Ingredients For Vegan Chili Cheese Burrito:

  • Over medium-high heat, heat oil in a medium pan. Add onion and sauté until translucent. This should take about 3-5 mins.
  • In a bowl or measuring cup, dissolve the corn starch in the water with a fork.
  • Add the cornstarch slurry and tomato paste to the pot with onions and stir, until combined.
  • Add cayenne pepper chili powder, salt, vinegar, and jalapeños, stir.
  • Bring to a boil, reduce heat, and mix in the veggie ground beef and refried beans.
  • Stir in half of the cheese until melted, and let simmer for 30 minutes, or until thickened.
  • Spoon some chili into each tortilla, top with remaining cheese and wrap up the tortilla.
  • I like to toast both sides to help them stay together.

    Grilling The Burrito Is Optional

    Technically, the original burrito was not pressed on a grill like other burritos you see at Taco Bell today. I personally love a pressed burrito and find the cheese gets super meaty when you let it sit on a pan for a little while. However, if you want the true, authentic Taco Bell chili cheese burrito experience, you should leave the tortilla as is. If you want meaty cheese, you could always warm the tortilla in the microwave for a few minutes so it will capture some heat once it’s wrapped.

    How Do You Make The Taco Bell

    Its pretty simple to make this burrito.

    STEP 1: Brown the ground beef with the diced onions. Once browned, drain the fat and add cayenne pepper, salt, and chili powder to the pot. Pour in water and make sure that the seasoning is well mixed in and dissolved.

    STEP 2: Add the refried beans and tomato paste and stir until the content are thoroughly combined and the texture is smooth.

    STEP 3: Add the shredded cheese and keep folding the cheese into the beef mixture until it has melted.

    STEP 4: Simmer the chili cheese sauce for 10 minutes, occasionally stirring so nothing sticks to the bottom of the pot.

    To put the burrito together, first run each of the tortillas under the sink faucet to lightly wet. I warmed the tortillas by placing them on a microwave-safe plate, coving with a dampened paper towel, and microwaving for 1 minute.

    STEP 1: Spoon about 3-4 tbsp of the chili cheese sauce into the center of the warmed flour tortilla.

    STEP 2: Pull one end up to the center to cover the sauce.

    STEP 3: Tuck the ends of the tortilla in.

    STEP 4: Pull the opposite end down to make a finished burrito. Repeat these steps until all the burritos are made.

    My family and I love this recipe. Based on how popular this recipe has been, it makes me wonder why Taco Bell doesnt bring it back.

    There are some favorite childhood foods that stay with you all your lifethe way they smelled and tasted, their texture, and all the times and places you ate them become indelible memories. These are the foods we chase down as adults and enthusiastically foist on our family and friends. To eat them again is joyful and deeply comforting. For Minneapolis artist Robb Burnham , that food is Zantigos Chilito and Taco Burrito.

    My grandmother had a 73 Firebird, he says. My parents would drop me off at her house when I was real little, and shed take me to the Zantigo in downtown Crystaleating Chilitos in the Firebird, I mean, thats my childhood right there.

    At that point in the fast-food joints convoluted history, it was probably called Zapata. Minnesota restaurateur Marno McDermottone of the guys behind the ill-fated Chi-Chislaunched Zapata in 1969. The original signage featured an ink drawing of the revolutionary Mexican general in a broad charro hat with an enviably thick double handlebar mustache. He had a bandolier crossed over his shirt and jacket, spurs on his boots and a pistol at his belt. When McDermott sold the chain to Heublein, the parent company of Kentucky Fried Chicken, five years later, they changed the name. Not for political reasons, but because Zantigo was easier to trademarkapparently, everything was called Zapata back then.

    If you were frequenting Taco Bell in the 90s you might remember the cheesy chili-based burrito. Originally called the Chilito, it was .99 cents featured on the .59, .79, .99 cent menu as seen in the commercial below.

    But by the mid 1990s the burrito was removed from Taco Bells national menu. However, there were a few states and a very small percentage of locations that kept the burrito on its menu and received the burritos ingredients from Taco Bell.

    Since the removal of the chilito from most of the Taco Bell locations, there has been a cult following of the infamous burrito. A chili cheese burrito internet search will direct you to numerous articles and fan knock off recipe videos on YouTube for making the chili cheese burrito at home. There is even a petition to bring back the burrito nationally on Change.org

    So, what does it taste like and where can one get a chili cheese burrito?

    Recently, I discovered a website that shows nationally where the burrito is located, and luckily there are several in Michigan. You can find the locations here:

    Chili Cheese Burrito Inspired By The Taco Bell Chilito

    Are you looking for the Taco Bell Chili Cheese Burrito or the Chilito? This version of the Chili Cheese Burrito recipe is a combination of beef, refried beans, and melted cheese wrapped up in a warm tortilla.

    My formative years were in the 90s. Its my favorite music, television shows when I meet my wife and was able to buy my own food. Well, the only food I can remember, besides the Paul Bunyan Plus breakfast platter from Rams Horn, was the chilito from Taco Bell. I probably had one or two every day. Im not kidding. I loved it that much. When I was in high school, I went to a vocational training center for the first part of my day. On the way back to the high school, whoever would be driving, would always stop at the Bell for lunch. And I bought a chilito or two every time.

    At some point, Taco Bell changed the name of the chilito to the Chili Cheese Burrito. Apparently chilito means something completely different in Spanish than what Taco Bell was going for. I wonder who the marketing whiz that made that blunder was? But opposite to what the Spanish version means, this was a big burrito. It was steamed burrito packed with gooey chili and melted cheese. I thought that it was amazing and as long as Taco Bell was serving it, I was going to keep buying it.

    • Fill tortilla with hot chilito filling, fold, and eat it. There will be a smile on your face.
