My initial attempts at cottage cheese-making were truly anexercise in frustration. Luckily, I chose not to give up, and my recipe successis what I am sharing with you today.

Like yogurt, cottage cheese may contain beneficial live, active cultures. I originally wanted to make cottage cheese with live cultures, since this product can be challenging to find in the stores.

Another benefit of making your own cottage cheese is that you can make it much lower in sodium than store-bought versions. If you are on a low-sodium diet, you may have noticed that it can be difficult to find low-sodium cottage cheese. Making your own is an easy solution to this problem.

I tried this recipe to make your own cottage cheese at home, put out by the Kentucky Cooperative Extension Service. Unfortunately, as much as I love much of the information put forth by Cooperative Extensions, I could not get this recipe to work. It was a complete flop!

So, what went wrong with my initial attempts at making cottage cheese?

Low Sodium Cottage Cheese Brand Comparison

Friendship Dairy Cottage Cheese, No Salt Added, 16 oz ...

It is very difficult to escape excessive sodium in our diets because it is in an enormous amount of foods we eat. A recent Time article indicated that 61 percent of food consumed by Americans is highly processed. In fact, the American Heart Association states that 75 percent of the salt that Americans consume is from processed foods. Many people simply are not aware of the sodium they are ingesting because they are not directly shaking it onto their food. Our food is already pre-seasoned with it and we arent stopping to calculate sodium numbers. The AHA states that Americans are getting more that 3,400 milligrams of sodium per day whereas, 1,500 is the recommended maximum. Other sources, such as the Centers for Disease Control , state that daily sodium intake should be up to 2,300 milligrams. Is cottage cheese a low sodium food product?

Common Questions About Making Homemade Cottage Cheese

When I first shared this recipe in 2013, there were not many other recipes for making cottage cheese on the internet. Since then, dozens of other sites have posted different versions. People arriving at this recipe for homemade cottage cheese often have read several others, too, and sometimes try to combine steps from different versions with disastrous results. So, the questions and answers below will hopefully help you avoid problems while making your own cottage cheese at home.

Can I Use Skim or Non-fat Cows Milk? This cottage cheese recipe recommends whole pasteurized, homogenized cow milk but you can use 1%, 2%, skim, or non-fat cow milk if you like. The lower the fat content of your milk, the dryer your cottage cheese curds will taste. You can overcome that by stirring in cream at the end, as suggested in the recipe card. Or, if you prefer to make non-fat cottage cheese, skip the cream. Can I use Goat Milk? I have not personally made cottage cheese using goat milk, but readers have said it works well. Can I use nut milk or plant milk? You can make vegan cottage cheese by substituting soy milk for cows milk in this recipe. Other forms of plant or nut milk dont work as well for this particular recipe.

Sodium In Cottage Cheese

Homemade Cottage Cheese

Cottage cheese is not a low sodium food by any means. While cottage cheese contains less sodium in comparison to many other dairy foods, the sodium in cottage cheese is still very high. Lets take a look at a comparison of sodium in a selection dairy products. Note that the comparison is for a 1-ounce serving size for all products. When it comes to cottage cheese, most people will eat at least a half cup per serving.

Dairy Product – 1 oz serving size Sodium
Mozzarella Cheese 178

The recommend sodium per day varies based on what agency you ask. Generally, the range is between 1500 2300 mg per day. If you eat a cup of cottage cheese, you are consuming about half of the 1500 mg recommended sodium per day. This is a lot of sodium considered it is only coming from a small portion of one food.

There are low sodium cottage cheese products available if you love cottage cheese but cant eat it because of the excessive sodium. Check out our article on low sodium cottage cheese brands for a list of products with either no salted added or less sodium added than traditional cottage cheese. The downside to eating low sodium cottage cheese is the taste for some people. Sodium plays an important role in maintaining the traditional cottage cheese taste. By eliminating or greatly reducing the sodium you alter the classic cottage cheese taste.

“Breakstone’s ingredient list is much longer than those listed above and contains ingredients that seem unnecessary to make a good tasting cottage cheese,” says Martin.

“Like Breakstone, the ingredient list for Hood’s Cottage Cheese is long, and many of the ingredients seem unnecessary considering many tasty brands don’t include them,” says Martin. “For example, I’m no food scientist but I’m not sure why a plain cottage cheese would need to include natural flavor. I’m not saying natural flavors are a harmful ingredient, they just seem unnecessary in this case!”

Question: I follow a sodium-restricted diet tohelp my blood pressure and try to buy low-sodium products. Oneproduct that I love is Dean’s low-sodium cottage cheese. However, Irecently found out that this product has been discontinued. Whywould Dean’s discontinue this product? Are there any otherlow-sodium cottage cheese products out there?

Donna G., Milan, Ill.

Dear Donna: Although the Dean’s low-sodiumcottage cheese was a great product, it was not a very popular one.It has been discontinued by Dean’s because of slow sales. As acustomer and dietitian, I, too, am disappointed that this productwas discontinued.

Low-fat cottage cheese is often considered a nutritious food dueto its high-protein and low-fat content. However, many cottagecheese varieties are high in sodium, usually having more than 450milligrams per half-cup serving. For those trying to follow alow-sodium diet, cottage cheese can be difficult to fit into adaily eating pattern. Fortunately, there are other ways to get yourcottage cheese “fix” while keeping your sodium intake in check.

First, there are other low-sodium cottage cheese productsavailable. Some Quad-City-area Hy-Vee HealthMarkets carry alow-sodium cottage cheese by Friendship Dairies. This low-fat,no-salt-added cottage cheese has only 60 milligrams of sodium perhalf-cup serving. Call the Hy-Vee store nearest you to inquireabout the availability of this product.

I was allowed to start introducing certain foods into the post surgical diet this week. Cottage cheese is one of them. Cottage cheese is an excellent source of protein and a good source of calcium. Plus its pretty soft. Ive always liked cottage cheese so buying it is nothing new for me. Until now. Since the surgery Ive been trying to be sure what little foods I have are on my nutritionists diet and are as low in fat, sugar and salt as possible. Its an entirely new shopping experience for me, exposing me to different brands, different foods and different tastes.

A single 16 ounce container of Axelrod Lowfat No Salt Cottage Cheese contains 4 half cup servings. Each serving has 100 calories, 1.5 grams of fat and 15 grams of protein. The first ingredient is cultured pasteurized skim milk. It does contain modified food starch so Im fairly sure it isnt gluten free.

Axelrod Cottage Cheese products are usually about $2.99 in the grocery stores in my area. I myself only buy them when theyre on sale for about $1.49, which is approximately once a month.

You dont need cheesemaking experience to make homemade cottage cheese. The name itself implies as much: its a simple, fresh cheese so easy to make that even a cottager can make it. Or so suggests Miss Leslie in the July 1831 edition of Godeys Ladys Book, the first reference to cottage cheese.

What Is Cottage Cheese And What Are Its Nutritional Benefits

Technically, cottage cheese is actually cheese curds.

“Cottage cheese is a mild-flavored, fresh cheese curd product made by draining the cheese instead of pressing it, so it retains moisture and some whey. Unlike other cheese products, it doesn’t undergo an aging process,” says Martin.

And since it’s a dairy product, it’s packed with protein and lots of vitamins and minerals.

“Cottage cheese is packed with nutrients, including B-complex vitamins, like vitamin B12, and calcium,” says Martin. “It’s an excellent source of protein, with 1 cup of small curd cottage cheese containing nearly 25 grams of protein. The majority of protein in cottage cheese is casein protein, as opposed to whey, which is slowly absorbed and helps prevent muscle breakdown. Some brands may even contain probiotics, aka friendly gut bacteria that support gut health.”

The 5 Best Cottage Cheese Brands You Can Buy

“It’s made with minimal ingredients, free of artificial ones, and is free of pectins, gelatins or thickeners ,” says Martin. “Plus, they’ve added strains of Bifidobacterium and Lactobacillus, probiotics which may help support immune and digestive health.”

“I like that it’s low in sugar and comes in a plain flavor plus a fruit flavor that helps to jazz up ‘plain old cottage cheese’,” says Maggie Michalczyk, RDN, registered dietitian nutritionist who runs the blog Once Upon a Pumpkin. “And I like that they are pre-portionedâgreat for taking on the go.”

“I think a little higher milk fat can be very satisfying when it comes to picking the right cottage cheese. This one has great flavor and it’s also much cheaper compared to other options,” says Pankonin.

“I think the flavor is great and I like this one because I can find it at most grocery stores for a reasonable price,” says Pankonin.

This homemade cottage cheese recipe is so easy to make and takes only three ingredients. Check out the video, too!

I started making homemade cottage cheese after reading the ingredient list on a carton from the grocery store. Things like lactose, salt, guar gum, mono and diglycerides, xanthan gum, and carob bean gum. Why so complicated? Homemade cottage cheese takes just three ordinary kitchen ingredients: milk, vinegar, and salt. Its also a fantastic way to use extra milk before it goes bad.

A Recipe With A Fabled Past

Making Homemade Cottage Cheese

Of course, what we call cottage cheese existed before Miss Leslies writings. The ancient Mesopotamians were known to enjoy a salty, sour cheese as far back as 3000 BCE. According to legend, a traveler carrying milk in his saddlebags discovered that his camels steps and the desert heat produced curds that he enjoyed sprinkled with salt.Theres no proof that this tale is true, though early food storage methods might have led to the first cheeses. The stomachs of ruminants, like sheep or goats, contain rennet an essential ingredient in cheesemaking.

No Salt Added Cottage Cheese

Was on vacation in Florida, and found some Friendship brand Cottage Cheese NO Salt Added. It was labeled “all natural” and contained 60 mg sodium per 1/2 cup serving. I love cottage cheese, but can do without the usual 400mg sodium per serving in the regular brands so I really liked this no salt added kind. Trouble is, vacation is over, I am back in the extreme suburbs of Philly , and no one carries CC without added salt. Anyone know of a place that sells it up here?

I do occasionally go to a Trader Joes as well as a Whole Foods, but only every other month or so.

Also- have you all read the ingredients in a carton of CC lately? blech, added color and preservatives, which I am sure the salt is part of. This Friendship brand had only the basic CC components, no maltodextrin, no vit.A palmitate, none of the crap. Plus less salt, which allows me to add my own seasonings
