Cheddar, fontina, gruyere, parmesan, and pecorino are all excellent options, but the combination of cheeses I go back to over and over again is a hearty amount of extra sharp white cheddar and a smaller, but potent amount of pecorino-romano cheese. The cheddar turns creamy and smooth and the pecorino adds a pop of salty cheese flavor to the sauce.

Okay, now this is where I get on my soapbox for a second. No matter which cheese you use for this, if you can, grate the cheese yourself. A previously shredded bagged cheese just doesnt melt the same way as hand grated cheese. I wish that wasnt true, but for now, to make the best mac and cheese, its best to shred the cheese yourself.

    • 1 16 oz box, elbow macaroni, cooked
    • 3 cups cheddar cheese, shredded
    • 1 8 oz colby cheese, shredded
    • 2 eggs, beaten
  • Preheat oven to 350 degrees.
  • Cook pasta according to the directions on the package.
  • Drain pasta and place back into the hot pot.
  • Salt and pepper the noodles to taste.
  • While the pasta is still hot add 3 cups of both cheeses, .
  • Stir to blend cheese and noodles together, melting the cheese.
  • In a separate bowl, whisk together sour cream, eggs, and milk.
  • Add the egg mixture to the cheesy macaroni noodles.
  • Stir to blend.

    10 Minute Stovetop Mac and Cheese
    • Butter and Flour These are the base of the roux, which is used to thicken the sauce.
    • Milk and/or Half and Half You can make this mac and cheese with all whole milk, all half and half, or a blend of the two. I usually use a blend of two.
    • Seasonings Keep it simple with salt, pepper, garlic powder, mustard powder, and a hint of cayenne.
    • Cheese The most important part! I use a blend of cheddar, Monterey Jack, and Pecorino Romano cheese. Pick an aged cheddar for the most flavor. Of course, you can also experiment with your favorite cheeses. Try subbing some of the cheddar for American cheese for a more classic blue box style mac. Or try Gruyere, provolone or fontina!

    And stir the mixture together.

    I use a little less than the full amount of cooked macaroni, because I love it extra creamy and coated. Just add it according to how you like it.

    Now, you can either dish it up as it is right now, which makes for an ultra-creamy love fest

    OR you can pour the macaroni into a buttered baking dish. This is a 2-quart dish, but a 9 x 13 pan would work just fine.

    Yes, I have frozen it with success! I make it up to the point of baking, cover well, and freeze right in the pan. Then I bring it out and let it thaw at room temp for an hour or so, and then into the oven. Just like making it ahead and refrigerating it, the result isnt quite as saucy. But still delish.
