase as you go on when the lactose starts getting converted into lactic acid.

During this milk ripening phase, you have the chance to ensure the draining materials and molds are properly sanitized.
